Omar has planted nearly 30,000 trees and takes a very diligent approach to processing. They pick the ripest cherries every 15-20 days during harvest, use traditional pulpers, then dry ferment the coffee for 18-20 hours and rinse the coffee 3 times with clean water before drying in parabolic dryers for up to 18 days depending on weather. From Omar: When I was 7 years old my father helped me planting 300 coffee trees; he gave me a piece of land as an inheritance and when I got married, with the help of my wife, I bought another 4 hectares of land, which I also planted with coffee. Thanks to coffee I was able to pay for the education of my children, and I am proud to have been a finalist in the Best Cup Competitions. It is also very satisfying to be able to represent my municipality as a producer of high quality coffee. I am grateful for the help of the agronomists who have helped me continue to improve the quality of my coffee.OPINIA ROASTERAA very floral, delicate, and sophisticated coffee. The Brazilian beans are dried on concrete patios in a dry climate, while the Ugandan beans undergo selection, flotation, and drying on raised beds with fermentation, giving them a fruity character. The combination of both creates a sweet, tropical-chocolate profile, known as LOW Jungle Fruit. The Brazilian beans were decaffeinated using supercritical CO₂, which removes caffeine while preserving aroma and structure. The brew is light, intensely tropical-fruity with a delicate chocolate background, full-bodied with smooth acidity, and a long, fruity finish that highlights its character. In 250 g of brew prepared according to the V60 protocol, 57.2 mg of caffeine was measured, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER’S NOTELOW Jungle Fruit presents itself as a brew with a pronounced tropical-fruity profile and a subtle chocolate background. Juicy notes of pineapple and passion fruit dominate, enriched by accents of apricot and ripe stone fruits. The pronounced sweetness adds depth to the flavor, while the rich body creates a dense, enveloping texture in the cup.The delicate, low acidity harmonizes with the chocolate base, and the long, fruity finish emphasizes the tropical character of the blend. This is how our low-caffeine version tastes – intensely, juicy, and full of character.Store in a cold and dry space.

COFFEE OF THE MONTH
ESPRESSO OF THE MONTH: BeMyBean - Guatemala Ayarza Anaerobic Natural Espresso 1 kg

Manufacturer: BEMYBEAN

Roasting date: 14.07.2026

Whole-bean specialty coffee from Guatemala, roasted by BeMyBean polish roastery. Dark roast, perfect for espresso, coffee machines, and moka pots. You can expect hints of mirabelle plum, almond cookies, cherry jam, nectarine and gooseberry.Country: GuatemalaRegion: Santa RosaFarm: AyarzaProcessing: Anaerobic naturalAltitude: 1600 - 2000 m a.s.l.Variety: Anacafe 14, Bourbon, PacheABOUT THE COFFEEGuatemala Ayarza is an offering for those who enjoy modern, fruity espresso with a distinctly marked sweetness. It comes from the Ayarza region in the Santa Rosa department, where the high altitude of the plantations, volcanic soils, and cool climate favor the creation of beans with great complexity. The cup is dominated by juicy notes of mirabelle plum, nectarine, and gooseberry, which smoothly transition into the sweetness of cherry jam and subtle buttery almond cookies. Medium-high intensity ensures that the coffee remains distinct, yet at the same time remarkably pleasant and balanced.ABOUT THE PROCESSINGThe exceptional character of this coffee is heavily influenced by the anaerobic natural processing method, which requires great precision at every stage. The process begins with meticulous hand-harvesting of only fully ripe cherries. Next, the coffee cherries are thoroughly sorted so that only the finest fruit moves on to further processing. The next stage is the fermentation of whole fruits in an anaerobic environment. The cherries are placed in sealed bags from which oxygen access is removed. For about 120 hours, a controlled fermentation takes place, during which yeast and microorganisms intensively develop complex aromatic compounds while maintaining full control over the process flow. As a result, the coffee gains greater sweetness, depth, and an intensely fruity character. After fermentation is complete, the fruits are spread out in a very thin layer on the patio to immediately halt the fermentation process and begin even sun-drying. The result of this demanding processing is an espresso with a creamy body, distinct fruitiness, and a long, sweet finish. Guatemala Ayarza perfectly demonstrates how skillfully executed anaerobic fermentation can highlight the natural potential of the beans, creating a coffee full of juicy fruit and dessert-like sweetness. Finally, dessert sweetness, juicy fruit notes, and fruit-derived acidity meet in the cup. The espresso has a silky body and leaves a long, pleasant finish. It works great as a dose of refreshment on its own. When combined with milk, it takes on even greater sweetness, while the fruity accents become gentler, resembling a creamy dessert. Guatemala Ayarza also fits perfectly into a summer lineup – served with tonic and ice cubes, it delights with its refreshing, juicy character.COFFEE OF THE MONTHEvery month we pick two coffee specials – one for the espresso lovers, and the other for the pour-over sippers. BeMyBean - Costa Rica Helen La Manga Natural Filter 250 g

Manufacturer: BEMYBEAN

Roasting date: 10.08.2026

A whole-bean specialty coffee beans from Costa Rica, roasted by BeMyBean from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of cherry yogurt, Belgian chocolate, mirabelle plum and stracciatella.Country: Costa RicaRegion: San VitoFarm: Helen La MangaProcessing: NaturalVarietal: CaturraAltitude: 1600 m a.s.l.ABOUT THE COFFEECosta Rica Helen La Manga is a coffee for those who enjoy juicy, dessert-like, and intense cups. In the flavor profile, you will find associations with cherry yogurt, Belgian chocolate, mirabelle plum, and stracciatella ice cream. Medium-high intensity and natural processing make the brew body full, sweet, and long-lasting on the palate.Note: this coffee visibly improves with time. We recommend waiting a minimum of 10 days from the roast date before brewing it. The San Vito region, located in southern Costa Rica at the foot of the Coto Brus mountains, is famous for its exceptional coffee-growing conditions. Large temperature differences between day and night, abundant rainfall, and clearly marked dry and rainy seasons allow the fruit to ripen slowly, developing a complex sweetness and rich aroma. That is right where Costa Rica Helen La Manga comes from – a coffee that delights with its dessert character and juicy fruitiness. In the cup, notes of cherry yogurt, Belgian chocolate, mirabelle plum, and stracciatella ice cream dominate. The whole forms a creamy, sweet profile with a pleasant fruity freshness that balances the intensity of the brew. This coffee is full-bodied, expressive, and extremely satisfying.ABOUT PROCESSINGThis character is partly due to the natural processing method. The process begins with the hand-picking of exclusively ripe, dark red coffee cherries. Next, the fruit is thoroughly sorted. Unripe, damaged, or overly light cherries are removed using a water bath, during which lower-density fruits float to the surface. After selection, the whole fruits go onto elevated drying beds or patios, where they remain for several weeks. During this time, neither the skin nor the pulp is removed – the bean dries inside the fruit. To ensure the process runs evenly and without the risk of defect-causing fermentation, the fruits are turned regularly, and their moisture level and temperature are constantly monitored. As the water evaporates, natural sugars and aromatic compounds from the pulp gradually penetrate the beans, building their characteristic sweetness and fruity depth.Once the fruits reach the appropriate moisture level, they are left to stabilize so that humidity distributes evenly inside the bean. Only then are the dried skin and pulp mechanically removed in the hulling process. The final stage is a ultimate selection of beans by size, density, and quality before they reach the roastery. The result of this carefully conducted processing is a coffee with a rich structure, distinct sweetness, and an intense dessert-fruity character. In Costa Rica Helen La Manga, this translates into a flavor reminiscent of cherry yogurt and mirabelle plum, complemented by notes of Belgian chocolate and stracciatella that linger on the palate long after the last sip.Store in a cool, dry place.

Manufacturer: BEMYBEAN

Roasting date: 10.08.2026

A whole-bean specialty coffee beans from Guatemala, roasted by BeMyBean from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of forest berries, apricot, bubble gum, hard candies, passion fruit and rhubarb.Country: GuatemalaRegion: AlotenangoFarm: AlotenangoProcessing: NaturalVarietal: Bourbon, Catuai, CaturraAltitude: 1400 m a.s.l.ABOUT THE COFFEEGuatemala Alotenango is a coffee for alternative brewing methods that delights with an intense, juicy, and very fruity character. In the cup, you will find notes of forest fruits, apricot, passion fruit, rhubarb, as well as sweet hard candies and bubble gum. Natural processing gives it a full body, distinct sweetness, and a rich, multilayered aroma – ideal for those looking for coffees with a modern, bold profile. Guatemala Alotenango is an offering for lovers of expressive and unconventional filter coffees. Right from the first sip, it delights with intense fruitiness that combines juicy forest fruits, ripe apricot, exotic passion fruit, and crisp rhubarb. The whole is complemented by sweet associations with hard candies and bubble gum, giving the cup an exceptionally dessert-like and surprising character. This is a coffee of high intensity, full body, and a long, sweet finish.ABOUT PROCESSINGSuch a rich flavor profile is thanks to the natural processing method, one of the oldest and most demanding coffee preparation techniques. The process begins with careful hand-picking of exclusively fully ripe, red coffee fruits. Next, the fruits are thoroughly sorted – first all impurities are removed, and then selection is carried out in water, which discards fruits that are too light (unripe) or damaged. After selection, the whole fruits go onto African beds, where multi-day drying begins. Unlike washed coffees, the beans remain closed inside the fruit throughout this entire time. Naturally occurring sugars, acids, and aromatic compounds from the skin and pulp gradually penetrate the beans, building their characteristic sweetness and complexity. To ensure drying proceeds evenly and to prevent uncontrolled fermentation, the fruits are turned regularly up to a dozen times a day, and the entire process is constantly monitored for temperature and humidity.Drying usually lasts from a few to even several weeks – until the fruits reach an appropriately low moisture level. Only then are the dried skin and pulp mechanically removed in the hulling process, revealing green beans ready for further sorting, resting, and preparation for roasting. The result of this time-consuming method is a coffee with exceptional aroma intensity, velvety body, and clear, fruity sweetness. In Guatemala Alotenango, this translates into a juicy cup full of forest fruits, apricot, and passion fruit, with the pleasant acidity of rhubarb and a candy accent of hard candies and bubble gum. This is a coffee that shows how much character well-executed natural processing can bring out.Store in a cool, dry place.

Kii is one of three wet mills managed by the Rung’eto FCS in Kirinyaga and is Fairtrade certified. The Chairman of this society has implemented various quality-focused processes throughout all the factories of the Rung’eto FCS. For example he installed tiles on all the washing channels and fermentation tanks. Moreover, the water for the processing is being reused. Farmers associated with the Rung’eto Cooperative cultivate their crops on Mount Kenya's slopes, known for producing intense, complex, and flavour-dense coffees.Harvest & Post-HarvestSorting: Cherries are hand sorted for unripes and overripes by the farmers before they go into production.Pulping: A 3-Disc Agaarde pulping machine removes the skin and pulp. The coffees are graded by density into three grades by the pulper. Grade 1 and 2 go separately to fermentation. Grade 3 is considered a low grade.Fermentation: The coffee is dry fermented for 18-36 hours in concrete tanks under a roof that provides shade for better temperature control during fermentation.Washing/Grading: After fermentation the coffees are washed and again graded by density in washing channels. They are sometimes soaked in clean water overnight.Drying: Sun-dried 12 to 20 days on African drying beds. Time depends on weather conditions. Coffees are covered under plastic during midday and at night. In this area the flowering period is usually between February and March, following this the trees will be ready for harvest from October to December.Soil: The soil, primarily Nitisol, is rich and developed from volcanic materials, commonly found in highland areas and steep volcanic slopes. Nitisol exhibits superior chemical and physical properties compared to other tropical soils.ROASTER'S OPINIONLots of sweetness, a balanced yet distinct acidity, and a jammy character.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Together with his siblings and wife Rose, a partnership began with FAF (Fazenda Ambiental Fortaleza or Environmental Fortress Farm) in 2008 to change to sustainable, quality driven coffee farming. Fast forward and a whole region has been transformed, with neighbours collaborating and following the best possible farming practices. Named after the Brazilian Roadrunner which is native to the area, Ivan and Roses Sitio Seriema farm is a model of modern, responsible coffee production. We first tasted coffees from the family in 2014 and they have helped change our perception of Brazilian coffees. With a high proportion of Brazilian coffee produced at the lower ‘commodity’ standard, it has been an intriguing journey to see the beautiful terroir of the country properly expressed. Our relationship with Ivan and Rose has grown over the years and we have started investing in upgrades at their farm. With improved water treatment facilities the farm now fully cleans all water before releasing it back into the environment. Working with FAF, this project is now spreading across the region: helping to deliver a more sustainable model of coffee production.ABOUT THE PROCESSRipe cherries are picked by hand to be naturally processed and dried on the farm. At the height of the season, when the volume of picked cherries is greatest, beans are sometimes transferred to the neighbouring fazenda belonging to Ivans brother. For their naturally processed lots, the whole cherry is transferred to raised African beds to slowly dry in the sun. The warmth of the region provides the perfect conditions for high quality natural processing that helps to impart sweet depth to the beans.ROASTER'S OPINIONA special microlot from Ivan and Rose dos Santos. Typica - or Sumatra as it is known in Brazil - brings unexpected flavour to the Brazilian terroir, with elegant fruit and complex sweetness.Store in a cold and dry space.
