ABOUT THE REGION AND FARM


Karimikui is a processing station operating since 1966. It is located in Kirinyaga County, on the southern slopes of Mount Kenya. It collects coffee from over 2,200 smallholder producers from around the villages of Gituba and Kithure. Most farms have a small area, usually around 0.1–0.2 ha.Coffee grows at an altitude of approximately 1600–1700 m a.s.l., in volcanic soils. The conditions of the region favor slower fruit ripening, which is important for the development of sweetness, acidity, and the structure of the brew.On local farms, coffee is often grown alongside other crops, such as tea, avocado, macadamia, or mango. This is an important element of the farmers' daily operations, as it increases the economic stability of the farms.



ABOUT THE VARIETY


This coffee features SL28, SL34, and Batian. SL28 and SL34 are responsible for the classic Kenyan profile: high acidity, fruitiness, and a long, clean finish. Batian is a newer variety, introduced among other reasons for its greater disease resistance and better production stability.The combination of these varieties yields a coffee with a distinct regional character, with a good balance between intensity and clarity of the profile.



ABOUT THE PROCESSING


Coffee cherries are selectively picked and delivered to the station after harvest. After removing the skin and part of the pulp, the beans undergo fermentation, are then washed with fresh water, and dried on raised beds. During drying, the coffee is regularly turned so that the process proceeds as evenly as possible.At Karimikui, a mechanical pulper is also used, which helps reduce water consumption. This is technologically and environmentally significant.The result in the cup is a clean profile, high sweetness, citrus-berry acidity, and a structure typical of well-prepared coffees from Kirinyaga.



RECIPE

  • Ratio: 60 g of coffee per 1 liter of water
  • Water temperature: 93°C
  • Grind size: medium
  • Brew time: 3:30 minutes 

Method: Pour water over the coffee in 5 equal pours (e.g., 5x 60 g) at 30-second intervals.


The water between pours should draw down completely through the coffee.


If the water flows too slowly or too fast, adjust the grind size to coarser/finer.


Remember to use soft, filtered water!



Store in a cool, dry place.
