Whole-bean specialty coffee from Guatemala, roasted in Warsaw by Coffeelab. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the hints of macadamia nuts, pralines and cranberry.

ABOUT THE COFFEE
Rather than opening with a nicely polished description, we’re sharing our tasting notes from the latest QC session. And there’s probably not much else to add here. Except that, thankfully, we’ve got plenty of this coffee, because we could drink it endlessly.
Wiwitz itself, though, has a story worth telling. Before the farm could even exist, Trinidad Rodríguez Pérez, Manuela Salucio’s son, went abroad to find work. With the money he earned, Manuela and her husband bought the land. Then came saving up for coffee seedlings. It took them three years to plant the whole plot, so getting to that first harvest alone called for a fair bit of patience. Today, Manuela and her family share the work of growing and harvesting coffee on their farm of just under one hectare near Jacaltenango, in Guatemala’s Huehuetenango region. They grow Caturra at around 1,850 metres above sea level, under the shade of chalum trees.
The coffee is washed. The family removes the pulp on the farm and uses it as compost. The remaining processing takes place at their home mill: around 12 hours of fermentation, a thorough wash, then another 12 hours soaking in clean water. After that, the coffee dries for roughly five days. During this time, the family turns it four or five times a day to help it dry evenly.
Store in a cold and dry space.
