Coffee here is most often processed using the natural or honey method, and experiments with aerobic fermentation are also common.Fun fact: Our coffee lot was delivered to the station on the very day of harvest. Its parameters were then evaluated, and the cherries were placed in large hermetic tanks for 5 days of anaerobic fermentation. At the appropriate moment, the coffee is exposed to a temperature of 20°C to halt fermentation and remove yeast. The cherries then “mature” in the tanks for another 5 days before being transferred to solar dryers. Drying takes 30 to 45 days.Store in a cold and dry space.

Sofie from Sucafina recommended that we contact Alfonso from Café Monteverde and his Timuyacu farm, as his philosophy and values in the pursuit of quality, caring for his people, and protecting the environment aligned with NOMAD values.Alfonso sent us samples of several of his lots, including this Washed Bourbon from Colasay Washed was a perfect fit for what we were looking for. A sweet, easy-drinking coffee, slightly fruity but not overly so, ideal for one of our house coffees.ABOUT THE FARMTimbuyacu comes from the Quechua words Timbu (boiling) and Yacu (water), referring to a natural water spring located within the farm, where the water bubbled up as if it were boiling. This farm has a long family history, from Alfonso's grandmother, Eleodora Mori de Ibérico, to the present day, where Alfonso is in charge of the care, sale, and export of the coffee. The farm is divided into several plots: Vista Hermosa, El Mirador, Pirruro, Nuevo México, Alto Timbuyacu, Jergón, El Shapingo, El Pante, La Cabaña, Quishtucto, Pileta, and Las Peñas. This particular lot comes from the El Pante plot, named for the predominant presence of native Pante trees distributed throughout it.The farm works with a regenerative approach, recovering degraded soils through the use of organic matter, agroforestry systems, and comprehensive management from germination to post-harvest. This is something we greatly value at NOMAD.In short, we are grateful to have met and started this relationship with Timbuyacu and hope to have their coffees from now on. This commercial relationship has been directly facilitated by Sucafina's help in importing and financing the lot.ABOUT THE PROCESSThe coffee is selectively hand-picked and pulped in a drum pulper. After pulping, it is fermented for 18 to 24 hours and washed with clean water. The resulting parchment is placed on drying beds or patios where it is regularly turned to ensure even drying.The drying process takes approximately 15 to 20 days. Once dry and at the required moisture level, the parchment is stored on the farm for approximately 60 days before being transported to the dry mill for threshing and export.Store in a cold and dry space.

It is also one of the epicenters of infused fermentations in Colombia. The Sanchez Valencia family has developed a complex process, allowing them to achieve stable and repeatable results.ABOUT PROCESSINGThe first stage involves creating a "fermentation starter" – naturally occurring yeasts are extracted from the cherries of the Purple Caturra variety. Next, they are added to concentrated blueberry juice to conduct a pre-fermentation. Then, the starter obtained this way is added to the already harvested coffee cherries sealed in 200-liter fermentation tanks. After this stage, the coffee is processed as a classic washed.We have been roasting infused fermentation coffees for some time now. Of course, they vary, but they share a fairly distinct common trait in their profile. Blueberry was an absolute surprise. We took a slurp and said to ourselves – wow, fudge, toffee, milk chocolate. We've never had anything like this before. Blueberries are there, of course – in the dry aroma, in the flavor. But that is not the main characteristic of this coffee. It reminds us most of éclair candies – hard, but milky and caramelly – with a small blueberry on top. - RoasteryROASTER'S OPINIONOh my! We have been roasting coffees from infused fermentations for some time now, but there has never been anything like this. Caramel, the sweetness of fudge, or maybe toffee in milk chocolate. Such extreme conditions — high sun exposure combined with cool temperatures — promote slow fruit ripening and the development of high-quality Arabica.The farm is located in the Callayuc region, within the Cutervo province (Cajamarca), one of the historical coffee-growing areas in northern Peru. This terrain stretches from approximately 690 to over 2800 m a.s.l., creating incredibly diverse microclimates — from fertile valleys to humid, tropical zones with high biodiversity.Ismeria Leon, like other local producers, manages her crops in strict harmony with nature, utilizing naturally fertile soils and favorable climatic conditions. The area also features characteristic landscape elements, such as the Viluco waterfall and the Cerro Pabellon mountains and the Cordillera del Wissus range, which contribute to the region's unique ecosystem.It is this combination of altitude, climate, and biodiversity that gives Callayuc coffee its distinct, complex, and characteristic profile.ROASTER'S OPINIONThe location of the La Lucuma farm is truly exceptional — over 2200 m a.s.l. is an altitude rarely encountered in Peruvian coffee cultivation. These extreme conditions favor slow fruit maturation and the building of a complex flavor profile.The Caturra variety is also not among the most common there — it accounts for about 20% of total coffee production in Peru, which makes lots of this type even more interesting and unique. Peru as an origin is often underestimated and overlooked by consumers, which is why we regularly try to include at least one coffee from this country in our offer. This time, it is the beans from Ismeria Leon.In the aroma, the coffee is fresh and fruity — green apple clearly dominates, complemented by delicate cranberry and caramel sweetness. On the palate, the profile remains very consistent: juicy apple appears in the foreground, enveloped in caramel, with hints of cranberry and grape.The whole has a medium, round body and low, smooth acidity reminiscent of an unripe apple. The sweetness is high and caramelly, and the aftertaste is medium-long, pleasantly sweet, and balanced. This is a coffee with very good balance and a clean profile — definitely an example of how good Peru can be.RECIPEWe recommend brewing this coffee using a dripper — from Hario or Origami. Due to the very high density of the beans, we recommend a finer grind than usual, a longer brewing time, and a temperature around 96 degrees Celsius.Store in a dry and cool place.

Much like with co-fermented coffees, we approached it with a fair amount of scepticism. But after the first tests, we knew this was exactly the direction we believed in. The profile is exceptionally delicate and clean. Floral, herbal, lightly spiced, with a distinct citrus freshness.It became one of the stars of the Warsaw Coffee Festival. The label raised eyebrows, sometimes even doubt. Thyme in coffee? Seriously? And yet everyone who tasted it left the festival with a bag. For some, it was green curry, for others pure umami, for others a herbal garden in the cup. That’s the power of thermal shock.But this character doesn’t happen by accident. Thermal shock allows fermentation to be stopped at a critical moment, before it begins to dominate the flavour. Aromas are not blown out or over-fermented, but stable and clearly defined. The cup feels lighter, cleaner and more tea-like, with distinct layers instead of one heavy fermentation note. That’s why this process works so well with floral and herbal coffees such as Maragesha. A natural hybrid of Gesha and Maragogype, it combines florality and lightness to create a profile that is complex yet remarkably elegant.Finca Quebraditas is a young but highly intentional project. Edinson Argote and Ángela Rojas focus on full process control and developing their own flavour language. Oporapa in Huila still sits outside the specialty mainstream, and their goal is to highlight the potential of the entire region.Processing takes place entirely on site, and Edinson makes sure nothing is left to chance. Harvesting begins only when at least 80% of the cherries are fully ripe. After flotation, the coffee undergoes controlled oxidation, followed by dry depulping and a long 72-hour fermentation with added yeast. Fermentation is then deliberately halted through a rapid temperature shift, the thermal shock itself, preserving clarity and precision in the profile. Finally, the coffee is dried and stabilised under controlled conditions.Store in a cold and dry space.
