Farms in this area are small — on average they have around 610 trees. The volcanic, nutrient-rich soils combined with the high elevation of 1,700 to 2,000 meters above sea level create excellent conditions for producing top-quality coffee.During the harvest season, ripe cherries are carefully hand-picked by farmers and their families. The growers then bring the harvested cherries — on foot or by bicycle — to the washing station. The Karengera station encourages farmers to carry out thorough sorting before selling: removing any unripe, damaged, or overripe fruit.Once received, the cherries are pulped to separate the beans, which then undergo a dry fermentation lasting 12 hours. Afterwards, the beans are soaked in clean water for another 8 hours to remove any remaining mucilage, and then passed through grading channels for final washing and sorting. However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry, both in terms of complex processing methods and the cultivation of a wide range of carefully selected, highly sought-after botanical varieties such as Geisha, Pink Bourbon, Laurina, and Pacamara.Today, ongoing research is conducted at El Vergel on bacteria and yeasts to achieve even greater precision in controlling fermentation and, as a result, in modulating flavor.In addition to coffee production, the Bayter family is behind the company Forest, which handles both the export and import of green coffee. This means we were able to purchase this coffee without intermediaries.ABOUT COFFEE PROCESSING AT THE FARMAlmost everyone has encountered Aspergillus oryzae at some point in their life. It is a type of fungus used to produce soy sauce, miso paste, sake, or pickled vegetables. Humanity, especially in the eastern part of the world, has been using it for centuries. Over the past several years, however, coffee producers have begun using koji for coffee fermentation.And this one is exceptional. Instead of producing alcohol, carbon dioxide, or organic acids, koji has the ability to transform its substrate in a way different from yeasts or bacteria. It acts as an intermediary, breaking down polysaccharides and complex starches into sugars, enabling their secondary fermentation by other microorganisms. As a result, the final coffee profile is “boosted,” characterized by higher sweetness, greater complexity, and increased fruitiness. The glutamates formed during this process also affect the texture of the brew, which is perceived as heavier and more rounded.The Pink Bourbon variety is hand-picked and fermented for three days using koji in the whole fruit. It is then dried on raised beds for 10 days and in a mechanical dryer for an additional 3–4 days to achieve even greater control over this crucial stage. Finally, it is homogenized for 20 days in plastic bags.ROASTER’S OPINIONWe haven’t had anything this outrageously sweet in a long time. As if someone added sugar to your cup when you weren’t looking. On top of that, a whole array of fruits and floral notes typical of this Ethiopian variety. A beautiful and undoubtedly exceptional coffee.

For many Ethiopians, coffee is a symbol, a source of national pride, and a way of life – and Nguisse, a finalist in last year’s Cup of Excellence, is certainly part of this group. His small farm of around 8 hectares is located in Bensa, which we consider one of the best regions in Ethiopia when it comes to quality potential. The farms here rise well above 2000 meters above sea level and are often planted with carefully selected, single botanical varieties.ABOUT THE PROCESSThis is a classic natural process, a method that originated in Ethiopia, where coffee seeds are dried inside the whole cherry. Freshly picked cherries go through an initial selection to remove any with defects. The chosen cherries are then spread out on so-called “African beds” – long raised tables, sometimes stretching dozens of meters, with mesh foundations that allow air to circulate freely. This ensures even airflow throughout the process and results in consistent drying. Depending on the weather, the drying takes between 25 and 30 days.ROASTER’S NOTESThis January marked our second visit to Ethiopia, but it was the first time we purchased coffee directly from Nguisse. Every summer, we eagerly await the arrival of the Ethiopian container, and this year’s lot from Bensa didn’t disappoint. This ultra-sweet coffee tastes just as good now as it did months ago on the cupping table in Addis Ababa – dense and creamy in body, with ripe blueberry, floral, and citrus notes. All wrapped in the winey character so typical of both the process and the region.
