Klaro- Colombia Gingerbells Washed Co-fermented Ginger Filter 200 g

Manufacturer: KLARO

Roasting date: 16.03.2026

Whole-bean specialty coffee from Colombia, roasted by Klaro roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The flavour of the brew resembles mandarine, ginger and lemongrass.Origin: ColombiaRegion: Chinchiná, CaldasFarm: El RenacerVariety: SL28Processing: Washed Co-fermented GingerABOUT THE COFFEEBehind this wild ride is Elmer Restrepo, a legend from Chinchiná, Caldas. Nearly four decades ago he started with hard labor at a processing station—milling, sorting, drying—where he learned the foundations of coffee processing. Today he runs his own farm, El Renacer, where every step of processing is dialed in to perfection.I chose a Colombian SL28, a super fruity and vibrant variety that already promises a party for your taste buds. On top of that, we add ginger co-fermentation. In short: we prepare microbes (Lactobacillus and Saccharomyces), feed them ginger and a bit of panela (a fancy kind of sugar), add freshly harvested cherries, and let everything ferment for 72 hours. After fermentation and depulping, the coffee is dried until it reaches ideal moisture and stability. So what does it taste like, my friend? A total flavor festival. The co-ferment takes center stage, but in the background you’ll find mandarin, lemongrass, high sweetness, and lots of citrus notes. Pour-over, espresso, or moka pot—it always turns out great.ROASTER’S OPINIONThe famous El Renacer farm + SL28 + ginger = TOTAL JINGLE BELLS!!! What more is there to say—first co-ferment, check. An ultra-fresh, spicy-citrus coffee. Ginger leads the way, obviously, but there’s much more going on: mandarin, lemongrass, high sweetness, and a ton of citrus. And as a bonus—no matter how you brew it, it always comes out great.Store in a cold and dry space.

It’s rare to come across beans that are so well-structured, subtle, full-bodied, and sensorially surprising. Its cupping score exceeds 90 points according to SCA standards. Prepare yourself for a remarkable ride through notes of white raisins, vanilla, lime, and distinctive alcoholic registers reminiscent of “Barrel Aged” projects, with barrel bourbon in the background.ABOUT THE FARM Finca Milan is located on the lush, vegetation-covered hills of Pereira, in Colombia’s Risaralda department — a region known for its excellent coffee-growing conditions and rich biodiversity. The farm is managed by Julio César Madrid, a third-generation coffee producer whose vision has elevated Milan to one of the most respected farms in the region.Situated at 1,600 meters above sea level, the farm benefits from fertile volcanic soils, consistent rainfall, and a stable microclimate that supports slow, even cherry ripening. These natural advantages, combined with Julio’s focus on precision and experimentation, result in coffees that consistently deliver complexity, balance, and elegance in the cup.Julio’s commitment to quality is deeply rooted in tradition, yet strengthened by a modern and scientific approach to coffee processing. With the support of his daughter, Maria Antonia Madrid — a biologist and fermentation specialist — the farm has embraced innovation, particularly in post-harvest techniques that highlight the unique characteristics of each lot.BREWING RECOMMENDATIONRatio: 6 g / 100 mlMethod: V60 02 (drip)Water temperature: 93°CGrind size: 26 clicks (Comandante)Brew time: 3–4 minutes / 600 ml

The farm specializes in highly unconventional, modern processing methods, embracing bold experimentation that consistently delivers surprising results. It takes both courage and creativity to introduce projects like “Spirit” into the coffee world. This lot comes from an experimental process in which, after depulping, the beans were fermented in juice (mosto) pressed from the same cherries. As a result, the coffee developed a unique character, marked by high sweetness and a striking aroma. We were able to bring out the full depth and complexity of these beansABOUT THE FARMLos Nogales Farm is a family-owned coffee plantation in Colombia. The current face of this multi-generational business is Oscar Hernandez. The farm is located in the mountainous Huila region, near the town of Bruselas in the southern part of the department.Oscar is both inventive and charismatic, driven by the idea of producing the highest-quality specialty coffee in Colombia — and this lot clearly proves that vision. In 2006, Oscar’s father, Ricaurte Hernandez, won the Colombian Cup of Excellence. KYOTO - Costa Rica San Diego Anaerobic Filter 250 g

Processing stations in the country are pioneers of alternative coffee processing methods, and this experience is reflected in the high quality and distinctive flavor profiles. If you don’t believe coffee can taste like a coconut-cinnamon cookie, let this lot challenge your skepticism. Such results are only possible when complex processing methods come into play.PROCESSINGAfter depulping, the beans are left with the mucilage layer intact and immediately transferred to hermetically sealed stainless steel tanks for anaerobic fermentation. This oxygen-free environment supports a tightly controlled microbial ecosystem, promoting the production of organic acids, mainly lactic and malic acids, which significantly enhance the coffee’s flavor complexity and aftertaste.Beneficio San Diego is one of the most modern processing stations in the country. Founded in 1888, it continues to evolve through innovation. The anaerobic fermentation process takes place in a completely oxygen-free environment, allowing the coffee to ferment without air exposure. In this unique method, the sugars contained in the coffee fruit ferment and produce distinctive acids that create exceptional and unmistakable flavor profiles. The key to achieving these remarkable flavors is the sugar content of the cherries, which is why only the finest fruit from the highest slopes of the Tarrazú region is suitable. Tarrazú is famous for producing some of the best coffees in Costa Rica. After fermentation, the coffee is moved to patios for sun-drying until it reaches the ideal moisture level of 11.5%.RECIPERatio: 6 g / 100 mlMethod: V60 02 (drip)Water temperature: 92°CGrind size: 25 clicks (Comandante)Brew time: 3–4 minutes / 600 ml

Manufacturer: PALOMA

Roasting date: 15.07.2026

Specialty-grade whole-bean coffee from Ethiopia, roasted by the Polish roastery Paloma. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of lemon, white flowers, raspberry and sugar.Origin: EthiopiaRegion: Oromia, GujiProcessing method: WashedVariety: HeirloomAltitude: 1900 - 2100 m a.s.l.Cupping score: 85 / 100This coffee comes from various farms located in the Guji, Sidamo, and Yirgacheffe regions of Ethiopia:Guji Region is located in the southern part of the country, in the Oromia region. Until recently, it was administratively part of Sidamo, but it now functions as a distinct coffee region. The area is largely forested and offers excellent conditions for growing Arabica. Coffee trees grow here at altitudes above 1,500 meters above sea level, in fertile, well-drained soils of volcanic origin that require little fertilization. The climate is warm but moderated by the altitude, with annual rainfall of 1,500–2,500 mm spread over about nine months. Temperatures usually remain within the range of 15 to 24°C. Over the past few decades, Guji has established its position as one of the most recognized and valued coffee-producing regions in Ethiopia.Sidamo is recognized as the largest coffee region in Ethiopia. It encompasses the fertile highlands located south of Lake Awasa in the Rift Valley. Crops are situated at altitudes ranging from 1,500 to 2,200 meters above sea level, which promotes slower ripening of the coffee cherries in a cooler climate. As a result, coffees from this region stand out with their natural sweetness and pleasant acidity. Highly fertile soils and annual rainfall of 1,200 to 2,000 mm create ideal conditions for growing high-quality coffee.Yirgacheffe lies in the central part of the Gedeo zone in southwestern Ethiopia. This region is famous for producing coffees of exceptional quality, which is influenced by fertile soils, a tropical climate, and high-altitude plantations, often exceeding 2,000 meters above sea level. Due to the altitude of the crops, local coffees are classified as SHG (Strictly High Grown) or SHB (Strictly Hard Bean). This means that the cherries ripen more slowly, allowing the plants to deliver nutrients to the beans for a longer period. The result is a more complex and distinct flavor profile, with a characteristic intensity of aromas.Store in a dry and cool place.
