You can expect hints of pear, rhubarb, red currant, wild strawberry and apple.Country: ColombiaRegion: HuilaFarm: Finca El RosalProcessing: Extended washedVarietal: PapayoAltitude: 1650 m a.s.l.ABOUT THE COFFEEColombia El Rosal is an exceptionally subtle and elegant coffee from the Huila region, which delights with its delicate fruitiness and tea-like lightness. In the cup, you will find notes of pear, rhubarb, red currant, wild strawberry, and fresh apple. Thanks to the extended fermentation in the washed process, the coffee gains additional depth of aroma while maintaining a clean and transparent character. Ideal for those looking for delicate and highly drinkable filter coffees.Finca El Rosal is located at an altitude of approximately 1650 m a.s.l. in the Colombian region of Huila, one of the most important specialty coffee production areas in the world. The farm owner, Wilmer Cubillos, has for years consistently developed the quality of his crops, experimenting with varieties and processing methods. This batch was prepared from the rare Papayo variety, whose elongated fruits resemble small papayas and which is famous for its exceptional sensory complexity. In the cup, Colombia El Rosal offers an extremely clean, bright, and juicy profile. First comes the sweetness of ripe pear and red apple, followed closely by notes of wild strawberry and red currant, with the whole experience rounded off by a pleasant, rhubarb freshness. It is a light coffee on the palate, with a tea-like structure and delicate intensity.ABOUT THE PROCESSINGThe exceptional character of this batch is greatly influenced by the Extended Fermentation Fully Washed processing method. The process begins with the manual harvesting of only fully ripe fruits. Next, the coffee cherries go to a depulper, which separates the skin and most of the pulp from the beans. At this stage, the beans are still covered with a layer of mucilage. The next step is extended fermentation. In contrast to classic washed processing, where fermentation usually lasts from a dozen to several dozen hours, here the process is intentionally prolonged and carefully controlled. Microorganisms naturally occurring on the surface of the fruit break down the remaining pulp, while creating aromatic compounds responsible for a greater complexity of flavor. It is this stage that allows for the extraction of additional fruitiness and juiciness while maintaining the cleanliness characteristic of washed processing. After fermentation is complete, the beans are thoroughly rinsed with clean water to remove any remaining pulp. Then they go to drying tables, where they dry slowly until optimal moisture content is achieved. Only then is the parchment layer removed, and the green beans are prepared for export. The result is a coffee that combines the clarity of a classic washed with the additional aromatic depth obtained through extended fermentation. Delicate, elegant, and full of juicy fruit accents – perfect for filter brewing methods, which will allow it to fully develop its entire range of flavors.Store in a cool, dry place.

The Brazilian beans are dried on concrete patios in a dry climate, while the Ugandan beans undergo selection, flotation, and drying on raised beds with fermentation, giving them a fruity character. The combination of both creates a sweet, tropical-chocolate profile, known as LOW Jungle Fruit. The Brazilian beans were decaffeinated using supercritical CO₂, which removes caffeine while preserving aroma and structure. The brew is light, intensely tropical-fruity with a delicate chocolate background, full-bodied with smooth acidity, and a long, fruity finish that highlights its character. In 250 g of brew prepared according to the V60 protocol, 57.2 mg of caffeine was measured, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER’S NOTELOW Jungle Fruit presents itself as a brew with a pronounced tropical-fruity profile and a subtle chocolate background. Juicy notes of pineapple and passion fruit dominate, enriched by accents of apricot and ripe stone fruits. The pronounced sweetness adds depth to the flavor, while the rich body creates a dense, enveloping texture in the cup.The delicate, low acidity harmonizes with the chocolate base, and the long, fruity finish emphasizes the tropical character of the blend. This is how our low-caffeine version tastes – intensely, juicy, and full of character.Store in a cold and dry space.

However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and the cultivation of a wide range of selected, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, and Pacamara.Currently, ongoing research on bacteria and yeast is being conducted at El Vergel to achieve even greater precision in controlling fermentation and, consequently, modulating flavor. In addition to coffee production, the Bayters are the founders of Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee without the involvement of intermediaries.ABOUT COFFEE PROCESSING AT THE FARMSidra variety, hand-picked, fermented as whole cherries for 72 hours with limited air access, with the addition of must from the fermentation of another botanical variety, Java. This must is a liquid that is produced as a byproduct of coffee fermentation and contains a high concentration of microorganisms—bacteria and yeast. Their increased presence lowers the starting barrier of fermentation, making it more intensive and faster. The result? More intensive formation of metabolites, which have a direct impact on the final, more complex and deeper profile in the brew. The coffee is dried in two stages—first mechanically for 4 days in a temperature-controlled environment, then for 18 days on raised beds. It is homogenized for 30 days in plastic bags.ROASTER'S OPINIONOne of those coffees where you take the first sip and specific descriptors come to the tongue faster than you can consciously think of them. The station works with 2,341 smallholder farmers from 22 nearby hills. Each farmer owns on average around 250 trees. In Burundi, coffee is typically grown on micro-farms, often in small plots next to family homes. The coffee cherries arrive at the station on the day of harvest, where they undergo water flotation sorting, hand selection, and classic washed processing. Fermentation in clean water lasts 10–12 hours, after which the coffee is thoroughly washed and dried on raised beds for 2–3 weeks. Each lot remains fully traceable. The result in the cup is a clean, elegant profile typical of high-altitude Burundi coffees: red currant, vanilla, and black tea.A sweet, clear coffee with a tea-like structure and juicy acidity. He grew up in Pérez Zeledón under difficult conditions, sharing a small house with his siblings and often going to school hungry. Despite limited opportunities, he and his family built a project based on high-quality specialty coffee production and an increasingly precise approach to processing.Over the past decade, the processes on the farm have evolved from simple, basic methods to consciously controlled production of honey and natural process lots. Coffees from La Toboba are characterized by a very low number of defects and high consistency in quality. This specific lot of the Catigua variety was subjected to the natural process, which brings out notes of walnut, mandarin, and sugar cane in the cup. Whole-bean specialty coffee from Colombia and Honduras, roasted by Heresy roasting brand. Dark roast, perfect for espresso machines and moka pots. You can expect hints of caramel, jam chocolate, dried fruits and wine.Origin: Colombia, HondurasRegion: Cauca / Santa BarbaraFarm: El Tambo / Javier FernandezProcessing: Washed / Fermented HoneyAltitude: 2050 / 1600 m a.s.l.Cupping score: 86 / 100 ABOUT THE FARM AND THE COFFEE PRODUCEREl TamboThis exceptionally clean and complex lot is the result of the work of four small-scale producers from the Cauca region. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on several-hectare farms in the El Tambo micro-region, located west of Popayan, the capital of the Cauca department. The following synergy of factors makes the quality of their raw material so phenomenal:the microclimate in El Tambo and the cultivation altitude reaching above 2,000 meters result in slower cherry ripening, while lower humidity facilitates the drying process: the processed coffee loses water in a predictable and controlled manner,a thoughtful and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal air throughput and sunlight, the producers' modern knowledge of fertilization combined with a traditional practice known locally as “re-re,” which involves the selective harvesting of overripe, undeveloped, or dried fruits and leaving them on the ground by the trees: thanks to this, more pests feed on the “waste” instead of attacking healthy batches, and, of course, conscious, restrictive cherry picking at the optimal ripeness stage combined with years of experience in the fermentation and drying process.Only the local population works during the harvest, forming the core of the community of several small El Tambo villages, which has naturally evolved around the continuous, seasonal cycle of coffee cultivation for generations.Javier FernandezJavier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be world-famous as a Windows desktop wallpaper. The Fernandez family (there is also a second son, Nahun!) is not afraid to play with processing, and thanks to bold experiments, they deliver some of the best lots in all of Santa Barbara year after year. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMIn the current Illuminati lineup, we have a combination of washed and honey processing with extended fermentation. El Tambo is a classic washed. Javier Fernandez is a more fermented wild card.ROASTER'S OPINIONOnce again, we apply the equation here: very good + very good ≤ very good. In the base, there is deep caramel sweetness and plenty of jammy fruitiness, the dark-blue, forest kind. And as a joker, a winey-tropical honey. 21st-century synergy. An espresso shot of this is pure goodness. Illuminati offers greater complexity than a classic Brazil. At the same time, it is very sweet, slightly fruity, and goes down well solo or with milk. Balance and a pleasant, yet in no way overpowering acidity – that is our main plan for this blend!Store in a cold and dry space.

Kii is one of three wet mills managed by the Rung’eto FCS in Kirinyaga and is Fairtrade certified. The Chairman of this society has implemented various quality-focused processes throughout all the factories of the Rung’eto FCS. For example he installed tiles on all the washing channels and fermentation tanks. Moreover, the water for the processing is being reused. Farmers associated with the Rung’eto Cooperative cultivate their crops on Mount Kenya's slopes, known for producing intense, complex, and flavour-dense coffees.Harvest & Post-HarvestSorting: Cherries are hand sorted for unripes and overripes by the farmers before they go into production.Pulping: A 3-Disc Agaarde pulping machine removes the skin and pulp. The coffees are graded by density into three grades by the pulper. Grade 1 and 2 go separately to fermentation. Grade 3 is considered a low grade.Fermentation: The coffee is dry fermented for 18-36 hours in concrete tanks under a roof that provides shade for better temperature control during fermentation.Washing/Grading: After fermentation the coffees are washed and again graded by density in washing channels. They are sometimes soaked in clean water overnight.Drying: Sun-dried 12 to 20 days on African drying beds. Time depends on weather conditions. Coffees are covered under plastic during midday and at night. In this area the flowering period is usually between February and March, following this the trees will be ready for harvest from October to December.Soil: The soil, primarily Nitisol, is rich and developed from volcanic materials, commonly found in highland areas and steep volcanic slopes. Nitisol exhibits superior chemical and physical properties compared to other tropical soils.ROASTER'S OPINIONLots of sweetness, a balanced yet distinct acidity, and a jammy character.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1.
