We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. They cultivate coffee at an altitude between 1800 and 1900 meters above sea level on fertile volcanic soils.The cherries are processed using the washed method – after harvesting, they go straight to the station, where they spend about 24 hours in water, and then dry for 11–14 days.In the cup, the coffee is like juice. Notes of redcurrants and lemongrass. Coffee first appeared in the territories of modern-day Tanzania in the 16th century, initially in the Bukoba region, where local varieties were grown even before the colonial period. Currently, Tanzania produces an average of about 50–70 thousand tons of coffee per year, mostly Arabica.I am no coffee prophet, but I have a hot take that Tanzania is the new Kenya. Natural drying processes were introduced, and research began on bacteria and yeast that control fermentation (including the Koji strain). Currently, over 28 different coffee varieties are grown there.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. The Red Caturra variety is characterized by an intense aroma and a rich flavor profile. On the other hand, Yellow Caturra is a subtle coffee variety with bright, yellow beans. It is characterized by a mild flavor profile.ABOUT THE PROCESSINGSugarcane is a unique type of fermentation resulting in more intense fruity notes. After the fermentation is complete, caffeine is removed through an extraction process in special containers, where it is washed with a mixture of water and ethyl acetate. We placed the green beans in an oak barrel where wine had previously matured, giving the coffee exceptional depth and character.The result is a profile full of sweetness and intense alcoholic notes – in the cup, you will find rum, nougat, and a distinct accent of hazelnut. It is a coffee that combines a Brazilian chocolate-nut base with a clear barrel influence.ABOUT THE PLANTATIONFazenda Matão is one of the more recognizable farms in Brazil, known for producing high-quality specialty coffees. Located in a region favorable for coffee cultivation, it benefits from the ideal climate and altitude, which allow for obtaining beans with a full, sweet profile.On the farm, particular attention is paid to the selection and processing of the beans, which translates into a clean and repeatable profile.
