From the 5-hectare Kanggo farm in Belancan Village, Kintamani, Bali (1200-1400 masl), processed by Heqa in Buleleng: nitrogen-flushed anaerobic natural with 120 hours of fermentation at 25°C in a bioreactor, then 14 days of drying as whole cherries.
