The flavor also features the characteristic sweetness of elderflower syrup, giving the whole profile an almost tea-like and floral finish.ABOUT THE PROCESSINGThis incredibly juicy profile is primarily the result of the anaerobic natural process — a method that requires immense control and experience. Only ripe, red coffee cherries are used after harvesting. Next, the whole cherries are placed in tightly sealed bags, where they ferment for 100 to 120 hours in an oxygen-free environment. The absence of oxygen completely changes the course of fermentation — different groups of microorganisms develop, creating compounds responsible for more winey, intensely fruity, and floral flavor notes.After the fermentation is complete, the cherries are spread out on raised drying beds. There, the coffee dries for about 15–20 days. During drying, the cherries are regularly turned to ensure the process runs evenly and without the risk of over-fermentation or the appearance of unwanted notes. It is this long and controlled drying that stabilizes the flavor profile and preserves the immense intensity of the aromas while maintaining a clean cup.The result? A coffee that tastes a bit like fruity red wine, a bit like premium currant juice, and a bit like a dessert with floral syrup. Fresh, syrupy, and highly aromatic. The dry, sunny conditions of Cerrado favor a clean, chocolate-forward profile with pronounced sweetness, while the slower drying on raised beds in the more humid microclimate of Rancho Grande creates greater complexity with notes of nuts and dried fruits.After import to Europe, some of the beans were decaffeinated using the supercritical CO₂ method, which effectively reduces caffeine with minimal impact on aroma and structure, allowing LOW Brownie to retain its full, balanced character. In the cup, chocolate and nuts dominate, with a delicate hint of dried fruits, high sweetness, medium body, low acidity, and a long, chocolate finish.We also verified the caffeine level in the final brew prepared according to the standardized V60 recipe. In 250 g of brewed coffee, we measured 54.4 mg of caffeine. Compared to the same coffee in its fully caffeinated version, this represents a real reduction of about 70% in caffeine content in the brewed coffee.ROASTER'S OPINIONThis coffee has a consistent chocolate-nut character, enriched with a subtle hint of dried fruits that gently highlight the flavor, reminiscent of classic brownies. It is distinguished by pronounced sweetness, medium fullness, very low acidity, and aromas of cocoa and chocolate. The whole is completed by a long, chocolate finish and excellent balance. Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. Finally, the beans are washed once more and dried again, preserving clarity in the cup and the coffee’s natural sweetness.ROYAL BEANSWhat’s behind the name Royal Beans?
