ABOUT THE COFFEE
Red Bourbon from the Rwandan Ishema station is a coffee originating from the Rusizi district in the western part of the country, where at an altitude of approximately 1,300 meters above sea level local farmers cultivate Arabica in fertile volcanic soils. The station collaborates with around 674 producers, caring for harvest quality and the development of local farms. Investments in infrastructure allow it to maintain high standards of bean preparation.
In this lot, the natural process was applied. After manual selection and flotation, the whole cherries dry on raised beds for about 12–20 days, depending on the weather. Regular raking ensures even drying, while leaving the beans inside the fruit favors the development of natural sweetness. Strawberries, honey, and citrus are perceptible in the aroma. The flavor develops around ripe strawberries and honey sweetness, accompanied by fresh citrus and a subtle note of cherry. Medium body, low acidity, and moderate intensity emphasize the gentle character of the coffee, while a light, fruity finish leaves a pleasant impression of red fruits.
Ishema plays an important role in the development of the local coffee sector. After being acquired by C. Dorman Rwanda, the station was modernized, gaining new depulping equipment, fermentation tanks, and 130 raised drying beds. In addition to investing in quality, it also supports farmers through training, providing shade tree seedlings, and initiatives that improve access to education, clean water, and infrastructure. The combination of producers' experience with care for the environment and process control supports the growth of Rwandan specialty coffee.
ROASTER'S OPINION
The sweetness of ripe strawberries comes to the fore, while the accompanying notes of honey give the coffee a gentle, pleasantly warm character. Only in the background does a citrus freshness develop, which enlivens the flavor and balances the fruity sweetness without taking away its main role.
Medium body provides the brew with appropriate fullness, while low acidity ensures the whole remains delicate and smooth on the palate. The profile is harmonious but not monotonous — sweet fruits, honey tones, and citrus complement one another, creating a well-balanced composition. The finish is subtle, with persisting strawberry sweetness and a light citrus accent that gradually gives way to the next sip.
