Alongside her mother, Vanessa is leading all agricultural practices at the farm. Together, they have invested heavily in regenerative technologies. They have focused on reforestation at the estate and conserving water, bringing back the biodiversity that would have existed before the land was intensively farmed. During cultivation, all inputs with negative impact are decreased to a minimum and soil and plant health are actively restored.ABOUT THE PROCESSThis lot underwent fermentation for 40 hours: the whole cherries are sorted and cleaned, before being placed in a sealed anaerobic environment. The fermented cherries were then dried on patios with the whole outside cherry intact. It belongs to Banexport—a company that handles almost everything across the entire local chain: production, export, collaboration with smaller producers from the Cauca region, as well as innovations and modern technologies in coffee production and processing.A full range of the most prized botanical Arabica varieties (Geisha, Pink Bourbon, Java, Wush-Wush, or Laurina) is grown here on 14 hectares, most of which constitute a natural nature reserve with designated ecological trails. Many endemic plant and animal species make up an incredibly diverse ecosystem here.Employees at Santa Barbara can count on stable employment all year round, not just during the season. Everything is handled formally, with a social package, insurance, and a pay rate significantly higher and fairer in the context of the conditions that typically still prevail in Arabica-producing countries.Interestingly, the farm does not have its own washing station, and the entire process—from fermentation to drying—takes place in the heart of the city of Popayan, the capital of the Cauca region.ABOUT COFFEE PROCESSING AT THE FARMCastillo variety, hand-picked, transported in a refrigerated truck immediately after harvest to the Area 18 station in the center of Popayan. A one-kilogram sample is taken for preliminary analysis; once data such as sugar concentration and density are obtained, the decision regarding the final process is made.The cherries are cleaned and sorted, then undergo depulping (separating the seed from the fruit) while retaining the mucilage layer, and are placed in a bioreactor. This allows for full control of the fermentation process and manipulation of variables such as temperature, pH, pressure, and oxygen saturation.Additional must—a mixture of water and pulp rich in microorganisms—works for the first 18 hours and promotes yeast multiplication. These yeasts then dominate for the next 36 hours of fermentation, shaping the aromatic profile. After a total of 54 hours, the coffee moves to the drying stage.Drying is performed mechanically in an advanced laboratory machine, which removes water from the beans to a precisely programmed value in a controlled, uniform, and repeatable process.ROASTER'S OPINIONOne of those coffees where funk and complexity go hand in hand. Fredy Orantes is a true leader among the coffee growers in the town of Santa Rosa, and has worked tirelessly to maintain high standards in the field and during the harvest in order to produce the best possible coffees. Fredy is an expert with both larger lots and small microlots, and every aspect of coffee picking and processing is done with care in order to ensure top quality. Fredy is always thinking about sustainability on the farm. He actively cares for the variety of trees on the farm - grevillea and cuje are the most numerous but he also maintains other types of fruit trees and native trees. The soil is carefully maintained, and soil management includes the application of organic materials that have been composted such as fallen leaves and branches as well as coffee pulp. A variety of native animals and birds appear on the farm, and Fredy explains that the farm is not even fenced in; as in nature these creatures can come and go as they please. Fredy loves experimenting with different varieties and processes, and this lot is the perfect example of his efforts. He added about 1 hectare of Pacamara plants to his farm in 2019, and they have begun producing the large, red fruit for this lot.THE PROCESSAfter a very careful picking, with workers choosing only the ripest cherries, the coffee is placed into clean sacks for a fermentation of about 48 hours. When this fermentation period is over, Fredy adds the coffee to his raised beds, positioned to take advantage of the abundant sunlight of Fraijanes. This is a harmonious yet far from boring coffee: subtle, yet distinct in flavor.Responsible for this structured and clear profile is the washed process, which has been refined to perfection in Burundi. The process begins with the hand-picking of exclusively ripe coffee cherries. The cherries then arrive at the washing station, where they are meticulously sorted—first visually, and then in water, where lower-density beans are discarded.The next stage is depulping, the mechanical removal of the skin and part of the mucilage. The beans then go into fermentation tanks, where controlled fermentation takes place for anywhere from twelve to several dozen hours. This is a crucial moment—enzymes break down the remaining mucilage while influencing the development of flavor clarity and structure.After fermentation, the beans are thoroughly rinsed in clean water, often in specialized grading channels where they are further sorted by density. The coffee then moves to drying beds, where it slowly dries in the sun for about two weeks. During this time, it is regularly turned and protected from excessive heat and moisture, ensuring the stability and quality of the beans.Burundi Nemba is a prime example of how precise processing can bring out the natural character of the terroir—fresh, fruity, and pleasantly balanced.This is a coffee that doesn't impose itself with intensity but lingers in the memory thanks to its harmony and lightness. This is where the fruit is depulped, fermented, and dried. The coffee cherries processed at Bulambuli are sourced from 200–400 local farmers. The high altitude of the area favors the production of high-quality coffees. The processing at Bulambuli is carried out by specialized staff who ensure precise and controlled conditions throughout the entire process.The region primarily grows the SL14, SL28, and SL34 varieties, which are also characteristic of Kenya. The cherries come from small family farms with an area of less than 1 hectare. These farms are located in parishes—local administrative communities consisting of 7 to 12 villages, often with as few as 200 inhabitants. Farmers typically work in groups led by a designated leader.The harvest of East Ugandan coffee takes place from August to January. In lower-lying areas, the season falls between August and October, while at higher altitudes, it lasts from September to January. Farmers sell their cherries at small collection points or deliver them directly to the washing station. Much like with co-fermented coffees, we approached it with a fair amount of scepticism. But after the first tests, we knew this was exactly the direction we believed in. The profile is exceptionally delicate and clean. Floral, herbal, lightly spiced, with a distinct citrus freshness.It became one of the stars of the Warsaw Coffee Festival. The label raised eyebrows, sometimes even doubt. Thyme in coffee? Seriously? And yet everyone who tasted it left the festival with a bag. For some, it was green curry, for others pure umami, for others a herbal garden in the cup. That’s the power of thermal shock.But this character doesn’t happen by accident. Thermal shock allows fermentation to be stopped at a critical moment, before it begins to dominate the flavour. Aromas are not blown out or over-fermented, but stable and clearly defined. The cup feels lighter, cleaner and more tea-like, with distinct layers instead of one heavy fermentation note. That’s why this process works so well with floral and herbal coffees such as Maragesha. A natural hybrid of Gesha and Maragogype, it combines florality and lightness to create a profile that is complex yet remarkably elegant.Finca Quebraditas is a young but highly intentional project. Edinson Argote and Ángela Rojas focus on full process control and developing their own flavour language. Oporapa in Huila still sits outside the specialty mainstream, and their goal is to highlight the potential of the entire region.Processing takes place entirely on site, and Edinson makes sure nothing is left to chance. Harvesting begins only when at least 80% of the cherries are fully ripe. After flotation, the coffee undergoes controlled oxidation, followed by dry depulping and a long 72-hour fermentation with added yeast. Fermentation is then deliberately halted through a rapid temperature shift, the thermal shock itself, preserving clarity and precision in the profile. Finally, the coffee is dried and stabilised under controlled conditions.Store in a cold and dry space.

He has tested different coffee varieties and microbial cultures, always seeking harmony between flavour and aroma. During these trials, he turned to wine yeasts — well-known, thoroughly tested in countless fermentation processes, and allowing for conscious, predictable control over the entire procedure. “It’s all about integration!” Hernández repeats, emphasising that balance is central to his work. For him, aroma cannot exist without flavour, and flavour should always reflect the terroir.For this lot, processing unfolds in several carefully planned stages. After depulping, Barolo-type yeasts are added to the cherries — the same strains long used in Italian winemaking to enhance fruit expression and depth. In coffee they work similarly: stimulating the breakdown of natural sugars, which translates into a rounder mouthfeel, pronounced sweetness, and a fuller body. Fermentation takes place in barrels, without oxygen, and lasts around 24 hours. Once complete, the cherries are dried using the honey method, where part of the mucilage remains on the seed. This approach significantly reduces water consumption—a factor of growing importance on the farm, where access to water is becoming increasingly limited.In the cup, Honduras Barolo Yeast radiates a seamless integration of aroma and flavour: the depth of ripe red fruits, a subtle wine-like note, and an exceptionally smooth body.
