ABOUT THE COFFEE
We held off on launching our new decaf until we could give it the packaging it deserved. Now that it looks the part, we can finally share this delicious find. What won us over about El Indio was its depth of flavour. Think dark stone fruit with a fermented edge. Our first association? Mon Chéri chocolates! - Roastery
El Indio comes from Planadas in Colombia’s Tolima department. Behind the coffee are local associations bringing together around 175 coffee-farming families. This is Caturra grown at 1,500–2,150 metres above sea level and naturally processed, meaning the beans are dried inside the whole coffee cherries.
The green coffee is decaffeinated using the EA method, which helps preserve its character. The process uses water and ethyl acetate derived from sugar cane, a compound also found naturally in many fruits. First, the coffee goes into a steam chamber, then into a spring-water bath. Once the beans are saturated with water, they spend eight hours in contact with ethyl acetate, which dissolves the caffeine. Finally, the coffee is dried back to its original moisture level. All that’s left for us is to brew a pour-over and discover just how much a cup can offer without the caffeine.
Store in a cold and dry space.
