FARM AND REGION


Kayon Mountain is a family-owned coffee farm located in Shakiso, in Ethiopia’s Guji region, around 500 kilometres south of Addis Ababa. The farm has been owned and operated by Ismael Hassen Aredo and his family since 2012 and stretches between the villages of Taro and Sewana.


The farm covers around 500 hectares, with approximately 300 hectares planted with coffee at elevations reaching 2,200 metres above sea level. The remaining land is largely preserved forest. Coffee grows under the shade of acacia and other indigenous trees, while an on-site nursery is used to cultivate both coffee seedlings and native shade trees.


Unlike many Ethiopian coffees, which are produced by combining cherries from numerous smallholders at a central washing station, Kayon Mountain manages both growing and processing on the farm. Ismael works with around 25 permanent employees and more than 300 seasonal workers during harvest. The farm also provides transportation for its workers and supports local communities through funding for schools and administrative buildings.



PROCESSING


For this natural lot, ripe cherries of local Ethiopian varieties are carefully selected before being dried in the sun on raised African beds. Throughout drying, the cherries are regularly turned to ensure even processing and a clean expression of the fruit.


High altitude, native varieties and careful natural processing come together in a style that feels unmistakably Ethiopian: intensely aromatic, sweet and fruit-driven, while retaining the floral character and lively acidity Guji is known for.



ROASTER'S NOTE


Coffee from a family-owned farm in Guji, grown at altitudes up to 2,200 metres above sea level. Both harvesting and processing take place directly on the farm, giving the team full control over the coffee from tree to drying. Intensely aromatic, sweet, and fruity – everything we look for in a good Ethiopian natural.



RECIPE V60

  • 16g of coffee
  • 250g of water 96°C
  • Medium Grind Size 

1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)


2. Remove the rinsing water from the server.


3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.


4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.


5. Tare your scale and start the timer.


6. Add 50 grams of water. Your coffee will begin to bloom.


7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.


8. At 00:50 pour hot water to 200g. 


9. At 01:10 pour hot water to 250g.


10. Swirl your V60 and let the coffee drip. 


11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.
