This lot was produced as part of the Black Condor Project – an initiative supporting more than 100 independent farmers through fair pricing, training, and access to modern processing infrastructure.The project is led by Emmanuel, a producer raised in a family with a multi-generational coffee tradition. In 2016, together with his family, he established a central processing station to help farmers from more than 15 nearby villages process their coffee in a controlled, quality-focused way. This approach allows for a consistent and clean sensory profile while also significantly increasing the income of the local community. Farmers are offered prices up to 18–20% higher than the market average, and regular workshops on fermentation, drying, and cupping help continuously improve production standards.ABOUT COFFEEColombia La Roma undergoes a classic washed process, which highlights the natural clarity and elegance of Colombian varieties such as Caturra and Castillo. The four-hectare farm, entirely planted with coffee, belongs to Laureano Gómez — a second-generation producer and former teacher who decided to leave his career in education to fully dedicate himself to developing the family farm and producing specialty coffees.Laureano brought back to life an estate that had been neglected for years, building a project based on quality, experimentation, and a conscious approach to production. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish. The anaerobic natural process of this coffee highlights its intense sweetness and complexity, while preserving its clean character. We recommend it primarily for filter brewing methods, where its complex flavor profile and subtle, smooth aftertaste are most memorable.ABOUT THE FARMJhon Alvarado, along with his son Antonio and the whole family, manage sixteen hectares of crops spread across four farms in the Chirripó, Brunca region in southern Costa Rica. This is exactly where lots based on varieties such as Gesha, SL28, or Ethiopia 47 are created, which are now processed in a newly built dry mill launched in 2025.From the first experiments conducted on the Finca La Torre farm to multiple high rankings in the Cup of Excellence competition, the Alvarado family's business is based on conscious development, consistency, and a clearly defined vision of quality. The natural process highlights the fruity character and dense body of the brew. We recommend it primarily for filter brewing methods, where its clarity and multi-layered nature are most pronounced.Finca La Toboba Jocotes is located in the Convento, Pérez Zeledón region of Brunca, Costa Rica, at an altitude of 1420 to 1710 meters above sea level. The farm is run by Senel Campos along with his son Alan, managing three estates spread across the steep terrains of southern Costa Rica.Senel Campos' story is a tale of consistency and gradual development. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. Coffees from La Toboba are characterized by a very low number of defects and high consistency in quality.This specific lot of the Catigua variety was subjected to the natural process, which brings out notes of walnut, mandarin, and sugar cane in the cup. It is here, in the shadow of volcanoes and under the influence of breezes from the Pacific Ocean, that coffees of remarkable depth and elegance are produced.The name El Llano means “the plain” in Spanish, and the name is no coincidence. When Alberto Guardia took over the farm in the 1970s, he focused on coffee as the main source of income and began a transformation that forever changed its character.A pivotal moment came in 1999 — during the price crisis, Alberto decided to invest in his own mill and alternative processing methods like natural and honey. That’s when Hacienda Sonora became a pioneer of quality in a country historically known almost exclusively for washed processing.Today, the farm is co-managed by Alberto’s son, Diego Guardia, who blends family traditions with a modern approach to quality, experimentation, and selection. Over 80 hectares are dedicated to more than 20 botanical varieties, each treated as a unique project.ABOUT THE COFFEEThis exceptional batch is SL28 — a legendary variety known for its incredible purity and elegance, especially in Kenya, but under Hacienda Sonora’s conditions, it achieves extraordinary clarity and finesse. Grown at an altitude of about 1300 meters above sea level, it offers a cup full of juiciness, delicate structure, and refined sweetness.The natural processing was carried out with great precision: selectively picked cherries are first separated by floatation, then dried whole on black tarps for about 12 days, with full control over airflow and humidity. After the initial drying, the coffee matures, undergoes final drying at low temperatures (up to 35°C), and then rests for two months before being hulled and hand-sorted.In the cup, the coffee is light, juicy, and incredibly clean for a natural – with dominant notes of raspberry and ripe melon, complemented by a delicate, tea-like tannin of black tea. The finish is long, elegant, and sweet, with no heaviness or excessive fermentation. This is a natural in the Hacienda Sonora style: precise, harmonious, and incredibly drinkable.We always roast the coffee fresh, so when it arrives to you, it’s just a few days old. His story is personal and deeply rooted in the region. Tagel’s father was one of the coffee pioneers in Guji and built the first washing station in the Bule Hora community. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees.
