Until recently, it was administratively part of Sidamo, but it now functions as a distinct coffee region. The area is largely forested and offers excellent conditions for growing Arabica. Coffee trees grow here at altitudes above 1,500 meters above sea level, in fertile, well-drained soils of volcanic origin that require little fertilization. The climate is warm but moderated by the altitude, with annual rainfall of 1,500–2,500 mm spread over about nine months. Temperatures usually remain within the range of 15 to 24°C. Over the past few decades, Guji has established its position as one of the most recognized and valued coffee-producing regions in Ethiopia.Sidamo is recognized as the largest coffee region in Ethiopia. It encompasses the fertile highlands located south of Lake Awasa in the Rift Valley. Crops are situated at altitudes ranging from 1,500 to 2,200 meters above sea level, which promotes slower ripening of the coffee cherries in a cooler climate. As a result, coffees from this region stand out with their natural sweetness and pleasant acidity. Highly fertile soils and annual rainfall of 1,200 to 2,000 mm create ideal conditions for growing high-quality coffee.Yirgacheffe lies in the central part of the Gedeo zone in southwestern Ethiopia. This region is famous for producing coffees of exceptional quality, which is influenced by fertile soils, a tropical climate, and high-altitude plantations, often exceeding 2,000 meters above sea level. Due to the altitude of the crops, local coffees are classified as SHG (Strictly High Grown) or SHB (Strictly Hard Bean). This means that the cherries ripen more slowly, allowing the plants to deliver nutrients to the beans for a longer period. The result is a more complex and distinct flavor profile, with a characteristic intensity of aromas.Store in a dry and cool place.

It all began at the beginning of the 20th century, when around 1908 the Dutch colonial authorities brought Arabica seedlings to the Gayo highlands.Today, Gayo coffee is grown mainly in three regions: Central Aceh, Bener Meriah, and Gayo Lues. This place has ideal growing conditions - fertile volcanic soils, hilly terrain, a cool climate, and regular rainfall. Thanks to this, the coffee from there is of truly high quality. After colonial times, cultivation was taken over by local, small-scale farmers who continue this tradition to this day, often using natural, sustainable methods and shade-grown cultivation. For the inhabitants of Gayo, coffee is more than just a product - it is the foundation of life. It supports virtually every family and is strongly tied to their culture and identity. After harvesting, the fresh coffee cherries are processed immediately. The first step is sorting using the flotation method (known as "rimbang") - the cherries are thrown into water, which causes the ripe, heavier (meaning good) ones to sink, while the immature or damaged ones float to the surface and are discarded. This is a simple, traditional, but very effective method.Store in a dry and cool place.

If the coffee is very fresh (foaming intensely), you can extend the bloom (pre-infusion) to 2 minutes, or perform an additional bloom at 1:00 (pour another 50g and wait until 2:00).At 1:00 (or 2:00), start pouring into the center of the V60 (using circular motions about the size of a small coin). Maintain a flow rate of 6-8g per second (slightly below the second enlarged dot on an Acaia scale) and keep the stream of water just below the point where the flow begins to break.Once you reach 250g, lower the kettle so the spout is about 3 cm above the water surface (you can stop the circular motions now) and finish pouring at 300g.Perform a "shake" by holding the base of the V60 (moving it horizontally and vertically). If the water flows through too quickly, perform a "swirl" instead.Total brew time: 2:30–3:00 (or 3:30–4:00 with an extended/additional bloom).Store in a cold and dry space.

After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade). The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours. Specialty-grade whole-bean coffee from Kenya, roasted by the Polish roastery Paloma. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of grapefruit, red currants, lavender and cocoa.Origin: KenyaRegion: MurangaProcessing method: WashedVariety: Batian, SL28, SL34, Ruiru 11Cupping score: 88 / 100Farm: Various smallholder farmer members of the New Murarandia Farmers Cooperative SocietyAltitude: 1850 m a.s.l.ABOUT THE FARMThe Gatuya coffee processing station is one of two washing stations managed by the New Murarandia Farmers Cooperative Society, which brings together approximately 3,500 smallholder producers. Each farmer owns a farm ranging from about 1/5 to 1/3 of a hectare and delivers coffee to the station in the form of freshly harvested cherries.Kenyan microlots can be traced back to a specific processing station, and whenever possible, to an individual farm. They are selected based on the evaluation of coffee quality during cupping. Since most Kenyan growers own between 1/8 and 1/4 of a hectare of land, the harvested cherries usually go to a local station, where they are sorted and processed. Deliveries from various farmers are combined there and processed into batches covering the harvest delivered on a given day.Due to the huge number of samples requiring evaluation, our green coffee buyer usually stays in Kenya throughout the entire harvest period. From the evaluated batches, they select the best ones, which we then purchase as microlots consisting of fewer than 100 bags.ABOUT THE PROCESSINGMost coffee in Kenya comes from smallholder producers delivering cherries to processing stations that specialize primarily in fully washed coffees. Larger estates are also known mainly for producing coffees processed using this method. The washed process may vary slightly depending on the location, but it typically includes a soaking stage characteristic of Kenya. Ripe coffee cherries are picked and depulped on the very same day. The beans then ferment for 24–48 hours in open concrete or cement tanks. After fermentation, they are thoroughly rinsed in water channels and then soaked in water for 12–72 hours. Finally, they are spread out on raised beds to dry.Store in a cool and dry place.

This gave them greater control over both the coffee's quality and the price they received for their lots."At first, we didn't know what we were doing," Oscar explains. "We were just experimenting."Those experiments led to the creation of some of the most exciting and unique flavor profiles we have ever had the chance to sample. Today, the Chacóns produce a wide range of Honey-processed coffees, adjusting the drying time to achieve different results in the cup.Further innovations were forced upon the family by unexpected events. In 2008, an earthquake left their area without electricity and access to water during the harvest. Unable to run their depulpers or wash away the pulp, which was necessary for producing Washed coffees, Francisca drew on her knowledge of African coffee production methods and quickly built raised drying beds on the farm.Store in a dry and cool place.

As he says himself, he "inherited" the profession of a producer from his father. He completed courses in coffee production at the National Learning Service (SENA), and nearly ten years ago he established his own plantation. In addition to Caturra, Don Lisandro also cultivates Gesha and Pink Bourbon varieties.Don Lisandro owns a five-hectare farm, 4.5 hectares of which are dedicated to coffee crops. The plantation is located on soil typical of this region, which is a combination of volcanic and sandy-loam substrate.Only deep red, ripe cherries are harvested. In the afternoon, the pulp is removed from them, and they are then sorted using a zaranda – a type of screen used to separate impurities from the coffee. The beans later ferment in open tanks for 18–26 hours and are rinsed three times. The depulping machine is turned on only when a larger batch has accumulated, one that allows for continuous operation for at least 2 hours. In the meantime, further deliveries arrive to maintain continuous workflow until around 7:00 PM. After removing the pulp, the beans are sorted by density in water channels into various grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade). The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for an additional 8–12 hours. Finally, it goes to drying beds, where it rests for 7 to 14 days until it reaches the appropriate moisture content.Store in a dry and cool place.

COFFEE OF THE MONTH
Paloma - Ethiopia Banko Gotiti Natural Filter 250 g
Manufacturer: PALOMA
Roasting date: 16.09.2026
Whole-bean specialty coffee from Ethiopia, roasted by Paloma roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of stone fruits, elderflower and toffee.Origin: EthiopiaRegion: YirgacheffeFarm: Banko GotitiProcessing: NaturalVariety: HeirloomAltitude: 1600 - 2300 m a.s.l.Cupping score: 87 / 100 ABOUT THE FARM AND REGIONBanko Gotiti is a village in the Gedeb district of the Gedeo zone in Ethiopia, where the Yirgacheffe region is located. The Banko Gotiti cooperative was founded in 2012, independently from the larger Worka organization. It currently brings together around 300 members who cultivate a blend of traditional Ethiopian coffee varieties.Yirgacheffe has become famous for coffees with a distinct, often berry-like flavor profile. The region is exceptionally lush – the dense vegetation is the result of a warm, tropical climate with moderate rainy and dry seasons. Most of the coffee is grown by smallholder farmers, in the shade and using organic methods. The plantations are located at altitudes ranging from 1,600 to 2,400 meters above sea level. Numerous micro-regions create complex and diverse flavor profiles, depending, among other things, on the washing station from which a given coffee originates.ROASTER'S OPINIONHow many times have I heard this story – I like coffee, I wonder what really good coffee tastes like, oh, there's something called Specialty, I buy a bag of Ethiopia... and that's it. This coffee has permanently altered your neural pathways. You don't know what it is, you don't understand the taste, but you LOVE it. You buy another one, and another, Kenya, El Salvador, you stick pins in the globe, blood pressure constantly high, another origin, processing? Wait, there's more of this? You jump from one rabbit hole to another. Somewhere along the way you bought a dripper, an aeropress, maybe I'll find a job in a cafe, I didn't really care about university anyway, you say there are coffee competitions? Interesting... wait, I was supposed to say something about the filter coffee of the month, not summarize my life. But seriously, if this coffee starts even half a similar story for one person or reminds someone of their beginnings, that's enough for me. Good soup.RECIPE19g of coffee to 290ml of water at 91*C0:00-0:30 First bloom - 45g.0:30-1:00 Second bloom - up to 90g.1:00-(1:20-1:25) One continuous pour up to 290g. Stream directed straight into the center, light circular motions, avoid the sides of the dripper. If your pour fits within 20-25s, it means you have a good stream flow rate. The total drawdown should finish between 2:15-2:45. Draining too fast? Swirl.Store in a cool, dry place.
