The high altitude of the farms, the cool climate, and the long ripening period of the cherries translate into coffees with high sweetness, a clean profile, and great elegance in the cup.The coffees included in this lot come from the El Naranjal, Las Naranjas, and Los Angeles farms. The farmers manage their land under the shade of forest and fruit trees, taking care of biodiversity and soil fertility. Ripe cherries are hand-picked and then subjected to classic washed processing. After fermentation and washing, the coffee is dried for about twelve days under carefully controlled humidity and sun exposure.Behind the project is Cafetos de Segovia, an organization that has for years been helping local producers reach the specialty market directly. It places great emphasis on supply chain transparency, long-term cooperation with farmers, and fair compensation for high quality. Thanks to this, small family farms can focus on producing better and better coffee while preserving the character of the Nueva Segovia region, for which Nicaraguan specialty is famous.ROASTER'S OPINIONMy, what huge beans! It is characterized by two types of climate: cool and temperate. Coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes.Our coffee comes from a selected group of producers from the upper part of the Palestina municipality, located at an altitude of approximately 1700 m a.s.l. This group of farmers specializes in cultivating varieties such as Tabi and Caturra.Cooperativa Departamental de Caficultores del Huila Ltda. (CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. It spans 27 municipalities and operates a support network consisting of 45 coffee purchasing points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 drying service points. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialty coffees allows the cooperative to meet market demand for coffee purchased under specific, ethical conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais, Brazil, between 1915 and 1918. The name "Caturra" comes from the Guarani word meaning "small," referring to the plant's dwarf stature. Due to its small size and densely spaced branches, it can be planted closely together, increasing the yield per area. Caturra contributed to the intensification of coffee farming, particularly in Central America, where it was introduced in the 1940s. This variety also played a crucial role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties.Tabi is a relatively young variety developed in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid. The word "Tabi" comes from the language of Colombia's indigenous people and means "peace" or "life."ABOUT THE PROCESSINGThe coffee undergoes a traditional washed process, which begins with the harvesting of ripe cherries. They are weighed and left for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after approximately 12 hours. Finally, the coffee is sun-dried or machine-dried, depending on the producer's facilities.RECIPERatio: 16.5g (dose) / 36g (yield). Water temperature: 94°C. Grind size: Very fine. Brew time: 24 secondsMethods:Drip Coffee Maker:Rinse the filter with water before adding the coffee. We have been working with them since the very beginning of Heresy, presenting fruity microlots like Taquaral, Campo Alegre and Samambaia. This time it's time for the classic product of their work!ROASTER'S COMMENTIn the cup as classically as possible. Acidity practically invisible, shadow work. Chocolate and nuts in the liquid form. You know what I mean!PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! Leonardo Garcia grows coffee here at an altitude of 1,650 meters above sea level. In the bag, you will find beans of the IPR 103 variety – a cross between Catuaí and Icatu bred in Brazil. It is characterized by high productivity, copes well with heat and less fertile soils, and shows good resistance to coffee leaf rust. IPR 103 has taken root particularly well in the Santa Cruz region and is today one of the most important varieties cultivated there.ROASTER'S OPINIONA phenomenon – Kenyan notes submerged in marzipan. The family farm has existed since 1840. The 1990s brought significant losses, leading the family to sell part of their land to invest in production quality — they launched their own washing station and coffee mill, and also planted a wide variety of Arabica varieties, such as SL-28, Geisha, Villa Sarchi, and Java. This decision brought them great success and business stability. Today, they produce some of the most interesting coffees in the industry.After harvesting, the coffee cherries go to the mill, where they are washed and sorted by quality using optical sorters. Then, the coffee undergoes three stages of drying. For the first 10 days, it dries in the sun; for the next 8 days, it remains outdoors but shielded from the sun; finally, it goes to a patio-greenhouse, where it spends 15 days. After this time, it is hulled and moves to a warehouse for another 60 days, where the beans mature, stabilize, and gain longevity — skipping this stage could result in a rapid loss of quality.ROASTER'S OPINIONA fermented sensation. The flavour goes in all sorts of fruity directions. It is exactly like reaching into a bag and pulling out a handful of colourful fruit gummies. Sweet, juicy and slightly tangy, enough to get your mouth watering.This coffee feels a little like the turn of summer into autumn. Summer is still hanging around, but you can already feel that autumn is just around the corner. The flavour works in a similar way. This is a natural, so there is no shortage of sweetness, but instead of heading towards heavy, dark berry notes, it stays bright, light and incredibly easy to drink. We described the profile as apricot syrup, papaya and yellow plums: plenty of bright, expressive fruit!The coffee comes from around Shantawene in the Bensa district of the Sidama region. It is processed at Buncho Station, whose name simply means “coffee tree” in the Sidama language. Established in 2018, the station receives cherries from small-scale producers in nearby villages.For the natural process, ripe cherries are sorted and then dried whole on raised African beds. At Buncho, this usually takes 14 to 16 days. The result is plenty of fruity sweetness and that characteristic sticky texture, but without any heaviness.Store in a cold and dry space.

The cherries undergo a Fully washed method, where they are first sorted, then pulped to remove the outer skin. Parchment is then fermented in concrete tanks for 12 to 24 hours, depending on temperature and climate conditions, to break down the mucilage. The drying process lasts 5 to 21 days , with workers frequently turning the parchment and covering it during the hottest part of the day to ensure even drying and prevent defects.VARIETYSL28 is one of the best known and most respected African varieties. From Kenya, where it was originally selected in the 1930s, it has spread to other parts of Africa (it is particularly important in the Arabica growing areas of Uganda) and now to Latin America. The variety is suitable for medium to high altitudes and is drought tolerant, but susceptible to the main coffee diseases. SL28 is characterised by rusticity, a trait that means it can be left untended for several years or even decades and then return to successful production. Many parts of Kenya have SL28 trees that are 60-80 years old and still productive. The variety was selected at the former Scott Agricultural Laboratories (now the National Agricultural Laboratories, NARL, located in Kabete). The individual tree selections made at Scott Laboratories between 1935 and 1939 were prefixed with SL. There were 42 in total and they were examined for yield, quality and resistance to drought and disease. Recent genetic tests have confirmed that SL28 is related to the Bourbon genetic group. It has become valued for its sweet, complex flavour with vinous undertones.SL34 was originally selected in Kenya in the late 1930s at Scott Agricultural Laboratories. It is very susceptible to major diseases such as coffee rust, coffee berry blight and coffee berry disease. It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10.
