Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on several-hectare farms in the El Tambo micro-region, located west of Popayan, the capital of the Cauca department.The following synergy of factors makes the quality of their raw material so phenomenal:the microclimate in El Tambo and the cultivation altitude reaching above 2,000 meters result in slower cherry ripening, while lower humidity facilitates the drying process: the processed coffee loses water in a predictable and controlled manner,a thoughtful and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal air throughput and sunlight,the producers' modern knowledge of fertilization combined with a traditional practice known locally as “re-re,” which involves the selective harvesting of overripe, undeveloped, or dried fruits and leaving them on the ground by the trees: thanks to this, more pests feed on the “waste” instead of attacking healthy batches,and, of course, conscious, restrictive cherry picking at the optimal ripeness stage combined with years of experience in the fermentation and drying process.Only the local population works during the harvest, forming the core of the community of several small El Tambo villages, which has naturally evolved around the continuous, seasonal cycle of coffee cultivation for generations.Javier FernandezJavier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. The Fernandez family (there is also a second son, Nahun!) is not afraid to play with processing, and thanks to bold experiments, they deliver some of the best lots in all of Santa Barbara year after year. In the base, there is deep caramel sweetness and plenty of jammy fruitiness, the dark-blue, forest kind. Chelbesa is the largest coffee-growing area in Gedeb, spanning 1240 hectares of plantations situated between 1925 and 2110 m a.s.l. Thanks to the proximity of the station, none of the local farmers have to transport their cherries for longer than 40 minutes, which allows them to maintain their freshness before processing begins.SNAP Coffee, an Ethiopian exporter, was founded in Addis Ababa in 2008 by Negusse D. Weldyes. The company operates three processing stations in the Chelelektu region in the Kochere district (Gedeo zone) and also cooperates with stations in Uraga (Guji) and Nensebo (West Arsi). Each of them serves an average of about 550 farmers. SNAP Coffee bases its operations on three pillars: consistently maintaining the high quality of specialty segment coffees, sharing knowledge and training in coffee processing and cleaning, and implementing waste recycling systems to protect the environment.ROASTER'S OPINIONWe don't have favorites among our coffees…...but Ethiopia Chelbesa is the closest to being the one we would point to. If we had a "Roaster's Choice" category, it would definitely be there. We had beans from the Chelbesa washing station in our roastery for the first time in 2021. To say we liked them is an understatement. We remembered them long after they were gone. This is what we love about Ethiopias – distinct peach, flowers, and herbs. Plus a deep sweetness. This year we bought twice as much of it as last year, and we assume this trend will continue next year.Store in a dry and cool place.

As it cools, the rose hip shows a touch of herbal elegance.ABOUT THE FARMThis coffee has been processed at the Kamwangi Factory, belonging to the New Ngariama Cooperative Society in Kirinyaga, Central Kenya. Among the three wet mills under the cooperative, Kamwangi is one. It serves approximately 1800 farmers, although not all are currently active. These farmers primarily grow SL 34 (90%), along with SL28, K7, and Ruiru 11 varieties, at altitudes ranging from 1500 to 1800 metres above sea level. The factory is closest to the town of Embu. Processing is done with Fresh River Water. The same water is recycled during the day through a recycling process enabling them to significantly reduce water consumption. They are Rainforest Alliance certified, and have established soaking pits for waste water treatment.THE PROCESSOnce the coffee cherries have been accepted by the Cherry Clerk, they are pulped and fermented for approximately 16-24 hours, depending on ambient temperature at the time. Following fermentation, the coffee is washed in clean water from the Kii River and soaked for 12 hours. Newly installed tiles in the washing channels help preserve coffee and water quality, and all water used in processing is cleaned by filtering in earthen pits before being reintroduced to local waterways. After washing and grading, the beans are laid to dry on raised beds. Workers rake the beds frequently to ensure even drying, covering the beds during the hottest time of day and at night, to shelter parchment from moisture. It takes approximately 14 days for the beans to dry.ROASTER'S NOTEOur Kenyan lots really flew off the shelves this season, so we were excited to source this coffee from the final harvest of 2025. The cherries fermented for about 12 days (around 300 hours) under controlled conditions and were then slowly dried on raised beds for 35 days until reaching 12% moisture.The result? This is one of the most consistently developing coffee projects in the region — the family micromill Café Rivense, founded in 2005 by Régulo Ureña and Isabel Rojas, and today managed together with their sons: Ricardo, Mario, Esteban, and Luis.The Vista al Chirripó plantation is located at an altitude of up to ~2000 m a.s.l., overlooking the highest peak in Costa Rica — Cerro Chirripó. It was from this very plantation that the lots which took 5th place in the 2019 Cup of Excellence originated — it is one of the most esteemed terroirs in the entire country.The farm focuses on biodiversity, complete self-sufficiency, and minimal water consumption, and the entire production — from harvesting, through processing, to export — is carried out entirely by the family themselves, without intermediaries.ABOUT THE COFFEEThis is an exceptional lot of the Caturra variety, subjected to anaerobic fermentation and dried in the cherry. This process highlights the juicy fruitiness and deep sweetness, creating a profile full of cherry, prune, and praline creaminess. The cup is smooth, elegant, with a long, sweet finish — perfect as a unique dessert espresso.The cherries are selectively hand-picked and then undergo anaerobic fermentation, where they remain in controlled conditions without access to oxygen.
