ABOUT THE COFFEE
Chelbesa is an Ethiopian coffee of the 74110 and 74112 varieties, coming from the Gedeb district, where local producers cultivate coffee trees at an altitude of approximately 2,200 meters above sea level. The cool, mountain climate favors the slow ripening of fruits, allowing them to develop their natural sweetness and complex aroma. Ephtah Specialty Coffee is responsible for the preparation of this lot, a company supporting local farmers and consistently developing production quality.
The beans underwent dry fermentation washed processing. After selection and flotation, the cherries are depulped and then fermented without the addition of water. Drying on raised beds takes about 10–15 days, during which the beans are regularly raked. The result is a clean, subtle profile, combining fruity sweetness with floral elegance and tea-like lightness. The aroma brings to mind peaches, stone fruits, flowers, and honey. The flavor reveals peach, orange, orange marmalade, and honey sweetness, complemented by delicate floral accents. Low body with a silky texture, mild, slightly citrus acidity, and a finish reminiscent of chilled peach tea create a harmonious, elegant whole.
Chelbesa is one of the valued coffee-growing areas in Ethiopia. Local farmers run small farms, often growing coffee in the shade of trees and alongside enset, known as the false banana. Ephtah Specialty Coffee develops collaboration with producers through timely payments, quality bonuses, and investments in infrastructure. The combination of traditional cultivation methods, careful fruit selection, and drying control makes it possible to obtain beans with distinct sweetness, floral aroma, and characteristic fruitiness.
ROASTER'S OPINION
The coffee aroma is formed by ripe peaches and stone fruits, complemented by floral delicacy and honey sweetness. In the flavor, juicy peach joins orange and an accent of homemade orange marmalade. The whole experience is rounded off by subtle floral notes and a delicate tea character that adds extra depth to the profile.
Low body and a silky, tea-like texture make the coffee light and gentle on the palate. High sweetness harmonizes with low, slightly citrus acidity, which brings pleasant freshness. The medium-length finish brings to mind chilled peach tea, leaving a combination of fruity sweetness, citrus, and delicate tea notes. It is a subtle, well-balanced composition in which juicy stone fruits meet floral elegance and the lightness of tea.
