First, a dessert-like base of sponge fingers. Then plenty of sweetness, notes of almonds and that sweet-bitter amaretto accent.This coffee comes from Huila, Colombia, and follows a classic washed process. The beans are sourced from small-scale producers working on a few hectares each, where selective picking and controlled fermentation are the norm rather than the exception. Depulped on the day of harvest, fermented for 12–36 hours, then thoroughly washed and dried to the desired moisture level. The result is a clean, structured base that translates into clarity and balanced sweetness in espresso.Caffeine is removed using the EA (ethyl acetate) method. It is a compound that occurs naturally in fruit and as a by-product of sugar fermentation. The green coffee, already processed, is first steamed under low pressure to open up its structure. It is then placed in a water-EA solution, which binds to the caffeine molecules. The process is repeated until caffeine is no longer detectable. Finally, the coffee is steamed once more to remove any remaining traces, then dried and prepared for export.The result is a decaffeinated espresso that feels complete. Sweet, expressive and simply good.Store in a cold and dry space.Rebranding is underway, so you may receive either the old or the new version of the packaging in your parcel. A blend of specialty quality coffees, roasted at Heresy roastery by the 2020 Roasting Vice-Champion. Dark roasted, designed to be brewed in an espresso machine, café, frenchpress or pour-over methods of brewing or brewing in a cup. Profile with low acidity and higher bitterness.This is the most budget-friendly coffee in Heresy's portfolio and perhaps the most heretical! Pastor is a blend of coffees from the previous season, which proves that there is nothing wrong with transparently communicating the harvest date! We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it!WHAT A HERESYAlmost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. There are different ideas about how to use them. Quite a few roasters sell them at regular price, without disclosing the harvest date, some add them to cheaper blends, others try to hide the flavor with darker roasting or aromatization. To put the emphasis on fresh, up-to-date crops in our offerings, we always include their dates in the description of our lots. We dream of making this an industry standard! So that the consumer can more consciously judge quality and freshness against price. Meanwhile, there is nothing wrong with "past crops" themselves, if we say so directly and price them accordingly lower. It's also our way of 'less waste', because some great beans were standing in our warehouse, with no idea what to do with them. And that's how PASTor came into being.PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! The beans are soaked under controlled conditions, which opens their structure. The water is then circulated repeatedly, washing out the caffeine through a natural difference in concentration. After the process, the beans are carefully dried to restore the proper moisture level.Both methods preserve the authentic character of the coffee, delivering a full, natural taste — without caffeine.BREWINGThe density of decaffeinated coffee differs slightly from that of caffeinated coffee. They inherited their farms from their parents and creatively evolved their cultivation and processing methods. Year after year, they produce the highest quality green beans, serving as pioneers not only of specialty coffee in Honduras but also of new processing techniques. They were the ones who successfully adapted natural processing to the challenging climatic conditions of Honduras.The Caballero family owns nearly 200 hectares of land divided into 17 different farms in the Marcala region of eastern Honduras. All their operations are centered at a central washing station – Xincala. This is where all the cherries they harvest are processed. The family constantly invests in the station's development, making it possible to continuously improve quality.Marysabel and Moises's farms feature clay-like soil, and the main variety they grow is Catuai, though they also have Java, Pacamara, and Geisha trees.ROASTER'S OPINIONWe roasted our first naturals from Caballero in 2020. A lot has changed since then. Back then, the processing still had its flaws; there were many heavily over-fermented beans that roasted darker than the rest, creating a slight "muddiness" or what some called "tarriness" in the cup. Today, that is completely gone. This is a sweet, jammy, and thick natural, yet remarkably clean and transparent at the same time. Naturally, this boosted the quality of the final product and made exporting outside Tanzania easier – and as a result – increased the cooperative's profit.ABOUT THE PROCESSING OF COFFEE BEANS ON THE FARMThe Bourbon variety, hand-picked, is delivered on the same day to a small washing station owned by the cooperative.
