Celso Minussi was one of the first partners of FAF Coffees. Celso is full of energy and takes care of his coffee plants every day with lots of attention. Through his dedication for the coffee that he’s cultivating he reaches high productivity while ensuring quality lots. On his land, you can find many different varieties growing and Celso loves to experiment and test out less common arabica varieties in the region. He is especially fascinated by the Bourbon variety. Celso is not just passionate about coffee farming, he's also committed to protecting the natural resources on his land. He takes great care to safeguard the springs, ensuring they remain clean and plentiful for future generations. On his entire land, water springs are well protected, by planting trees and shrubs and also allowing natural vegetation to flourish.



ABOUT THE PROCESS


In contrast to many commodity focused Brazilian farms, Celso has embraced meticulous hand harvesting. Ripe cherries are picked, sorted, and for our naturally processed lot, slowly dried on drying beds. With the outside fruit of the cherry left intact, this gentle process ensures the development of sweet, aromatic flavour.
