Chiroso Imperial is a coffee that speaks to the power of collaboration and shared purpose. It’s the result of a close partnership between four neighboring families in Palestina, Huila, Colombia. They are known together as Hub Management Palestina.
At the heart of this lot is Ramón Gómez from Finca La Moreira, whose passion for coffee and deep connection to his land guide the work behind every harvest. Together, these families grow coffee at high altitudes under ideal climatic conditions, allowing them to produce a coffee that’s both expressive and consistent, while increasing their shared volume and impact.
The process is meticulous: ripe cherries are handpicked based on color and sugar content, then sorted soaking them in water and removing poor quality beans that float, followed by a second round of manual selection for uniformity. Once de-pulped and after a 72-hour fermentation, the coffee is sun-dried for 15 to 22 days under canopies, a slow and careful drying method that preserves clarity and complexity in the cup.
This project blends ancestral knowledge with technical insight to support regenerative agricultural practices. The result is a coffee that not only tastes remarkable but is grown with sustainability, social equity, and long-term viability — values that align deeply with our approach to coffee.
