Burundi Burunga comes from the Burunga processing station, located in the southern part of Burundi – a region famous for its fertile, volcanic soils, mild climate, and cultivation at altitudes of 1,600–1,800 meters above sea level. Most of the coffee delivered to the station comes from local smallholder farmers who grow the Red Bourbon variety. It is this combination of high-altitude plantations, rich terroir, and careful processing that gives Burundian coffees their reputation for being exceptionally clean and complex.In the cup, Burundi Burunga offers a fresh and energetic character. In the foreground appears juicy orange, accompanied by the sweetness of wild strawberry. The whole is complemented by subtle associations with lemon tea, giving the brew lightness and elegance, and finishing with a pleasant note of lime gummy bears. The result is a coffee of medium intensity, with clear yet perfectly balanced acidity and a long, juicy finish.ABOUT PROCESSINGThe beans underwent washed processing – a method valued for emphasizing the natural characteristics of coffee and exceptional clarity of flavor. After harvesting, the ripe fruits go to the washing station, where they are sorted and then mechanically separated from the pulp. The beans ferment in water tanks, which allows the remaining fruit layer to be removed. After fermentation is complete, they are thoroughly rinsed and dried on African beds until the appropriate moisture level is reached. Thanks to this process, the coffee gains a clean, elegant profile with clearly defined acidity, high clarity, and excellent representation of the character of its place of origin.Store in a cool, dry place.

After being delivered to the station, they undergo an initial, manual selection, during which unripe and insect-damaged cherries are discarded. After the seed is separated from the fruit, the coffee ferments overnight in tanks, then it is washed and sorted into four quality categories. The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. They inherited their farms from their parents and creatively evolved their cultivation and processing methods. They have been working with specialty coffee since the early 2000s and achieved legendary status long ago. Year after year, they produce the highest quality green beans, serving as pioneers not only of specialty coffee in Honduras but also of new processing techniques. They were the ones who successfully adapted natural processing to the challenging climatic conditions of Honduras.The Caballero family owns nearly 200 hectares of land divided into 17 different farms in the Marcala region of eastern Honduras. All their operations are centered at a central washing station – Xincala. This is where all the cherries they harvest are processed. The family constantly invests in the station's development, making it possible to continuously improve quality.Marysabel and Moises's farms feature clay-like soil, and the main variety they grow is Catuai, though they also have Java, Pacamara, and Geisha trees.ROASTER'S OPINIONWe roasted our first naturals from Caballero in 2020. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. The San Vito region, located in southern Costa Rica at the foot of the Coto Brus mountains, is famous for its exceptional coffee-growing conditions. Large temperature differences between day and night, abundant rainfall, and clearly marked dry and rainy seasons allow the fruit to ripen slowly, developing a complex sweetness and rich aroma. That is right where Costa Rica Helen La Manga comes from – a coffee that delights with its dessert character and juicy fruitiness.In the cup, notes of cherry yogurt, Belgian chocolate, mirabelle plum, and stracciatella ice cream dominate. The whole forms a creamy, sweet profile with a pleasant fruity freshness that balances the intensity of the brew. This coffee is full-bodied, expressive, and extremely satisfying.ABOUT PROCESSINGThis character is partly due to the natural processing method. The process begins with the hand-picking of exclusively ripe, dark red coffee cherries. Next, the fruit is thoroughly sorted. Unripe, damaged, or overly light cherries are removed using a water bath, during which lower-density fruits float to the surface.After selection, the whole fruits go onto elevated drying beds or patios, where they remain for several weeks. During this time, neither the skin nor the pulp is removed – the bean dries inside the fruit. To ensure the process runs evenly and without the risk of defect-causing fermentation, the fruits are turned regularly, and their moisture level and temperature are constantly monitored. As the water evaporates, natural sugars and aromatic compounds from the pulp gradually penetrate the beans, building their characteristic sweetness and fruity depth.Once the fruits reach the appropriate moisture level, they are left to stabilize so that humidity distributes evenly inside the bean. Only then are the dried skin and pulp mechanically removed in the hulling process. The final stage is a ultimate selection of beans by size, density, and quality before they reach the roastery.The result of this carefully conducted processing is a coffee with a rich structure, distinct sweetness, and an intense dessert-fruity character. The process is a long, anaerobic natural process with a unique "Sleeping Bag" drying technique: after selective hand-picking and sorting by ripeness, the cherries undergo anaerobic fermentation lasting over 300 hours, and then are dried using the "Sleeping Bag" method, which concentrates sweetness and develops a winey, fruity character in the cup.ROASTER'S OPINIONA strong Kenyan natural coffee with a winey, tropical, and very distinctive flavor profile. Passion fruit and blueberries give it a distinct fruity character, while dark chocolate adds richness and depth. The farm lies at an altitude of 790–940 meters above sea level, surrounded by green hills and natural reserves.It is a family-owned estate dating back to the 1960s. The current owner, Marco Antonio Guardabaxo, together with farm manager Marciano de Jesus, continues to develop the plantation by implementing modern and sustainable practices.Families of the workers live on the farm, and coffee cultivation is an integral part of the local community. The farm is environmentally responsible — among other initiatives, it uses a drip irrigation system that reduces water consumption and ensures even cherry development.PROCESSINGThis lot was processed using the natural method. After harvest, the cherries are dried on large concrete patios for 10–20 days and then further stabilized in wooden silos for several weeks.It is this slow fermentation process inside the fruit that gives the coffee its density, creaminess, and deep sweetness.Store in a cold and dry space.
