ABOUT THE COFFEE

Ethiopia Banko Chelchele comes from the Gedeb region, in the heart of the famous Ethiopian Yirgacheffe. Coffee plants grow here at an altitude of 1,950–2,150 meters above sea level, surrounded by fertile volcanic soils and a tropical climate. High-altitude plantations favor the slow ripening of cherries, producing beans with exceptional potential. In the cup, Banko Chelchele blooms with a richness of subtle aromas.

Floral and fruity elderberry combines with exotic, juicy lychee and the deep flavor of ripe blueberry. In the background, a plum-chocolate note appears, adding a pleasant depth to the composition. The whole is completed by a dry accent of cider, introducing an intriguing contrast to the fruity intensity.Beans of the Heirloom variety were processed naturally with anaerobic fermentation. Whole, ripe cherries are placed in sealed tanks, where they ferment under conditions of limited oxygen access. Thanks to controlled fermentation, transformations occur that influence the character of the beans.

Subsequently, the cherries are dried whole, along with their skin and pulp, which allows their fruity potential to be preserved. The carefully conducted process requires control over fermentation and drying conditions to achieve a repeatable result.Banko Chelchele is a coffee with a multidimensional character, in which exotic fruitiness intertwines with deeper and dry accents. It is an offer for those who enjoy discovering subtle combinations of flavors and aromas in coffee.
