ABOUT THE COFFEE

This is 100% Tabi from the Finca El Rosal farm in the Colombian Huila region, grown at an altitude of 1,650 meters above sea level. Wilmer Cubillos runs a 10.5-hectare plantation here, focusing on fruit quality and processing precision. Warm days and cool nights favor the slow ripening of cherries, developing their natural sweetness and high density.

The coffee is processed using the fully washed method. The cherries ferment for 18 hours in bags, after which the fruit is depulped, and the beans undergo another six-hour fermentation in a tank. Next, they are rinsed and dried in parchment, with regular raking. In the cup, notes of orange, white flowers, and stone fruits appear, complemented by citrus freshness, honey sweetness, and biscuit accents. Medium body, balanced acidity, and a long, fruity finish create a harmonious whole.

Wilmer is the first generation of his family involved in coffee farming. On the farm near El Rosario, in the municipality of Acevedo, he works together with his wife and youngest son, developing the farm with quality and long-term sustainability in mind. He particularly values the Tabi variety, developed by the Colombian institute Cenicafé as a cross between Typica, Bourbon, and Timor. Thanks to careful cultivation and refined processing, he strives to bring out its full potential in the cup.

ROASTER'S OPINION

Finca El Rosal in the Colombian region of Huila is the farm of Wilmer Cubillos, who has been developing his plantation and refining the quality of the coffee he produces since 2006. The crops located at an altitude of 1,650 meters above sea level benefit from conditions that favor the slow ripening of fruits. Particularly interesting is the Tabi variety, developed in Colombia by crossing Typica, Bourbon, and Timor. It combines high sensory quality potential with resistance to coffee leaf rust. This lot uses the fully washed process, which allows the natural characteristics of the bean to be highlighted without the dominant influence of intense fermentation.

The sensory profile opens with aromas of orange, white flowers, and stone fruits. On the palate, citrus freshness joins honey sweetness and delicate biscuit notes. The orange gives the overall experience a juicy quality, while floral accents bring a subtle elegance. Medium body and balanced acidity harmonize well with the sweetness, creating a structured composition where no single element dominates. A long, fruity finish gradually reveals further nuances, leaving the impression of a well-balanced coffee in which citrus, floral notes, and sweetness complement one another.
