On the whole, Hacienda Sonora has shared their success generously, paying fair wages to all workers and bolstering the local community economy.The farm and its mill cover approximately 100 hectares. Of those, 45 hectares are devote to shaded coffee lands. Coffee plants are surrounded by exotic trees and other native vegetation. This biodiversity promote soil health and maintains the nutrient-rich soil that helps grow dense, delicious cherry. The remaining land has wild forest reserve growing on 35 hectares and 20 hectares for sugarcane, which has been grown on Hacienda Sonora’s land for over 150 years.Hacienda Sonora has its own micromill, which enables the farm to keep lots separated by variety and create unique microlots. The mill is centrally located, right next to a traditional sugarcane mill that’s been preserved intact for over 150 years. This lot is naturally processed. In fact, all coffees at Hacienda Sonora are either honey or natural processed to reduce wastewater and further protect the environment. After selective handpicking, ripe cherry is laid to dry on either the farm’s raised beds or its patio where it is turned frequently to promote even drying.Hacienda Sonora is a part of the NAMA Café de Costa Rica project, the first of the Costa Rican government’s Nationally Appropriate Mitigation Actions (NAMAs). They’re actively working towards lower carbon emissions through investments in key technologies and methods. NAMA Café de Costa Rica is the first of its kind to support coffee farmers as they make changes to their coffee production to reduce overall emissions and resource use. Hacienda Sonora has contributed carbon emissions data to NAMA Café de Costa Rica and will receive 10% back on carbon reduction investments.

Nearly four decades ago he started with hard labor at a processing station—milling, sorting, drying—where he learned the foundations of coffee processing. Today he runs his own farm, El Renacer, where every step of processing is dialed in to perfection.I chose a Colombian SL28, a super fruity and vibrant variety that already promises a party for your taste buds. On top of that, we add ginger co-fermentation. In short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a bit of panela (a fancy kind of sugar), add freshly harvested cherries, and let everything ferment for 72 hours. After fermentation and depulping, the coffee is dried until it reaches ideal moisture and stability.So what does it taste like, my friend? A total flavor festival. The co-ferment takes center stage, but in the background you’ll find mandarin, lemongrass, high sweetness, and lots of citrus notes. Pour-over, espresso, or moka pot—it always turns out great.ROASTER’S OPINIONThe famous El Renacer farm + SL28 + ginger = TOTAL JINGLE BELLS!!! What more is there to say—first co-ferment, check. An ultra-fresh, spicy-citrus coffee. Ginger leads the way, obviously, but there’s much more going on: mandarin, lemongrass, high sweetness, and a ton of citrus. And as a bonus—no matter how you brew it, it always comes out great.

The maceration process was carried out in our roastery. The raw beans were macerated for 24 hours in a blend of three wines from the Iberian Peninsula—Spanish Chardonnay and Pinot Grigio, and a Portuguese rosé Syrah. This combination gave the coffee a distinctive aroma and gentle wine notes that remain even after roasting. During roasting the alcohol evaporates completely, leaving behind only a wine-inspired sensory profile. This coffee contains no alcohol, yet still carries the refined wine character in which it was matured—fruity, light, and elegant.

After harvest, a short soak, and cherry selection, the coffee was spread on patios and dried in the sun until it reached the proper moisture level. It was then packed into a vacuum-sealed GrainPro bag and transported to our roastery. Here, it went through another stage of processing—wine maceration.Maceration preserved the natural sweetness of the Brazilian beans while enriching them with wine aromas that give the brew exceptional depth and freshness, adding an extra pleasant acidity.
