The coffee comes from approximately 600 smallholders, with the average farm measuring just 0.1 ha. Small scale. Great precision.The crops are situated at an altitude of 1,650–1,700 meters above sea level, near the forest boundary of Mount Kenya. The soils are volcanic, and macadamia trees appear among the shade trees. Tea is also grown in the region, which reflects the climate of the area well: high, green, humid, with excellent conditions for the slow ripening of cherries. The coffee is processed using the washed method, so we expect cleanliness, high acidity, and classic Kenyan juiciness.ROASTER'S OPINIONThis is Kenya in a good, precise style. It is owned by Baragwi Farmer Cooperative Society (FCS), one of the largest cooperatives in Kenya in terms of both coffee volume and membership. Around 1,200 smallholder farmers deliver cherries to the factory for processing, growing mostly SL28 and SL34 cherries between 1,700 and 1,800 meters above sea level. Farmers typically manage small plots averaging 250 coffee trees, which are usually grown alongside subsistence food crops, fruit trees and other crops.ABOUT THE PROCESSCherries are carefully hand-picked before being delivered to Gachami. At the factory, the cherries are carefully hand-sorted to ensure the highest quality. Only the ripest are selected and pulped. After pulping, the coffee is fermented for 16 to 24 hours. The parchment is then washed through grading channels using clean water before being soaked in clean, circulating water for around 24 hours. Recent research has shown that the step also has added benefit to the coffee’s final quality and longevity, adding clarity to the cup. After soaking, the coffee is delivered to dry on raised beds, where it will be turned regularly and covered during the hottest part of the day and evenings to ensure even drying. There is no room here for cheap, container-scale production, so every coffee cherry cultivated by them is treated with due attention.The farm is pictorially located on the slopes of the Telomoyo volcano, surrounded by dense jungle. Once every four years, the eruption of the nearby Merapi volcano covers the entire region in volcanic ash, which is incredibly fertile and promotes the development of sweetness and spicy characteristics in the coffee.ABOUT THE PROCESSINGExperiments with Canephora are particularly important to them, which naturally caught the attention of the Brothers (fine robusta neophytes). This specific lot underwent their signature process – quadruple anaerobic fermentation. The fruits spend five days in each of four consecutive tanks, being cleaned of fermentation byproducts in between. This is Vins and Bedjo's proven method to "clean up" robusta, giving it a clear character and a great, mild profile.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex.That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone.However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. Coffee cultivation is usually managed by family members, rarely hiring out external workers. 70% of the population wears traditional clothing, and 46% of the producers are women producers.Before the arrival of Spanish conquerors, Tzeltal indigenous people settled in the actual Tzajalchen area. The Aztecan people came and lived here, but in the 16th century, Dominican Friars started to colonize the area. In 1712 Tzeltal people started to rebel against the Dominican people, resulting in the entirety of the population today being the Tzeltal indigenous people.Pedro's father, along with his three brothers, initially grew corn and beans. There weren't any coffee trees planted in the farm. More than 30 years ago, a program of INMECAFE (El Instituto Mexicano del Café) arrived in Tzajalchen and brought coffee seeds of Bourbon and Caturra to plant, and that's how they started coffee cultivation in the area.
