ABOUT THE COFFEE
Autumn is here, so we’re keeping up our tradition of returning to coffees from Cascaritas, the farm of our friend Hidardo Hernández. This year, we’re starting with a Parainema fermented anaerobically with champagne yeast!
Hidardo has spent years experimenting with yeasts, coffee varieties and microbial cultures. He uses well-studied wine yeasts to give him greater control over fermentation. “Feel the terroir & play with it,” says Hernández, emphasising that flavour and aroma should work together to reflect where the coffee comes from.
Ripe cherries are picked by hand, sorted in water, washed and partially depulped. The coffee then goes into 200-litre barrels with champagne yeast, where it ferments without oxygen for 36 hours. It dries for around 15 days with the remaining layer of fruit pulp still attached to the beans. Finally, the coffee is packed in GrainPro bags and sent to Cafesmo’s warehouse for quality assessment.
ABOUT THE FARM
Hidardo Hernández is a fourth-generation coffee producer. He helps run the Cafesmo cooperative and runs a café with his fiancée, but it’s Cascaritas, just two minutes from his home, that means the most to him.
He runs the farm with his mother in Plan del Rosario, in the municipality of Mercedes in the department of Ocotepeque. Its 3.5 hectares sit at around 1,250 metres above sea level. Since 2015, he has been producing his own microlots here, experimenting with anaerobic fermentation and other processing methods. Alongside these, he produces more approachable natural, honey and washed coffees.
The farm is surrounded by pine trees typical of the region. Banana, American walnut, guamo and other trees provide additional shade, forming a natural canopy over the coffee plants.
Store in a cold and dry space.
