At any time of day or night. It tastes a bit like toffee, a bit like buttery biscuits. The cup is sweet and creamy, with a soft, nutty note.All the magic happens after harvest. Sueño is decaffeinated with water by Descamex in Mexico, without the use of solvents. First, the green coffee is placed in a steam bath that opens up the structure of the beans and allows soluble compounds, including caffeine, to be released. The resulting water is not “empty”, though. Aromatic components remain, and this becomes the base for the rest of the process.Subsequent batches of beans are immersed in this same aroma-saturated water. Because of the difference in concentration, caffeine gradually moves from the beans into the solution, while flavour compounds stay in place. The process is repeated until the caffeine content drops to trace levels. Finally, the coffee is gently dried to the desired moisture level and prepared for transport.That’s why Sueño never feels “stripped back”. Just as the warm weather has settled in for good, the first fresh harvests from Africa are starting to arrive. Itumpi from Tanzania clearly reminds us why we value coffees from this part of the continent: crisp, juicy brews with a large dose of freshness.In taste, Itumpi leans towards green-red rhubarb and pink grapefruit. The acidity is distinct and pleasantly juicy. In mouthfeel, the coffee is light, tea-like, and clean, with a crisp finish that practically begs to be brewed over ice.The enigmatic PB stands for peaberry. It refers to a natural anomaly where, instead of two flat beans, a single, smaller, and rounder bean develops inside the coffee cherry. Sometimes overlooked, though completely unfairly, because it can yield a very intense, concentrated flavor. It was this intensity that stole our taste buds from among the other grades.The raw material comes from the Itumpi cooperative in the Mbozi district, Songwe region. About 160 local producers operate here, cultivating coffee at an altitude of 1500–1700 meters above sea level. Since 2019, the cooperative has been producing fully washed coffees using their own wet mill. With such a crisp, acidic profile, this method fits like a glove.Store in a dry and cool place.

It is a hilly region with an average altitude of 1,500-1,800 meters above sea level, rich in volcanic soils. The Nyagishiru station is owned and managed by Matsitsi Trading Coffee SU (MATRACO). The company was founded in 2015 by Zuberi Matsitsi, who produces specialty coffee primarily for international markets.Fun fact: Zuberi Matsitsi owns over 7,000 coffee trees. In addition to the Nyagishiru CWS plantation, his company also owns two other plantations in the Kayanza province. Coffee batches from Zuberi Matsitsi's plantations won awards in the Cup of Excellence competitions in 2013, 2014, 2015, and 2017.Store in a dry and cool place.

The exceptional terroir ensures the production of high-quality coffee with rich flavor profiles.ABOUT THE PROCESSINGEthyl acetate is a naturally occurring ester used to bind and remove caffeine from green coffee. The coffee is sorted and steamed for 30 minutes to open the pores of the beans and prepare them for decaffeination. It is then placed in a solution of water and ethyl acetate, where the E.A. acid begins to bind with chlorogenic acid salts inside the seeds. The tank is drained and refilled until caffeine is no longer detectable. The seeds are steamed again to remove any traces of ethyl acetate, then dried.Store in a cool, dry place.

The company was founded by Syoum and Emame, and is currently run by their grandchildren. Bette Buna is committed to improving the quality of life for its community members – it teaches local farmers how to improve soil quality, restore agroforestry systems, and understand the importance of harvesting ripe cherries. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. In several stages, caffeine was gently and selectively extracted from the beans, allowing the green coffee to retain a profile closely linked to the original batch.Store in a cold and dry space.

The region is known for its ideal conditions for coffee cultivation. The mountainous terrain, volcanic soils, and favorable microclimate allow for the production of coffee with refined, distinctive profiles.Fun fact: heirloom is a term characteristic of Ethiopian coffees, used to describe the local and wild varieties of the coffee tree viewed as a whole. Some sources state that up to 10,000 different varieties are grown in the country; they are often mixed in the fields, and it would be difficult to sort them precisely during harvest, which is why over time they were given this collective name meaning "traditional coffee."Store in a cool, dry place.

The processing was carried out at the cooperative’s facilities to ensure consistency. The coffee was then decaffeinated in Germany using the water process.Did you know? Water process decaf is a multi-step decaffeination method in which green coffee is soaked in a water solution to extract the caffeine. The caffeine is then removed from the solution using activated carbon. The caffeine-free solution is subsequently added back to the pre-dried coffee beans. Final drying restores the beans to their original moisture content.Store in a cold and dry space.

The cooperative's headquarters are located in the Ngariama area on the southern slopes of the mountain.Fun fact: Most coffee growers in Kenya own between 1/8 and 1/4 of a hectare of land and deliver their coffee as cherries to a local processing station, such as Karimikui, for sorting and processing. At the station, the deliveries are tasted, and after selection, they are mixed and processed into daily lots (microlots).Store in a dry and cool place.

Their farms average 1-2 hectares in size. The coffee cherries delivered to Kindeng Mill are processed, and then the beans are dried on raised beds and cloths, turned several times a day. The entire process takes about a month.Fun fact: Jiwaka Province is located in very fertile lands in the Waghi River Valley. The river serves the locals in many areas, including agriculture.
