ABOUT THE COFFEE

Sirius started as a star. Now it is your espresso. This lot comes from the Gatta farm of the Dukamo family, in the Sidama region, Ethiopia – grown at an altitude of 1,900–2,000 meters above sea level under the shade of native trees that are over 200 years old. The Dukamo brothers started from scratch with the conviction that coffee from Sidama deserves more attention. Fifteen years later, they have 3 farms, 42 washing stations, and 6 dry mills. This is what consistency tastes like. The processing method is Sleeping Bag Natural – cherries are sorted by ripeness and dried outdoors in sealed bags that slow down moisture loss and concentrate flavor without the risk of over-fermentation. The effect is clean, sweet, and very precise for a natural.

ROASTER'S OPINION

Sirius is a natural Ethiopian espresso that behaves well in the portafilter – fruity, but with acidity kept in check; sweet, but not overly cloying. Pear and strawberry bring juiciness to the shot, while caramel sweetness balances it out, ensuring a satisfying finish. Cleanliness and clarity that you do not normally expect from a natural in a portafilter. Good on its own, even better with milk. One of those coffees where dialing in a recipe is effortless.
