ABOUT THE COFFEE
Buku Sayisa 74114 is an Ethiopian coffee from the Guji region, grown in the Hambela area at an altitude of 1,900–2,300 meters above sea level. The cherries are delivered by over 600 smallholder producers whose farms benefit from fertile red soils, abundant rainfall, and a high-altitude climate that favors the slow ripening of cherries and the development of their natural sweetness.
This lot was processed using the anaerobic natural method. Whole cherries ferment in sealed tanks without oxygen access, after which they are dried on raised beds where they are regularly raked. This process makes it possible to achieve an intense, complex sensory profile. The aroma is dominated by blueberries and ripe strawberries with an accent of red wine. The flavor is complemented by juicy berries, oranges, and a sparkling citrus acidity. High sweetness, medium body, and a long, fruity finish complete the overall experience with subtle wine notes.
Buku Sayisa is an area where coffee cultivation has been an important part of local community life for generations. The cherries are picked by hand, and the Hambela Buku Sayisa station is responsible for their selection and processing. Afterwards, the beans go to a facility near Addis Ababa, where they are cleaned, sorted by size and density, and prepared for export. The combination of local farmers' experience, exceptional growing conditions, and controlled processing allows the full potential of Ethiopian Arabica to be brought out.
ROASTER'S OPINION
The aroma of this coffee brings to mind ripe strawberries and sweet blueberries, complemented by a subtle accent of red wine. The flavor is dominated by juicy berries and orange, while intense sweetness weaves together with a refreshing, almost sparkling citrus acidity. Delicate wine notes add depth and emphasize the complexity of the profile without taking away its freshness.
Medium body and acidity balance the high sweetness and intensity of flavor. Every element remains distinct, yet none overwhelms the others. In the long finish, strawberries, blueberries, and a fresh orange accent persist. This is an expressive, juicy coffee with an almost sparkling character, where a wealth of fruit joins the complexity achieved through anaerobic natural processing.
