A whole-bean specialty coffee beans from Indonesia, roasted by BeMyBean from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of black elderberry, wild berries, blackberry liqueur, compote, and grapefruit-lemon juice.Country: Indonesia (Sumatra)Region: Bener MeriahFarm: Jingki Roda Processing: Gayo 1, Gayo 2Varietal: Anaerobic natural Altitude: 1400 m a.s.l.ABOUT THE REGIONHigh in the Gayo mountains, in the Indonesian province of Aceh, at an altitude starting from 1400 m a.s.l., comes a coffee born from the collaboration between local farmers and the Terry Farm project managed by PT. Jingki Roda Gayo. Fertile, volcanic soils, a cool climate, and shade-grown cultivation create ideal conditions for the fruit to ripen, while sustainable farming methods preserve the natural richness of this unique terroir.ABOUT THE PROCESSINGRight at the harvesting stage, only fully ripe, red cherries are selected. They then undergo traditional sorting using the floating method, during which they are submerged in water. The highest-density cherries sink to the bottom, while immature or damaged ones float to the surface and are discarded. This ensures that only the finest raw material moves on to further processing. The next stage is anaerobic fermentation. Whole cherries are placed in tightly sealed tanks, where they ferment without oxygen for a controlled period. Under these conditions, complex aromatic compounds develop, giving the coffee exceptional depth, intense fruitiness, and distinctive, slightly winey notes. After fermentation is complete, the whole cherries are spread out for drying. The pulp remains on the beans throughout this process, gradually transferring sugars and aromatic compounds to them. Slow, carefully monitored drying results in a richer body, enhanced sweetness, and a distinct structure in the brew.Only after reaching the proper moisture level do the dried cherries go to the hulling machine, which removes the dried skin and pulp. The green coffee beans then undergo thorough sorting and quality control before being prepared for export. The result of this demanding process is an incredibly expressive cup. The very first sip brings an intense aroma of elderberry and forest fruits. Moments later, the character of blackberry liqueur and the sweetness of homemade compote emerge, seamlessly transitioning into a juicy, citrus freshness reminiscent of grapefruit and lemon juice. This is a highly intense coffee, created for those who look for bold, full-bodied, and unforgettable flavor experiences in alternative brewing methods.Store in a cool, dry place.
Whole-bean specialty coffee beans from Vietnam, roasted by COFFEE PLANT from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of stevia, green apple, malt, and tropical fruits.Country: VietnamRegion: SaigonProducer: Quang TriProcessing: AnaerobicVarietal: LibericaAltitude: 600m a.s.l.TASTE - intense sweetness and sticky bodyWe have never tasted such a strange coffee before – everything here is unusual. First of all, the species – it is not Arabica, it is not Canephora, and it is not Excelsa. It is a very rare Liberica. Its beautiful, tiny coffee cherries hide a great deal of sweetness and an interesting character. Secondly, Vietnam – an origin that we simply avoid, and thirdly – this Liberica grows at an altitude of 600 meters above sea level. To top it off, a very long fermentation was added to the coffee. All of this made the coffee very intense. In the aroma, it smells of fruit, malt, and delicate herbal notes. In the flavor, you will find very intense notes of stevia, apple, and tropical fruits. Everything is crowned by a long, very sweet, malty aftertaste. The acidity is low but well-developed. The body is high and very sticky, reminiscent of the natural sweetener that is stevia. This is a coffee that tastes like nothing we have ever had before!PROCESSING - intense fermentationIn the case of this coffee, we are dealing with a fairly simple processing method – anaerobic natural. Although the processing itself is quite classic, its length gives it a unique character. After being delivered to the washing station, the coffee cherries were placed into plastic vacuum bags. There, the cherries ferment for as long as 120 hours. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.PLANTATION - Quang Tri - Liberica straight from Vietnamese Saigon!Quang Tri is a coffee shop, a roastery, and a coffee producer. On the production side, Quang Tri operates by looking for small, natural plantations and rare botanical varieties – Canephora, Excelsa, and Liberica. And that is how lot 96b was created – it is a blend of Libericas coming from two very small farms.Next, the coffee was transported to one of the processing stations that Quang Tri has been working with for many years. There, the coffee was subjected to an intense fermentation process. First, the cleaned coffee cherries ferment for as long as 120 hours in plastic, airless bags. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.ROASTER'S OPINIONThere are rare coffees, there are strange coffees, there are unique coffees – this one combines everything. First of all, we are dealing with Liberica – in our several-year history, we have tasted maybe 2 Libericas and they were not very good. Secondly, it is a coffee from Vietnam, which is an origin we generally avoid. Thirdly, we have a very intense fermentation, which in itself is not that strange. However, Quang Tri produced only 180 kg of this lot – we bought 60 kg from this lot. The coffee is very sweet, even sticky – honey-like, though this sweetness is definitely much more reminiscent of stevia than honey. It has a light, fruity acidity reminiscent of apple, plus some tropical fruits and malt or dark beer. This is a very interesting option for people looking for something truly unique.ROYAL BEANSWhat’s behind the name Royal Beans? A truly competitive profileA handshake separates me from this farm. The La Esperanza farm was established in 1946. 80 years ago, the first coffee trees in the state of Veracruz were planted by Don Antonio Rincon and Dona Lucia Garcia. The history of the Rincon family took off for good in 1970, thanks to the division of the family estate in the name of peace of mind and better organization. Emmanuel Rincon turned out to be a real game changer, turning the processing method upside down. Instead of sticking to schemes, he focused on bold experiments with fermentation and exchanging experiences with producers from all over the world. In 2018, Emmanuel joined forces with Andreas, whose hand I shook in 2022 when he was showing me what farms in Mexico look like. With Exportadora de Café California, moving to a pro level, he combined the fight for the highest quality with care for the ecosystem and soil regeneration. The effect? Since 2019, the beans from La Esperanza have represented a purely competitive profile. Emmanuel obsessively looks for clarity, complexity, and that perfect balance between body, acidity, and sweetness in the brew.Store in a cold and dry space.
Whole-bean specialty coffee from Colombia and Honduras, roasted by Heresy roasting brand. Dark roast, perfect for espresso machines and moka pots. You can expect hints of caramel, jam chocolate, dried fruits and wine.Origin: Colombia, HondurasRegion: Cauca / Santa BarbaraFarm: El Tambo / Javier FernandezProcessing: Washed / Fermented HoneyAltitude: 2050 / 1600 m a.s.l.Cupping score: 86 / 100 ABOUT THE FARM AND THE COFFEE PRODUCEREl TamboThis exceptionally clean and complex lot is the result of the work of four small-scale producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on several-hectare farms in the El Tambo micro-region, located west of Popayan, the capital of the Cauca department. The following synergy of factors makes the quality of their raw material so phenomenal:the microclimate in El Tambo and the cultivation altitude reaching above 2,000 meters result in slower cherry ripening, while lower humidity facilitates the drying process: the processed coffee loses water in a predictable and controlled manner,a thoughtful and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal air throughput and sunlight, the producers' modern knowledge of fertilization combined with a traditional practice known locally as “re-re,” which involves the selective harvesting of overripe, undeveloped, or dried fruits and leaving them on the ground by the trees: thanks to this, more pests feed on the “waste” instead of attacking healthy batches, and, of course, conscious, restrictive cherry picking at the optimal ripeness stage combined with years of experience in the fermentation and drying process.Only the local population works during the harvest, forming the core of the community of several small El Tambo villages, which has naturally evolved around the continuous, seasonal cycle of coffee cultivation for generations.Javier FernandezJavier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be world-famous as a Windows desktop wallpaper. The Fernandez family (there is also a second son, Nahun!) is not afraid to play with processing, and thanks to bold experiments, they deliver some of the best lots in all of Santa Barbara year after year. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMIn the current Illuminati lineup, we have a combination of washed and honey processing with extended fermentation. El Tambo is a classic washed. Javier Fernandez is a more fermented wild card.ROASTER'S OPINIONOnce again, we apply the equation here: very good + very good ≤ very good. In the base, there is deep caramel sweetness and plenty of jammy fruitiness, the dark-blue, forest kind. And as a joker, a winey-tropical honey. 21st-century synergy. An espresso shot of this is pure goodness. Illuminati offers greater complexity than a classic Brazil. At the same time, it is very sweet, slightly fruity, and goes down well solo or with milk. Balance and a pleasant, yet in no way overpowering acidity – that is our main plan for this blend!Store in a cold and dry space.

The dry, sunny conditions of Cerrado favor stable natural processing, giving the beans a clean, chocolate-forward character, while the Kenyan beans, fermented and dried on raised beds, develop a pronounced citrus acidity. The combination of these two components creates a harmonious chocolate-citrus profile with delicate notes of stone fruit.PROCESSINGAfter being imported to Europe, the Brazilian beans were decaffeinated using the supercritical CO₂ method, which selectively removes caffeine with minimal impact on the aroma and structure of the beans. As a result, LOW Juicy Fruit retains its full flavor, medium body, high sweetness, and lightly sparkling acidity, leading to a long, chocolate-citrus finish. We also verified the caffeine level in the final brew prepared according to the V60 protocol. In 250 g of brewed coffee, we measured 64.1 mg of caffeine, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER'S OPINIONStore in a cold and dry space.

The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. Heraclitus already knew that, and we trust the guy. What he couldn’t quite grasp was that life is like helium-6 isotope – an outrageously unstable joke of the universe. The profile is clean, sweet, and surprisingly full-bodied.
