Las Villas was established in 2012 and, like its sister plantations, is managed in an incredibly professional manner.The farm combines coffee cultivation with care for biodiversity, creating a system where a healthy ecosystem helps maintain high and repeatable coffee bean quality. Coffee trees are regularly weeded and pruned, and damaged cherries are removed after harvest to help limit pest development. Native tree species, as well as citrus trees and avocados, grow among the coffee bushes. They provide shade, protect the soil, attract beneficial organisms, and support the natural resilience of the entire farm.ABOUT THE PROCESSINGThe Castillo variety, hand-picked at peak ripeness, is transported on the same day to the Popayán city center to the state-of-the-art Area 18 laboratory.Fermented for 72 hours in a stainless steel bioreactor while controlling parameters such as temperature, pressure, and pH.Afterward, the fruit pulp undergoes sterile filtration before being placed along with the beans into American white oak barrels for 60 days.Drying takes place in mechanical chambers with controlled temperature and airflow. After five days, the beans reach optimal moisture levels, ensuring stability during storage and export.ROASTER'S OPINIONDefinitely not a coffee for everyone. They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience.The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation.In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. After that, the coffee rests for at least 60 days before export to achieve perfect homogenization.ROASTER'S OPINIONEvery year, we wait for coffees from Las Lajas with flushed cheeks! This lot is, above all, about absurdly high intensities across all layers, from tropical fruits to slightly wild fermentation notes.Store in a dry and cool place.

They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. Heraclitus already knew that, and we trust the guy. What he couldn’t quite grasp was that life is like helium-6 isotope – an outrageously unstable joke of the universe. We know this, and that’s how Elixir was born. Wildly unstable, always sweet. Different every time, always fruity. We throw our best coffees into it, because honestly, who’s going to stop us? His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill.The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Washed, dried on raised beds for 12 days.ROASTER'S OPINIONA washed Ethiopian classic in its pure form. There is no point in saying too much here – there is a flower, yellow fruit, it is light, elegant, and complex. A blockbuster product.Store in a cold and dry space.

Over the years, they have repeatedly earned top positions in the prestigious Cup of Excellence, and their client base has included the world's most esteemed roasteries for two decades.La Soledad offers ideal coffee growing conditions thanks to the unique microclimate of Acatenango. The farm covers 90 hectares, but half of its area is preserved as natural forest, while part is dedicated to avocado cultivation to maintain soil balance.A close relationship with Raul and his family means we know these beans inside out and purchase them year after year, right from the inception of Heresy.ABOUT THE PROCESSING OF COFFEE BEANS AT THE FARMA processing method that the Perez family has refined to perfection over all these years. First, there is depulping, which is the separation of the seeds from the fruit. Next, the beans ferment in tanks for 36 to 40 hours. This particular microlot is then washed and placed on African beds, which have an advantage over patios primarily due to a more even airflow during drying, resulting in greater control over the process.ROASTER'S OPINIONWe have been roasting Raul's coffees for years, but this is the first time we bought his Pacamara. It is one of our favorite varieties, characterized by immense depth, complexity, and distinct jammy notes. Coming from his hands, it is a true masterpiece!Store in a cool and dry place.

Initially, they grew avocados, and since 2009, they have been experimenting with coffee cultivation. Gradually, under the guidance of Miguel Jimenez, they expanded their offer to include specialty coffee varieties. The farm underwent a major modernization in 2018. Natural drying processes were introduced, and research began on bacteria and yeast that control fermentation (including the Koji strain). Currently, over 28 different coffee varieties are grown there.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. The Red Caturra variety is characterized by an intense aroma and a rich flavor profile. On the other hand, Yellow Caturra is a subtle coffee variety with bright, yellow beans. It is characterized by a mild flavor profile.ABOUT THE PROCESSINGSugarcane is a unique type of fermentation resulting in more intense fruity notes. After the fermentation is complete, caffeine is removed through an extraction process in special containers, where it is washed with a mixture of water and ethyl acetate. This process is repeated multiple times until the caffeine level drops to just 0.1%.Store in a dry and cool place.
