The cup is usually dominated by citrus (lemon, lime, tangerine) and distinct, juicy acidity. A very characteristic element is the floral notes — ranging from jasmine and orange blossom to more perfumed accents that give the coffee lightness and elegance.Many lots also feature fruit — both stone fruit (apricot, peach) and berries or tropical notes, complemented by a subtle sweetness reminiscent of caramel, honey, or maple syrup. And in this specific coffee, we have everything at once! The body is light and tea-like, distinctly reminiscent of green tea. The aroma is intensely floral, balanced by citrus. In the flavor, besides the floral notes of jasmine and acacia, you will find citrus, apricot, and green tea. Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. What we have here is the essence of Rwandan terroir – the cherries ripen on mineral-rich volcanic soils and at impressive altitudes exceeding 2000 meters above sea level. Nova Coffee, in turn, is the washing station and export company owned by Agnes and Felix Mukamushinja, who coordinate the entire enterprise. In 2024, they won first place in the prestigious Best of Rwanda competition with their coffee.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAll the fruit is harvested by the female producers by hand and with great care – years of practice and training have borne fruit (pun intended) in an extremely selective picking, resulting in perfectly ripe cherries. The lot is processed as a "classic" washed coffee. The fruit undergoes depulping, after which it goes into a tank for over 24 hours where fermentation takes place.
