The SL14 and SL28 varieties underwent classic African wet processing. From the very first sip, this coffee is surprising – its profile closely resembles beans from Kenya.Redcurrant dominates the aroma, complemented by a delicate floral background. In the cup, the currant notes are distinct, rounded out by hints of slightly underripe green apple and yellow mirabelle plum. The acidity is intense, reminiscent of currant and apple, with moderate fruit sweetness and a long, fresh finish. This is another highly successful lot from Coffee Garden.The Coffee Yard is a company owned by Norman Mukuru, who has collaborated with The Coffee Gardens for years on projects related to coffee processing and traceability. Thanks to this relationship, his beans can be exported to global markets.Norman operates at the foot of Mount Elgon, sourcing coffee from the Sironko, Mbale, Bulambuli, and Kapchorwa regions. He has nearly 20 years of experience and, since 2018, has also been developing natural processing, constantly refining his methods. These are names that genuinely matter on the competition scene. Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards.This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. The Bourbon Sidra undergoes a multi-stage natural process: after selective hand-picking and flotation, the cherries undergo a 36-hour oxidation process, followed by a 48-hour anaerobic fermentation. Next, the leachate from the cherries is collected and reused in a subsequent 36-hour submerged fermentation with continuous recirculation, finished with a thermal shock. For the past seven years, the farm has actively participated in this competition, achieving significant success, including second place in 2021. With great passion, he developed his skills across the entire production process, from sensory assessment (cupping) to coffee processing methods. Today, Don Linarco produces coffee using various techniques while also managing other farms.ABOUT THE VARIETYBourbon Sidra is an exceptional coffee variety, being a hybrid of two esteemed lineages: Bourbon and Typica (or according to some sources, Gesha). It is most commonly cultivated in Ecuador and Colombia. It is characterized by a complex flavor profile, where one can often find notes of tropical fruits, citrus, and florals, complemented by a delicate sweetness. The whole profile is completed by a bright, vibrant acidity and a clean finish. Due to its uniqueness and rarity on the market, this variety is frequently used in barista competitions.THE PROCESS The coffee cherries are hand-picked and carefully selected. They are then subjected to a washing process, during which floating cherries are removed from the surface of the water. The next stage is a 90-hour fermentation in hermetically sealed barrels. After fermentation, the cherries are dried under cover for about 28 days, and the final stabilization lasts for 15 days.A coffee for explorers. Lightly roasted, with dark fruits in the aroma. The station has been operating since 1999 and currently works with over 527 smallholder farmers growing mainly SL28, SL34, and Ruiru 11 varieties on volcanic soils. The process is a long, anaerobic natural process with a unique "Sleeping Bag" drying technique: after selective hand-picking and sorting by ripeness, the cherries undergo anaerobic fermentation lasting over 300 hours, and then are dried using the "Sleeping Bag" method, which concentrates sweetness and develops a winey, fruity character in the cup.ROASTER'S OPINIONA strong Kenyan natural coffee with a winey, tropical, and very distinctive flavor profile. Passion fruit and blueberries give it a distinct fruity character, while dark chocolate adds richness and depth. The brew is complex, sweet, and full of character, and the long aftertaste makes all the flavors blend together perfectly. They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience.The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation.In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. After that, the coffee rests for at least 60 days before export to achieve perfect homogenization.ROASTER'S OPINIONEvery year, we wait for coffees from Las Lajas with flushed cheeks! It is located at the foothills of the famous Mount Kenya, in the western part of Kirinyaga, the most popular region in terms of quality. The soils here are volcanic and at the same time the most fertile in the entire country, which is why coffees from this area are so highly valued by roasters all over the world.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMSL28, SL34, Ruiru, and Batian varieties, hand-picked by 650 small producers from the area. After being delivered to the station, they undergo an initial, manual selection, during which unripe and insect-damaged cherries are discarded. After the seed is separated from the fruit, the coffee ferments overnight in tanks, then it is washed and sorted into four quality categories. Drying takes from 10 to 20 days, depending on the weather.ROASTER'S OPINIONThis is our last Kenya of the passing season! Every year, May and June are a time of waiting for the new harvest – in the meantime, here you have a cup that continuously presents excellent quality.
