This time, we chose the Sarchimor variety.The coffee underwent Black Honey processing, in which cherries are selectively picked and then depulped while leaving the mucilage layer intact. The beans are dried on African beds for about 20 days, regularly turned and moved to maintain maximum cleanliness of the profile and ensure even drying.The result is an espresso with deep sweetness and high body. In the cup you’ll find notes of red fruits and caramel sweetness. The texture is velvety, the acidity lively yet harmoniously balanced—creating a bold, sweet-fruity shot that works beautifully both on its own and with milk.About the farmThe mill began operating in 2012 with a small depulping machine and a few African drying beds, where all the coffee was 100% sun-dried. The first single varieties Marvin experimented with were Caturra and Millennium.The mill, named “Reina Elizabeth,” pays tribute to the farm’s previous owner, Elisa Alfaro Hidalgo (1928–2016), who was Marvin’s mother. Doña Elisa had strikingly blue eyes, which led locals in San Luis to claim that only a queen could have such eyes—hence the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness and the farm’s specialty coffee were also truly royal.

We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. It is one of the few areas in the region that is home to protected forests, which host a diverse range of flora and fauna typical of the area. Moreover, there are several water sources in the region that supply much of the nearby city. The lush, natural ecosystem creates excellent conditions for growing coffee trees while also contributing to the fertility and stability of the soil in these lands.This particular lot is a blend of two botanical varieties from several small producers, who cultivate and process coffee on small, multi-hectare plantations.ABOUT COFFEE PROCESSING ON THE FARMThe Caturra and Pache varieties are hand-picked and processed at small, producer-owned stations. The beans are separated from the cherries using small, often manual depulpers and then fermented in tanks for about 36 hours. After washing, the beans are dried in specially built wooden structures, covered with tarps to ensure a more controlled process, without direct sunlight exposure.ROASTER'S OPINIONI first roasted El Diamante around 2016, alongside several other washed microlots from the highlands of this northern part of the country. After the beans are separated from the fruit, the coffee ferments overnight in tanks. It is then washed and sorted into four quality grades. Following family financial struggles, Tagel set a goal to rebuild what was lost—and he realized this plan by creating a modern, quality-focused project based on collaboration with local farmers.Today, Hambela Goro works with 460 small-scale producers, many of whom own only a few hundred coffee trees. Although each batch is a natural composition of many micro-plots, the coffee maintains impressive consistency and a clean profile.ABOUT THE COFFEEThis lot is the 74110 variety—a selection originating from the JARC research program, known for its high sensory quality and clarity in the cup. Combined with the altitude of 2300 m a.s.l., it yields a coffee with a distinct structure, elegant acidity, and multi-layered aromatics.The washed processing was carried out with great precision. Cherries are harvested at peak ripeness, hand-sorted multiple times, and then, after depulping, fermented in water for approximately 48 hours. Drying takes place on African beds for 10–12 days, depending on weather conditions.The cup is dominated by an intense jasmine aroma, which builds lightness and elegance. The flavor features juicy orange, providing freshness and a clear, citric acidity, while the experience is rounded off by ripe, sweet apricot, bringing softness and fruity depth.
