The farm operates on 100% renewable energy generated by a hydroelectric generator that transform rushing rivers into energy. The energy fuels the wet and dry mills and provides free electricity for everyone living and working on the farm. On the whole, Hacienda Sonora has shared their success generously, paying fair wages to all workers and bolstering the local community economy.The farm and its mill cover approximately 100 hectares. Of those, 45 hectares are devote to shaded coffee lands. Coffee plants are surrounded by exotic trees and other native vegetation. This biodiversity promote soil health and maintains the nutrient-rich soil that helps grow dense, delicious cherry. The remaining land has wild forest reserve growing on 35 hectares and 20 hectares for sugarcane, which has been grown on Hacienda Sonora’s land for over 150 years.Hacienda Sonora has its own micromill, which enables the farm to keep lots separated by variety and create unique microlots. The mill is centrally located, right next to a traditional sugarcane mill that’s been preserved intact for over 150 years. This lot is naturally processed. In fact, all coffees at Hacienda Sonora are either honey or natural processed to reduce wastewater and further protect the environment. After selective handpicking, ripe cherry is laid to dry on either the farm’s raised beds or its patio where it is turned frequently to promote even drying.Hacienda Sonora is a part of the NAMA Café de Costa Rica project, the first of the Costa Rican government’s Nationally Appropriate Mitigation Actions (NAMAs). They’re actively working towards lower carbon emissions through investments in key technologies and methods. NAMA Café de Costa Rica is the first of its kind to support coffee farmers as they make changes to their coffee production to reduce overall emissions and resource use. The slow fermentation during processing creates depth and character, bringing notes of milk chocolate, pecan, and plum. As it cools, expect dried fruit and a touch of citrus, with plenty of sweetness and great balance.ABOUT THE FARMAndres is a first generation coffee farmer but, like many in Huehuetenango, his coffee is a family endeavour. In the town of Concepcion Huista, he and his wife have devoted themselves to learning everything about processing coffee from Yich Kalnahl: their 1.2 hectare finca. Surrounded by dense forest and rolling mountains, banana plants and indigenous trees provide great shade. With temperatures ranging from 13-26 degrees celsius, the finca benefits from a cooler microclimate that allows coffee cherries to slowly develop their flavour.THE PROCESSAndres’ wife takes care of processing. After harvest, the coffee is de-pulped, removing the cherry. The coffee is then placed in a tank and submerged in water to ferment for 32 hours. This relatively slow fermentation contributes to the complex profile. The fermented coffee is then washed thoroughly and placed on the patio to dry. It stays in the sun for about 8 hours per day for 7 days, and the family makes sure to turn it frequently to ensure even drying.

A touch of citric acidity and smooth texture make this coffee delicious through milk.ABOUT THE FARMFinca Santa Clara is located in the fertile Antigua valley, Guatemala. Surrounded by three volcanos, it has been in operation since 1930. Our partner Ricardo Zelaya is the fourth generation of his family to farm here. He introduced a dedicated approach to quality, winning the precious Cup of Excellence award in 2001. On the slopes of the Volcán de Agua, the estate climbs to an elevation of up to 2050m, with the Caturra and Bourbon in our lot grown between 1650 and 1700m. A quarter of the estate remains preserved forest, encouraging the biodiversity in which coffee thrives.THE PROCESSFor this lot, Ricardo used a traditional washed method. The freshly harvested cherries are first pulped to remove the outer skin, then fermented. After washing, the beans are dried on African beds inside a specially designed greenhouse. Our lot took around 21 days to dry, a slow process encouraging balance and complexity.ROASTERS OPINIONIntroducing our new Winter Coffee. From our partner Ricardo Zelaya, the smooth sweetness of this lot really stood out: a perfect daily espresso or easy-drinking filter coffee.
