Paloma - Mexico Chabela Decaf Washed Filter 250 g

Manufacturer: PALOMA

Roasting date: 10.08.2026

Specialty-grade whole-bean coffee from Mexico, roasted by the Polish roastery Paloma. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of dried pear and plum, crumb topping, red apple.Origin: MexicoRegion: ChiapasProcessing method: Washed Method of decaffeination: Mountain Water ProcessVariety: Bourbon, Catimor, Garnica, TypicaAltitude: 1100 - 1300 m a.s.l.Cupping score: 83 / 100ABOUT THE REGIONChabela is produced by an exporter based in the Chiapas coffee-growing region of Mexico. Established in 1980, this exporter was the first decaffeinated coffee producer in Latin America, utilizing industry-leading technology for process analysis to achieve the highest quality and bean yield. Their water extraction method achieves over 99% decaffeination. This process was patented in 1987 and received organic certification in 2003. Their business ethics are defined as a strategy where commitments and responsibilities are upheld toward key stakeholders: customers, employees, shareholders, suppliers, creditors, competitors, the local community, and government bodies.ROASTER'S OPINIONWhen you’re already jittery from caffeine but still want more, grab this coffee. It features an unconventional and highly satisfying profile—plum with cinnamon, notes of chocolate-covered cherry, and a finish that reminds you of a freshly baked cookie.V60 RECIPECoffee dose: 19gWater dose: 50g > 300gWater temperature: 93°CGrind size: 8.4 (EK43); 23 clicks (Comandante)Place the filter in the V60 and rinse it under a heavy stream of water to ensure it adheres well to the walls.Grind the coffee, pour it into the V60, and level the grounds.Pour 50g of water, aiming for any dry spots to ensure everything is thoroughly saturated. If the coffee is very fresh (foaming intensely), you can extend the bloom (pre-infusion) to 2 minutes, or perform an additional bloom at 1:00 (pour another 50g and wait until 2:00).At 1:00 (or 2:00), start pouring into the center of the V60 (using circular motions about the size of a small coin). Maintain a flow rate of 6-8g per second (slightly below the second enlarged dot on an Acaia scale) and keep the stream of water just below the point where the flow begins to break.Once you reach 250g, lower the kettle so the spout is about 3 cm above the water surface (you can stop the circular motions now) and finish pouring at 300g.Perform a "shake" by holding the base of the V60 (moving it horizontally and vertically). If the water flows through too quickly, perform a "swirl" instead.Total brew time: 2:30–3:00 (or 3:30–4:00 with an extended/additional bloom).Store in a cold and dry space.

Paloma - Tanzania Sambewe Washed Omniroast 250 g

Manufacturer: PALOMA

Roasting date: 02.09.2026

Specialty-grade whole-bean coffee from Tanzania, roasted by the Polish roastery Paloma. Medium roast – perfect for all brewing methods. In the cup, you’ll find notes of cocoa, raisins, cranberry and orange.Origin: TanzaniaRegion: Songwe MboziProcessing method: WashedVariety: Bourbon, KT423Altitude: 1600 - 1700 m a.s.l.Cupping score: 88 / 100We roasted this coffee from Tanzania as an Omni Roast, which means it is perfectly suited for brewing both a sweet, juicy filter coffee and a fruity, balanced espresso or moka pot coffee - RoasteryABOUT THE FARMSambewe AMCOS was established in 2018, when several groups of smallholder farmers—including Lungwa, Nansama, Sambewe, and Mandelewo—joined forces to create a single organisation.Farmers deliver freshly harvested, red coffee cherries between 11:00 and 18:00. The pulping machine is only started once a large enough batch has been collected to allow for at least 2 hours of continuous operation. In the meantime, further deliveries arrive to maintain the workflow until approximately 19:00. After the pulp is removed, the beans are sorted by density in water channels into different grades: P1, P2, P3, lighter fractions, and so-called "pods" (the lowest grade). The coffee then ferments for 12–24 hours, after which it is thoroughly washed and soaked for another 8–12 hours. Finally, it is moved to drying tables, where it rests for 7 to 14 days until it reaches the appropriate moisture level.Store in a cold and dry space.

ROST - Rwanda Humure CWS Washed Filter 250 g

Manufacturer: ROST

Roasting date: 10.06.2026

Whole-bean specialty coffee beans from Rwanda, roasted by ROST from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of raspberry, dates and black tea.Country: RwandaRegion: Gatsibo DistrictFarm: SmallholdersProcessing: WashedVarietal: Red BourbonAltitude: 1550 m a.s.l.Cupping score: 86 / 100ABOUT THE COFFEEThis Rwanda is unique for two reasons. First, Humure is one of the few washing stations in the country managed one hundred percent by women. Second, the Red Bourbon trees here, thanks to the shade from papaya and banana trees, mature more slowly, gaining much more sweetness. In the cup, you will experience a medium-intense raspberry acidity, balanced by a sweetness reminiscent of dates. All of this is enclosed in a light, tea-like body.ROASTER'S OPINIONThis year's harvest from Rwanda surprised me with a very clean sensory profile – intense raspberries, the sweetness of dates, and a tea-like body. A great, refreshing coffee for warm days.Store in a cold and dry space.

Whole-bean specialty coffee from Costa Rica, roasted in Berlin by The Barn. Medium roast, perfect for all brewing methods. In the cup, you can expect the notes of dried figs and vanilla.Country: Costa RicaRegion: West ValleyProcessing: NaturalVarietal: CaturraAltitude: 1400 - 1500 m a.s.l.Cupping score: 87 / 100THE CUPOur natural processed lot is intense and fruit-forward. Notes of dried fig, blueberry, and apricot are sweetly balanced. Fragrant vanilla and lavender will appear as it cools, with a defined complexity that is a signature of the farm.ABOUT THE FARMThe West Valley is the most prominent coffee growing region in Costa Rica. Most of its coffees are grown under protective shade, and produced on fertile clay. The mountainous landscape is dominated by three volcanoes and a gentle tectonic depression, while the Pacific weather patterns create well-defined dry and wet seasons. Volcan Azul is located on the edges of the Poás Volcano. For 5 generations, the producers have continued making coffee with the objective in mind of achieving excellence and superior quality. The descendants of the founder's families are acquiring natural tropical forests in order to protect and preserve the environment, and to reduce air contamination and global warming. It is their way of contributing to a better future for the generations to come.THE PROCESSThe process for this lot starts when cherries are still on the tree. By constantly measuring the Brix sugar content level, Alejo and his team seek to identify the ideal moment to pick the coffee. Cherries are then sorted and transferred whole to raised beds for slow drying.ROASTER"S NOTECoffees from Volcan showcase a truly special combination of terroir and expertise. Season after season, our naturally processed Caturra blows us away, with superb texture. and sweet complexity.Store in a cold and dry space.
