Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on several-hectare farms in the El Tambo micro-region, located west of Popayan, the capital of the Cauca department.The following synergy of factors makes the quality of their raw material so phenomenal:the microclimate in El Tambo and the cultivation altitude reaching above 2,000 meters result in slower cherry ripening, while lower humidity facilitates the drying process: the processed coffee loses water in a predictable and controlled manner,a thoughtful and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal air throughput and sunlight,the producers' modern knowledge of fertilization combined with a traditional practice known locally as “re-re,” which involves the selective harvesting of overripe, undeveloped, or dried fruits and leaving them on the ground by the trees: thanks to this, more pests feed on the “waste” instead of attacking healthy batches,and, of course, conscious, restrictive cherry picking at the optimal ripeness stage combined with years of experience in the fermentation and drying process.Only the local population works during the harvest, forming the core of the community of several small El Tambo villages, which has naturally evolved around the continuous, seasonal cycle of coffee cultivation for generations.Javier FernandezJavier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. The Fernandez family (there is also a second son, Nahun!) is not afraid to play with processing, and thanks to bold experiments, they deliver some of the best lots in all of Santa Barbara year after year. The selected cherries are then placed in sealed, shaded barrels, where they undergo a specialized, 72-hour, dry anaerobic fermentation. By removing oxygen and maintaining strict temperature regulations, this process allows the coffee to develop an incredibly clean acidity and a creamy texture, while preserving the distinctive characteristics of its original terroir.After fermentation, the coffee is carefully removed from the barrels and sorted by hand once again to ensure that only the finest cherries move on to the drying stage. Over the course of 33 days, the beans are dried on raised drying beds that provide optimal airflow. The average farmer in this region only has approximately 250 trees, which is extremely small. They are picking their ripe coffee by hand here. This washing station was established in 1984 and features adequate soaking and floating tank for optimal coffee processing and has over 200 drying tables. As a result, they can process nearly 20,000 bags of coffee in total here. As a result of this washing station being established in the 80s, many small-holder farmers have gained access to capital investments, education, and infrastructure to produce exceptional coffees and improve their livelihoods. After coffee has dried, it it transported to the capital city of Gitega for dry milling and export. Natural Coffees in Burundi are picked ripe cherries then laid on raised beds for drying for varying times depending on weather.ROASTER'S OPINIONVery fruity, reminiscent of plum jam.RECIPE16 g coffee250 g water 96°CMedium grind sizePlace a paper filter in the V60 and rinse it with hot water (96°C). This will heat the dripper and server and remove any paper taste from the filter. For best results, always use filtered water (remember that 98.5% of brewed coffee is water).Discard the rinse water from the server.Grind the coffee beans just before brewing and pour them into the dripper. Gently level the coffee in the center of the V60.Place the V60 on a vessel set on a scale and ensure the water temperature is 96°C.Tare the scale and start the timer.Add 50 grams of water. Your coffee will begin the bloom phase (pre-infusion).After 30 seconds, add water until you reach 100 grams. Pour the water slowly, gently, and in circular clockwise motions.At 00:50, pour up to 200g of hot water.At 01:10, pour up to 250g of hot water.Give the V60 dripper a light swirl and let the coffee draw down.The water should finish filtering through around 3:00. You may need to adjust the grind setting if the coffee brews too quickly or too slowly. However, always taste and evaluate the quality of the coffee.Store in a cool and dry place.

This lot comes from Finca San Jose del Lago in the Atitlán region of Guatemala, where it is grown at an altitude of 1,565–2,100 meters above sea level, overlooking Lake Atitlán and three majestic volcanoes. The farm covers an area of 200 hectares, of which 45 hectares are dedicated to coffee cultivation – the remainder forms a natural protected area. The Cabrera family has been connected to this land since the early 20th century, and coffee cultivation began in the 1940s. Eduardo Cabrera, the current owner, invested in building his own wet mill on the farm, which allowed him to take full control over processing quality. The coffee is fully washed and carefully dried, ensuring the clean, crisp flavor profile for which the Atitlan region is famous.ROASTER'S OPINIONIf muesli could be coffee, it would want to be this Guatemala! Sometimes we also contract coffee from a larger cooperative if the quality remains at the exact same high level. Lots rotate periodically, but each time it is the freshest possible crop—we make sure that the unique character of coffees from this part of the world is not muted by unpleasant notes of aging.Costa Rica, on the other hand, comes from the Ureña family business, where everything runs like clockwork. We started our relationship with these excellent producers in 2021, during the very first season of Herezja's existence. La Guaca is the name of the section where the catuai variety is mainly grown, undergoing meticulously designed honey-style processing under anaerobic conditions.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMEthiopia: Processed as natural or washed, depending on seasonality. Natural involves drying the coffee seeds inside the whole fruit. Freshly harvested cherries undergo an initial selection process to discard those with defects. Then, they are spread across so-called African beds—long tables, sometimes stretching for several dozen (!) meters, with a mesh lining that allows for even airflow throughout the process, resulting in homogeneous drying. Depending on the weather, the whole process takes between 25 and 30 days.In washed processing, before fermentation, the coffee goes to a depulper that separates the seed from the pulp and the rest of the fruit. Next, it spends about 24 hours in a tank, after which it is washed and finally dried on African beds for about two weeks.Costa Rica: First, the cherries undergo a brief pre-drying process, and then they are sealed for 2 or 3 days in airtight tanks for fermentation with limited oxygen access. Afterwards, they are dried on long African beds inside something that looks like your grandparents' greenhouse plot, you know, where tomatoes and cucumbers grow. Except about seven times longer.ROASTER'S OPINIONHere is our idea for this espresso: we created a roast profile that highlights the beautiful flower and fruit notes typical of high-quality Ethiopian coffees, while at the same time offering plenty of chocolatey-dessert depth and sticky sweetness to balance the acidity and give the cup equilibrium. That is the work of the second component in the blend. As a result, whether you brew it in an espresso machine, a moka pot, or even as a filter coffee, you will get a full, round, and complex coffee with a long-lasting, sticky aftertaste!Store in a cool, dry place.

Pastor is a blend of coffees from the previous season, which proves that there is nothing wrong with transparently communicating the harvest date! We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it!WHAT A HERESYAlmost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. There are different ideas about how to use them. Quite a few roasters sell them at regular price, without disclosing the harvest date, some add them to cheaper blends, others try to hide the flavor with darker roasting or aromatization. To put the emphasis on fresh, up-to-date crops in our offerings, we always include their dates in the description of our lots. We dream of making this an industry standard! So that the consumer can more consciously judge quality and freshness against price. Meanwhile, there is nothing wrong with "past crops" themselves, if we say so directly and price them accordingly lower. Omar has planted nearly 30,000 trees and takes a very diligent approach to processing. They pick the ripest cherries every 15-20 days during harvest, use traditional pulpers, then dry ferment the coffee for 18-20 hours and rinse the coffee 3 times with clean water before drying in parabolic dryers for up to 18 days depending on weather. From Omar: When I was 7 years old my father helped me planting 300 coffee trees; he gave me a piece of land as an inheritance and when I got married, with the help of my wife, I bought another 4 hectares of land, which I also planted with coffee. It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long.
