The lot consists of the Bourbon, Catuai, Pache, and Anacafe 14 varieties grown at an altitude of 1,600–2,000 meters above sea level.Only fully ripe cherries from the highest parts of the plantation are selected for processing. They undergo anaerobic fermentation for 120 hours in sealed bags equipped with a carbon dioxide release valve. They are accompanied by juicy blackberries that bring a fruity freshness, while creamy milk chocolate rounds out the whole profile, leaving a long, sweet finish. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying. A light, juicy infusion with notes of dried apples, rosehip, and honey sweetness. Thanks to naturally occurring caffeine, it gently stimulates while remaining refreshing and highly drinkable.It's a great alternative to coffee and tea—something between a fruit infusion and the world of coffee, but with its own unique character.ROASTER'S OPINIONOkay, let's start with this: THIS IS NOT COFFEE. YOU DO NOT GRIND THIS. Cascara is the dried skin and pulp of coffee cherries, which is brewed like tea. The infusion is light, fruity, and naturally sweet, with notes of dried apples, honey, and rosehip.
