The high humidity and rainy climates across Colombia do add to the challenging of achieving a high-quality naturally-processed coffee; but, when it is done properly and the coffee is moved consistently throughout the curing process, we find the resulting cup profile to be exquisite. Pink Bourbon: Cultivated from hybridization of Red and Yellow Bourbon. It's very rare, but the producers say it is quite resistant to rust. Pink and Orange Bourbons are very difficult to produce with consistency. The recessive genes leading to the expression of these colors are easily thwarted by the presence of yellow and red genes in a given pollen grain. A carefully isolated and contained lot can do quite well and preserve the unique color and character of this variety, though this is quite hard to find.ROASTER'S NOTEElegant yet very expressive. A rarely encountered floral note reminiscent of lavender, paired with the sweetness and acidity of very ripe fruit.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that 98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. Finally, the beans are washed once more and dried again, preserving clarity in the cup and the coffee’s natural sweetness.Store in a cold and dry space.

Water tanks are often used for this purpose – lower-density fruits float to the surface and are discarded, while the highest-quality cherries sink to the bottom and proceed to the next stage of production.Next, the whole fruits—complete with skin and pulp—are spread in a thin layer on raised drying beds. This is where the most critical part of the natural process begins. For several weeks, the fruit slowly dries in the sun, allowing the sugars and aromatic compounds from the pulp to permeate the beans inside. This stage is responsible for the characteristic sweetness, fruitiness, and intense aroma.During drying, the cherries are regularly turned to ensure even moisture evaporation and to prevent uncontrolled fermentation. Farmers closely monitor the temperature and drying time, which typically lasts from two to even four weeks. Once the fruit reaches the correct moisture level, they resemble hard, dried coffee cherries.Only at the end of the process are the dried fruits sent to the mill, where the dried skin and pulp are mechanically removed. Traveling from farm to farm and visiting coffee warehouses, you could truly feel the financial and technological support behind the program.The state of Chiapas, where this coffee comes from, borders Veracruz and Oaxaca to the west, Tabasco to the north, and Guatemala to the east. It’s the same region, and the farms there are often just 20–30 kilometers apart. Yet traveling between them can take two to three hours due to road conditions. Despite such short distances, the flavor of the same botanical variety differs greatly from farm to farm. Microclimate and soil play a huge role.ABOUT THE COFFEEOur El Búho is a blend of Bourbon and Caturra varieties. It is a washed coffee.In the cup, you’ll find plenty of sweetness, reminiscent of milk chocolate and caramel. There is minimal yet noticeable fruitiness, bringing to mind mandarins or sweet oranges. As an espresso, it leans toward the sweeter side, lingering pleasantly on the palate. In milk-based drinks, it develops notes of toffee with a smooth texture.Mexico is an underrated coffee producer. It’s best to give it two weeks after roasting – it gains a lot with time!V60 RECIPECoffee dose – 19 gWater dose – 50 g → 300 gGrind size:8.4 EK43; 23 clicks ComandantePlace the filter in the V60 and rinse it with a strong stream of water so it adheres well to the walls.Grind the coffee, add it to the V60, and level the coffee bed.Pour 50 g of water, aiming at the dry spots to wet everything thoroughly. If the coffee is very fresh (foaming a lot when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), start pouring into the very center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the water stream just below the point where the stream breaks.When you reach 250 g, lower the kettle to about 3 cm above the water surface (you no longer need circular movements) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically).
