Hard Beans - Kenya Kii AA Natural Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 26.08.2026

Whole-bean specialty coffee from Kenya, roasted by Hard Beans from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of black currants, black cherry, plum and raspberry.Origin: KenyaRegion: KirinyagaVariety: SL28, SL34, BatianFarm: Kii Coffee FactoryProcessing: NaturalAltitude: 1600 – 1800 m n.p.m.ABOUT THE FARMKii Coffee Factory operates in the Kirinyaga region, at the foot of Mount Kenya. It is one of three stations belonging to the Rungeto Farmers’ Cooperative Society, alongside Karimikui and Kiangoi.Approximately 850 smallholders deliver cherries to Kii. The average farm size is around 0.5 ha, meaning production relies on a large number of small family farms. Coffee grows here alongside avocado, macadamia, and banana trees, and farmers also cultivate crops for their own consumption on the same plots, including beans and potatoes.Rungeto has been working with producers for years on agronomy and the quality of delivered cherries. Kii is also among the stations with high farmer loyalty, which has a very practical significance: good cherries are regularly delivered to the same station, rather than being sold wherever a better price happens to appear.ABOUT THE VARIETALThis lot contains SL28, SL34, and Batian. This is a set very characteristic of modern coffee production in Kenya.SL28 and SL34 are strongly tied to the history of the Kenyan coffee sector. Both selections were introduced in the 20th century and remain an important part of cultivation in central Kenya to this day. They yield good results at high altitudes, but are also susceptible to certain coffee diseases.Batian is a much younger varietal. It was introduced in Kenya in 2010 as a response to issues with Coffee Berry Disease and coffee leaf rust. Its goal was to combine strong quality potential with higher resistance and better productivity. The name of this coffee also includes "AA". This is neither a varietal nor a taste grade. AA is the Kenyan designation for bean size—it applies to the largest fraction separated during sorting.ABOUT THE PROCESSINGThis is where this lot deviates most from what Kii is usually associated with. The station's standard production is based on washed processing. Cherries are sorted, depulped, fermented, washed, and then the parchment is dried on raised beds. This lot was prepared as Natural. In this method, the bean dries inside the whole fruit. The skin and pulp remain on the seed for a significant portion of the drying process and are removed only later. This is a completely different way of processing than the classic Kii washed. That is precisely what makes this coffee interesting. Not because Natural in itself is rare—in Brazil or Ethiopia, it is a standard part of production. In Kenya, the situation is different. There, washed processing has been the standard for high-quality coffees for decades, and naturals still account for a small fraction of the market.RECIPERatio: 60 g coffee per 1 liter of waterWater temperature: 93°CGrind size: mediumBrew time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60 g) at 30-second intervals. The water should completely draw down through the coffee between pours. If the water flows too slowly or too quickly, adjust your grind size coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.

Hard Beans - Kenya Mugaya AA Top Washed Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 25.08.2026

Specialty-grade whole-bean coffee from Kenya, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of citrus, red currants, black tea and honey.Origin: KenyaRegion: KirinyagaFarm: MugayaProcessing method: WashedVariety: SL28, SL34Altitude: 1700 – 1800 m a.s.l.ABOUT THE FARM AND REGIONMugaya is a washing station established in 1975, operating under the Mutira Farmers’ Cooperative Society. It is located in the Kirinyaga region, Kagumo area, at the foothills of Mount Kenya. Coffee cherries are delivered to it by over 1,700 small-scale producers who grow coffee mainly on small plots of land. The crops are situated at an altitude of approximately 1,700–1,800 meters above sea level. The region is characterized by red volcanic soils, good access to water, and conditions that favor slower ripening of the fruit. Longer ripening can support the development of sweetness, acidity, and a more complex sensory profile. This is a classic Kenyan production model: small farms, a central washing station, fruit selection, and a consistently managed process. Simple. Effective. Good.ABOUT THE VARIETYThe dominant varieties are SL28 and SL34. These are classic Kenyan Arabica varieties, valued for their high sensory potential, especially in terms of vibrant acidity, fruitiness, and the structure of the brew.Batian and Ruiru 11 may also appear in smaller quantities, which are varieties introduced, among other reasons, for the plants' greater resistance to diseases. However, the character of this coffee is primarily built by SL28 and SL34.ABOUT THE PROCESSINGAfter harvest, the coffee cherries are delivered to the station and sorted. Then, the skin and part of the pulp are removed from the fruit, and the beans undergo fermentation, washing, and drying on raised beds. In the case of Mugaya, clean water from the Rwamuthambi River is used in the process. The washed process allows for limiting the influence of the pulp on the coffee's flavor and better showcases the natural acidity, cleanliness of the aroma, and structure of the brew.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind: mediumBrewing time: 3:30 minutesMethod: Pour water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, change the grind size to coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.

The flavor profile features notes of raspberry, sweet cherry and vanilla.Country of origin: BurundiRegion: Ngozi Variety: BourbonProcessing method: NaturalCupping score: 86 / 100Altitude: 1660 m a.s.l.As if on cueThis is a coffee made at the special request of our head roaster. When Rafał joined the team and sat down with us for his first cupping, he blurted out right away: "Hey, I think you've never had a coffee from Burundi, and I like them so much!" We had, but a long time ago! So we decided to make Rafał's life a little nicer, ordered samples, and chose this (and one more!) great lot.Located in Ngozi Province, the Mubuga processing station collaborates with over 1,900 local farmers who deliver their carefully selected harvests here every year. This place stands out for its impressive technical infrastructure created for the precise processing of only the finest, fully ripe cherries. The station's facilities include as many as 12 fermentation tanks, 3 soaking tanks, over 300 drying beds, and 4 specialized tables for quality sorting.Harvesting in this region usually lasts from April to June, but this coffee's journey to your cup only begins then. Burundi is a completely landlocked country – before these exceptional beans head out into the world and reach our roastery, they must travel an extremely long, demanding, and complex route.Store in a cool and dry place.

The flavor profile features notes of elderflower sirup, herbs and mango.Country of origin: ColombiaRegion: NariñoVariety: CaturraProcessing method: Experimental Anaerobic WashedAltitude: 1800 m a.s.l.Cupping score: 87 / 100Debatable? Give it a try.The farmer responsible for this coffee, Huver Castillo, works as a schoolteacher day-to-day. He represents the new school rather than the old school, which you will understand once you taste this coffee. A math teacher and a third-generation grower, today he creates coffees together with his father on the family farm El Paseo in Nariño, high above the Buesaco Valley. This Caturra is definitely far from ordinary. 36 hours of pre-fermentation in the cherry, followed by six days of anaerobic fermentation with sea salt and enzymes designed to bring out its floral character. After depulping, the coffee is gently dried indoors, where the temperature is constantly kept below 38°C, and then rests for 15 days. An unusual brew, hard to mess up due to its intensity, and perfect for debates about the future of coffee. A coffee you can love and argue about passionately.Store in a cool, dry place.

HAYB - Costa Rica Corazón de Jesús Natural Reposado Filter 250 g

Manufacturer: HAYB

Roasting date: 05.05.2026

Specialty-grade whole bean coffee from Costa Rica, roasted by the Warsaw-based roastery HAYB. Light roast, ideal for filter coffee makers, drippers, Chemex, AeroPress, French Press, and other alternative brewing methods. The flavor profile features notes of forest fruits, blackberry and clementine.Country of origin: Costa RicaRegion: BruncaVariety:  Villa SarchiProcessing method: Natural ReposadoCupping score: 87 / 100Growing altitude: 1800-2000 m a.s.l.Rested in the coldCosta Rica in a version we love – a real gem from Corazón de Jesús, specifically from the Los Tonos plot. Behind this project is Johnny Alvarado Abarca, who cultivates coffee in the Brunca region. In this bag, you will find the Villa Sarchi variety, a local mutation of Bourbon known for its elegant acidity and powerful sweetness. The experience is enhanced by the Natural Reposado process – the cherries "rest" in the cold for some time before drying, allowing the sugars from the pulp to maximally penetrate the bean. Thanks to this, the Los Tonos plot offers an incredibly syrupy body and notes of ripe red fruits, while maintaining exemplary brew clarity. It is the perfect balance between a modern approach to fermentation and classic, fruity drinkability that will work great in your drippers.Store in a cold and dry space.

HAYB - Costa Rica Hellen Mora Natural Espresso 250 g

Manufacturer: HAYB

Roasting date: 03.07.2026

Whole-bean specialty coffee from Costa Rica roasted at HAYB. Medium roast, perfect for espresso machines and moka pots.  In the cup, you can expect blueberries, red wine and milk chocolate.Origin: Costa RicaRegion: TarrazuVariety: GeishaProcessing: NaturalAltitude: 1800-1900 m a.s.l.Cupping score: 88 / 100Trip to Costa RicaThis is what direct trade means to me. We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping where she presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking right next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been appearing in my dreams ever since I came back from Costa Rica. Lots of tropical fruit, but without the kind of fermentation often associated with coffees from this country. Notes of banana and pineapple, plenty of red, sweet wine, currants, and everything beautifully structured and right where it should be.I’m very happy that we’re also presenting such an exceptional coffee as an espresso. It’s the essence of that trip in a cup: sweetness, tropical fruit, bright acidity supported by deep sweetness. One of the warmest memories from that journey returns every time we roast and brew this coffee. I invite you to join me on this trip.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Anaerobic, Gesha, Nanolot, Lychee – what does it mean to go beyond the ordinary? – Royal Beans is a selection of coffees chosen by us from various roasters – they share exceptional flavor, limited production, unique processing methods, and the highest quality. A treat for coffee connoisseurs (and those aspiring to be)!Store in a cold and dry space.

HAYB - Costa Rica Hellen Mora Natural Espresso 250 g

Manufacturer: HAYB

Roasting date: 03.07.2026

Whole-bean specialty coffee from Costa Rica roasted at HAYB. Dark roast, perfect for espresso machines and moka pots.  In the cup, you can expect hints of milk chocolate, dried fig and raspberry.Country of origin: Costa RicaRegion: TarrazuVariety: CaturraProcessing method: NaturalCupping score: 87 / 100Altitude: 1800-1900 m a.s.l.Natural revolutionYou have already had the opportunity to try a Geisha roasted for espresso from this female farmer – now it is time for Caturra. A sweet shot with notes of milk chocolate, but also plenty of flavor reminiscent of figs and raspberries. Although Caturra was born in Brazil, it made a real career in Colombia, and later precisely in Costa Rica. According to World Coffee Research and Perfect Daily Grind, it is an absolute classic and a benchmark against which other modern botanical varieties are evaluated. What is worth knowing about it?Compact growth: Caturra possesses a dwarfism gene. The shrubs are short and stocky, which allows farmers to plant them more densely and makes harvesting the cherries much easier.A demanding patient: The price for high yield is poor health. Caturra is extremely susceptible to coffee leaf rust (roya) and pests, meaning it requires a great deal of attention, knowledge, and care from the farmer.Cup profile: Grown at the right altitude, it rewards you with brilliant quality. Expect a multi-dimensional, vibrant, and clean citric acidity, a medium body, and a distinct sweetness with notes of chocolate, caramel, and juicy fruits. No genetic modifications in a laboratory – a pure, natural revolution that changed the map of the specialty coffee world. Enjoy!Store in a cold and dry space.

Archetypes of coffees from Ethiopia. A point of reference. Ben - our importer - alongside the name Bench Maji for the farm where this coffee comes from, also uses the name Geisha Farm. This is because local farmers grow mostly this botanical variety. Check out the effect of their effort by brewing this lot. The coffee has an intensely tropical taste thanks to the processing method – anaerobic fermentation with limited oxygen access, which lasted 96 hours. This, combined with a very clean and juicy botanical variety that is geisha, gives a taste so full and fruity that it is hard to stop drinking this coffee. We should include a leaflet here like in a medicine box – you do this at your own risk, do not exceed the recommended daily dose!Store in a cool and dry place.

And it keeps pouring to this day. According to many, this is what a benchmark filter coffee tastes like – an easygoing coffee based on Brazil with small additions of fruitier Africa. It is an invitation that basically says "welcome to the world of specialty" – and so you politely step inside, and then you stay for longer! The SIE PRZELEWA series is all about simple situations. The coffee doesn't require you to meticulously count grinder clicks; it will be good, and you can pour it into a batch brewer without any guilt – simply Effortless Specialty.About the roastery:HAYB is a Warsaw-based specialty coffee roastery that does its job properly and with a smile - they like coffee, they know a thing or two about it, they make it - can you imagine a better setup? The point is for it to taste good without any magic, which is why their motto is Effortless Specialty. Among HAYB coffees, you will find only specialty-quality beans, both for filter brewing methods and for espresso, singles, and blends.Store in a dry and cool place.

Heresy - Antidotum Espresso 252g

Manufacturer: HERESY

Roasting date: 21.04.2026

Some 75% of all coffee produced in the world comes from Brazil, the vast majority being commercial grand blends from around the region. In the world of speciality coffee, we have to deal with those as well. That's why we created the Antidote, a coffee that is an antidote to the flood of santos, cerrados, and other coffees, that are far from transparent and demonstrating the producer's role in the whole process. This is for fans of the classics who do not let go of quality. For those who value true fair trade. The first classic brazil in our range!Specialty quality bean coffee, roasted at Heresy roastery by the 2020 Roasting Runner-up. Dark roast, designed for espresso, café or cup brewing.  A profile with a classic Brazilian flavour, with nut and chocolate notes, in the highest quality.Country: BrazilProducer: 20 members of San Coffee CooperativeFarm: San CoffeeVarietal: mundo novo, topazio, catuaiProcessing: naturalAltitude: 900 - 1200 m a.s.l.PROCESSING20 manufacturers, the same natural processing technique calibrated between them. Most co-operatives in the country are made up of hundreds or thousands of producers, whose role is often limited to just supplying the coffee, nothing else. San Coffee is made up of only 20 producers who also own the company, with equally distributed shares of 5% each. We have been working with them since the very beginning of Heresy, presenting fruity microlots like Taquaral, Campo Alegre and Samambaia. This time it's time for the classic product of their work!ROASTER'S COMMENTIn the cup as classically as possible. Acidity practically invisible, shadow work. Chocolate and nuts in the liquid form. You know what I mean!PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.Store in a cold and dry space.

Heresy - Colombia El Vergel Magnum Sidra Filter 126 g

Manufacturer: HERESY

Roasting date: 30.06.2026

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of passion fruit, mango, yogurt, hard candies, flowers and champagne.Origin: ColombiaRegion: TolimaFarm: Elias & Shady BayterVariety: SidraProcessing: Anaerobic Natural + MosstoAltitude: 1500 m a.s.l.Cupping score: 90 / 100 ABOUT THE FARM AND COFFEE PRODUCEREl Vergel is a relatively young farm, as its first harvest took place only 10 years ago. However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and the cultivation of a wide range of selected, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, and Pacamara.Currently, ongoing research on bacteria and yeast is being conducted at El Vergel to achieve even greater precision in controlling fermentation and, consequently, modulating flavor. In addition to coffee production, the Bayters are the founders of Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee without the involvement of intermediaries.ABOUT COFFEE PROCESSING AT THE FARMSidra variety, hand-picked, fermented as whole cherries for 72 hours with limited air access, with the addition of must from the fermentation of another botanical variety, Java. This must is a liquid that is produced as a byproduct of coffee fermentation and contains a high concentration of microorganisms—bacteria and yeast. Their increased presence lowers the starting barrier of fermentation, making it more intensive and faster. The result? More intensive formation of metabolites, which have a direct impact on the final, more complex and deeper profile in the brew. The coffee is dried in two stages—first mechanically for 4 days in a temperature-controlled environment, then for 18 days on raised beds. It is homogenized for 30 days in plastic bags.ROASTER'S OPINIONOne of those coffees where you take the first sip and specific descriptors come to the tongue faster than you can consciously think of them. In our case: mango-passion fruit yogurt, without a doubt!ROYAL BEANSWhat’s behind the name Royal Beans?

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of tropical fruits, stone fruits, blueberry, citrus, flowers and candy sweetness.Origin: ColombiaRegion: CaucaFarm: La CurvaProcessing: Experimental natural (bioreactor)Altitude: 1800 m a.s.l.Cupping score: 88 / 100ABOUT THE FARM AND PRODUCERAlba has been in touch with coffee since early childhood and today continues the family tradition alongside her siblings, running the La Curva farm near the capital of the Cauca region - Popayan. Production here relies on careful, year-round maintenance that keeps the trees in good condition and thereby ensures consistent quality. Several times a year, the plantation is weeded and pruned, and after harvest, damaged coffee fruits are removed to reduce the risk of pests. Additional crops, such as plantains, corn, cassava, avocado, and citrus, provide natural shade, improve soil condition, and serve as an additional source of income for the Sanchez family.ABOUT THE PROCESSINGCastillo variety, hand-picked, undergoes initial selection on the farm, then is transported to Area 18 - a modern lab under the Banexport banner. On site, it undergoes another selection process and analysis to determine the most optimal processing method. Fermented for 4 days under controlled conditions in a bioreactor. This process allows for precise control of microorganism activity, helping the coffee maintain a clean yet distinct sensory profile.Dried for 5 days in an automated chamber with temperature and airflow control.ROASTER'S OPINIONThe definition of perfect balance between the raw material itself and the processing. Heresy - Colombia Las Villas Mossto Wine Barrel Natural Filter 252 g

Manufacturer: HERESY

Roasting date: 15.09.2026

Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of red wine, tropical fruits, fermented notes,  blueberries and chocolate.Origin: ColombiaRegion: CaucaFarm: Las VillasProcessing: Mossto + wine barrel naturalAltitude: 1800 m a.s.l.Cupping score: 88 / 100ABOUT THE FARM AND THE PRODUCEROne of several boutique farms owned by Banexport—an institution from the Cauca region focused on continuous innovation, with which we are collaborating for the second season. Las Villas was established in 2012 and, like its sister plantations, is managed in an incredibly professional manner. The farm combines coffee cultivation with care for biodiversity, creating a system where a healthy ecosystem helps maintain high and repeatable coffee bean quality. Coffee trees are regularly weeded and pruned, and damaged cherries are removed after harvest to help limit pest development. Native tree species, as well as citrus trees and avocados, grow among the coffee bushes. They provide shade, protect the soil, attract beneficial organisms, and support the natural resilience of the entire farm.ABOUT THE PROCESSINGThe Castillo variety, hand-picked at peak ripeness, is transported on the same day to the Popayán city center to the state-of-the-art Area 18 laboratory.Fermented for 72 hours in a stainless steel bioreactor while controlling parameters such as temperature, pressure, and pH.Afterward, the fruit pulp undergoes sterile filtration before being placed along with the beans into American white oak barrels for 60 days.Drying takes place in mechanical chambers with controlled temperature and airflow. After five days, the beans reach optimal moisture levels, ensuring stability during storage and export.ROASTER'S OPINIONDefinitely not a coffee for everyone. If you like wine, intense flavors, and lots of action in life, you will love what's in the cup.ROYAL BEANSWhat’s behind the name Royal Beans? Heresy - Costa Rica Las Lajas Alma Negra Natural Filter 252 g

Manufacturer: HERESY

Roasting date: 14.07.2026

Whole-bean specialty coffee from Costa Rica, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of tropical fruits, blueberries, flowers, wine and caramel.Origin: Costa RicaRegion: AlajuelaFarm: Las LajasProcessing: Alma Negra NaturalAltitude: 1500 m a.s.l.Cupping score: 88 / 100ABOUT THE FARM AND THE COFFEE PRODUCERFrancisca and Oscar are the siblings behind the Las Lajas brand. They are pioneers when it comes to juicy and fruity Costa Rican naturals. In previous years, we visited their plantation several times and together tasted lots that had only just left the drying tables. Cupping with the producers on the farm is always a unique experience. The name Las Lajas comes from the Spanish version of the Arabic word used to describe stone artifacts made by the indigenous population, which were found on the farm's territory when it was founded, around 1840! Located at the foot of the Poás Volcano, in the town of Sabanilla, in the Alajuela region of Costa Rica, the farm has been passed down from generation to generation. In 2000, Las Lajas became one of the first farms in Costa Rica to obtain official organic certification. However, the history of their organic practices dates back to 1980 – that was when Oscar’s father passed away from illnesses related to the use of pesticides. Although there were no premiums for organic coffee at that time, Oscar and Francisca knew they had to transition to organic and sustainable farming, caring for the health and future of both their family and the local ecosystem.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMAlma Negra is a proprietary interpretation of natural processing developed by the Chacóns. During the first week, the hand-picked cherries lie on African raised beds and are constantly mixed for even drying. Then, they are moved to the greenhouse patio and dried in thin layers during the day, while at night they are formed back into thicker piles. These cycles are repeated until the ideal level of dryness is reached. After that, the coffee rests for at least 60 days before export to achieve perfect homogenization.ROASTER'S OPINIONEvery year, we wait for coffees from Las Lajas with flushed cheeks! This lot is, above all, about absurdly high intensities across all layers, from tropical fruits to slightly wild fermentation notes.Store in a dry and cool place.

Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on small, multi-hectare farms in the El Tambo microregion, located west of Popayán, the capital of the Cauca department.PROCESSINGA single-variety Castillo, hand-harvested and depulped immediately after the cherries are picked. The beans are fermented for approximately 36 hours in a tank, then washed three times to completely remove any remaining mucilage from the parchment. They are slow-dried for around 15 days on raised beds, then homogenized and stabilized for several more days.ROASTER'S OPINIONYou can’t drink the same blend twice. Heraclitus already knew that, and we trust the guy. What he couldn’t quite grasp was that life is like helium-6 isotope – an outrageously unstable joke of the universe. We know this, and that’s how Elixir was born. Wildly unstable, always sweet. Different every time, always fruity. We throw our best coffees into it, because honestly, who’s going to stop us? Heresy - Ethiopia Tagel Alamayehu Washed Filter 252 g

Manufacturer: HERESY

Roasting date: 30.06.2026

Whole-bean specialty coffee from Ethiopia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of flowers, citrus, stone fruits, herbs and tea.Origin: EthiopiaRegion: GujiFarm: Hambela GoroProcessing: WashedAltitude: 2300 m a.s.l.Cupping score: 87 / 100ABOUT THE FARM AND THE COFFEE PRODUCERWe met Tagel in January 2025 during a trip to Ethiopia. His father was a legend of Guji during his lifetime, building the region's first wet mill in the early 2000s, whose infrastructure began to be used by small producers of the Bule Hora community. When the Ethiopian government liberalized export regulations in 2018, which practically opened up opportunities for smallholders to sell their coffee outside the country, Tagel founded the Olkai company and, in addition to exporting, also took over the coordination of the Hambela Goro mill. The coffee comes from 460 small producers in the area, from an impressive altitude of approx. 2,300 meters above sea level. They cultivate the local 74110 variety here, and many of them own only a few hundred trees. The organization, standards, and cleanliness at Hambela Goro made a big impression on us, as did the incredibly clean and consistent lots that we had the opportunity to taste fresh while still on site.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMVariety 74110, hand-picked by 460 small producers from around Hambela Goro, depulped, and then fermented in a tank for 48 hours. Washed, dried on raised beds for 12 days.ROASTER'S OPINIONA washed Ethiopian classic in its pure form. There is no point in saying too much here – there is a flower, yellow fruit, it is light, elegant, and complex. A blockbuster product.Store in a cold and dry space.

Heresy - Guatemala La Soledad Pacamara Washed Filter 252 g

Manufacturer: HERESY

Roasting date: 28.07.2026

Whole-bean specialty coffee from Guatemala, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of forest fruits, jam, flowers, citrus fruits and caramel.Origin: GuatemalaRegion: AcatenangoFarm: La SoledadProcessing: WashedAltitude: 1650 m a.s.l.Cupping score: 87 / 100ABOUT THE COFFEE FARM AND PRODUCERFinca La Soledad is a world-renowned farm. Roasteries and coffee enthusiasts alike look forward to these beans year after year. Raul's family has been involved in coffee for five generations, relentlessly searching for new methods to achieve even better harvests. And they do a fantastic job! Over the years, they have repeatedly earned top positions in the prestigious Cup of Excellence, and their client base has included the world's most esteemed roasteries for two decades.La Soledad offers ideal coffee growing conditions thanks to the unique microclimate of Acatenango. The farm covers 90 hectares, but half of its area is preserved as natural forest, while part is dedicated to avocado cultivation to maintain soil balance.A close relationship with Raul and his family means we know these beans inside out and purchase them year after year, right from the inception of Heresy.ABOUT THE PROCESSING OF COFFEE BEANS AT THE FARMA processing method that the Perez family has refined to perfection over all these years. First, there is depulping, which is the separation of the seeds from the fruit. Next, the beans ferment in tanks for 36 to 40 hours. This particular microlot is then washed and placed on African beds, which have an advantage over patios primarily due to a more even airflow during drying, resulting in greater control over the process.ROASTER'S OPINIONWe have been roasting Raul's coffees for years, but this is the first time we bought his Pacamara. It is one of our favorite varieties, characterized by immense depth, complexity, and distinct jammy notes. Coming from his hands, it is a true masterpiece!Store in a cool and dry place.

Heresy - Pastor Universal Heretic Blend 252g

Manufacturer: HERESY

Roasting date: 01.09.2026

A blend of specialty quality coffees, roasted at Heresy roastery by the 2020 Roasting Vice-Champion. Dark roasted, designed to be brewed in an espresso machine, café, frenchpress or pour-over methods of brewing or brewing in a cup. Profile with low acidity and higher bitterness. This is the most budget-friendly coffee in Heresy's portfolio and perhaps the most heretical! Pastor is a blend of coffees from the previous season, which proves that there is nothing wrong with transparently communicating the harvest date! We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it!WHAT A HERESYAlmost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. There are different ideas about how to use them. Quite a few roasters sell them at regular price, without disclosing the harvest date, some add them to cheaper blends, others try to hide the flavor with darker roasting or aromatization. To put the emphasis on fresh, up-to-date crops in our offerings, we always include their dates in the description of our lots. We dream of making this an industry standard! So that the consumer can more consciously judge quality and freshness against price. Meanwhile, there is nothing wrong with "past crops" themselves, if we say so directly and price them accordingly lower. It may be one of the few such approaches in the market, but it's time to bring a little more transparency to the subject of past crop coffees!COFFEEVariety: blendProcessing: blendProducer: blendFarm: blendOrigin: blendElevation: variousHarvest: harvest from the previous season!Cupping score: coffees scoring a minimum of 86 / 100 points when cupping on fresh beansROASTER'S REVIEWIf you are a coffee geek looking for flowers and fruits in your coffee - this is not the product for you. If you are instead looking for a gift for your mother, grandmother or someone who has not yet explored the world of specialty coffee and prefers darker classic coffees - we have it! It's a good coffee, and by using beans from previous harvests, it also has a much lower price, because we sell it 'at cost value'! It's also our way of 'less waste', because some great beans were standing in our warehouse, with no idea what to do with them. And that's how PASTor came into being.PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable.

Rich in aroma, and not just until the full moon. Drink as much as you want, even after the bedtime cartoon.ABOUT THE FARMThe Bayter family from the El Vergel farm has been involved in agriculture since 1995. Initially, they grew avocados, and since 2009, they have been experimenting with coffee cultivation. Gradually, under the guidance of Miguel Jimenez, they expanded their offer to include specialty coffee varieties. The farm underwent a major modernization in 2018. Natural drying processes were introduced, and research began on bacteria and yeast that control fermentation (including the Koji strain). Currently, over 28 different coffee varieties are grown there.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, particularly in Central America, where it was introduced to cultivation in the 1940s. This variety also played a significant role in breeding coffee trees resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. The Red Caturra variety is characterized by an intense aroma and a rich flavor profile. On the other hand, Yellow Caturra is a subtle coffee variety with bright, yellow beans. It is characterized by a mild flavor profile.ABOUT THE PROCESSINGSugarcane is a unique type of fermentation resulting in more intense fruity notes. After the fermentation is complete, caffeine is removed through an extraction process in special containers, where it is washed with a mixture of water and ethyl acetate. This process is repeated multiple times until the caffeine level drops to just 0.1%.Store in a dry and cool place.
