We’ve been working with Hellen for three years now, thanks to Nicolas, who exports coffees from Costa Rica. Last year I had the pleasure of driving up the most winding and bumpy road to the top of a mountain where Hellen’s house and farm are located. We got there in a car Nico had borrowed from his mom, because his had broken down the day before. At some point his mom’s little SUV simply couldn’t make it any further, so Hellen drove down in her big pickup truck and towed us the rest of the way up.First she fed us, then she showed us the farm and told us its story. After the walk she prepared a cupping and presented eight of her coffees. A cupping in the kitchen while rice and beans are cooking next to you? Why not.The coffees were phenomenal. And that Geisha? That’s the coffee that’s been showing up in my dreams ever since I came back from Costa Rica. I would never have made it to the Chiapas region in Mexico, and certainly not to Los Altos – the northeastern highlands of Chiapas, located about two hours from the state capital, San Cristóbal de las Casas.Andreas was my guide back then, and today he’s one of the funniest friends I have. Even though he now lives far away in the state of Veracruz, we still talk often. Coffee regions in this country are places where you need a pass – or at least a Mexican passport – to truly feel safe. During the long hours on the road, Andreas told me about the challenges local farmers face and about the NKG BLOOM program.In short, it’s an initiative supporting coffee producers around the world. Its goal is to help farmers develop their farms by providing access to financing, knowledge, modern technologies, and markets. This enables them to work more efficiently, increase their income, and lift themselves out of poverty. Traveling from farm to farm and visiting coffee warehouses, you could truly feel the financial and technological support behind the program.The state of Chiapas, where this coffee comes from, borders Veracruz and Oaxaca to the west, Tabasco to the north, and Guatemala to the east. It’s the same region, and the farms there are often just 20–30 kilometers apart. Yet traveling between them can take two to three hours due to road conditions. Despite such short distances, the flavor of the same botanical variety differs greatly from farm to farm. Microclimate and soil play a huge role.ABOUT THE COFFEEOur El Búho is a blend of Bourbon and Caturra varieties. It is a washed coffee.In the cup, you’ll find plenty of sweetness, reminiscent of milk chocolate and caramel. There is minimal yet noticeable fruitiness, bringing to mind mandarins or sweet oranges. As an espresso, it leans toward the sweeter side, lingering pleasantly on the palate. In milk-based drinks, it develops notes of toffee with a smooth texture.Mexico is an underrated coffee producer. Its complex history and current political situation do not make coffee imports easy – only 2% of the world’s available Arabica comes from this country. It belongs to Banexport—a company that handles almost everything across the entire local chain: production, export, collaboration with smaller producers from the Cauca region, as well as innovations and modern technologies in coffee production and processing.A full range of the most prized botanical Arabica varieties (Geisha, Pink Bourbon, Java, Wush-Wush, or Laurina) is grown here on 14 hectares, most of which constitute a natural nature reserve with designated ecological trails. Many endemic plant and animal species make up an incredibly diverse ecosystem here.Employees at Santa Barbara can count on stable employment all year round, not just during the season. Everything is handled formally, with a social package, insurance, and a pay rate significantly higher and fairer in the context of the conditions that typically still prevail in Arabica-producing countries.Interestingly, the farm does not have its own washing station, and the entire process—from fermentation to drying—takes place in the heart of the city of Popayan, the capital of the Cauca region.ABOUT COFFEE PROCESSING AT THE FARMCastillo variety, hand-picked, transported in a refrigerated truck immediately after harvest to the Area 18 station in the center of Popayan. A one-kilogram sample is taken for preliminary analysis; once data such as sugar concentration and density are obtained, the decision regarding the final process is made.The cherries are cleaned and sorted, then undergo depulping (separating the seed from the fruit) while retaining the mucilage layer, and are placed in a bioreactor. This allows for full control of the fermentation process and manipulation of variables such as temperature, pH, pressure, and oxygen saturation.Additional must—a mixture of water and pulp rich in microorganisms—works for the first 18 hours and promotes yeast multiplication. These yeasts then dominate for the next 36 hours of fermentation, shaping the aromatic profile. After a total of 54 hours, the coffee moves to the drying stage.Drying is performed mechanically in an advanced laboratory machine, which removes water from the beans to a precisely programmed value in a controlled, uniform, and repeatable process.ROASTER'S OPINIONOne of those coffees where funk and complexity go hand in hand. However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and the cultivation of a wide range of selected, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, and Pacamara.Currently, ongoing research on bacteria and yeast is being conducted at El Vergel to achieve even greater precision in controlling fermentation and, consequently, modulating flavor.In addition to coffee production, the Bayters are the founders of Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee without the involvement of intermediaries.ABOUT COFFEE PROCESSING AT THE FARMSidra variety, hand-picked, fermented as whole cherries for 72 hours with limited air access, with the addition of must from the fermentation of another botanical variety, Java.This must is a liquid that is produced as a byproduct of coffee fermentation and contains a high concentration of microorganisms—bacteria and yeast. Their increased presence lowers the starting barrier of fermentation, making it more intensive and faster. The result? More intensive formation of metabolites, which have a direct impact on the final, more complex and deeper profile in the brew.The coffee is dried in two stages—first mechanically for 4 days in a temperature-controlled environment, then for 18 days on raised beds. It is homogenized for 30 days in plastic bags.ROASTER'S OPINIONOne of those coffees where you take the first sip and specific descriptors come to the tongue faster than you can consciously think of them. Our visit to his place was entirely spontaneous.In January 2025, while traveling through Guji, our local partner Gemechu mentioned that he wanted to show us a small coffee drying plot behind the house of one of the nearby smallholders. It was our last day in this part of Ethiopia, so we were happy to stop by Gelo’s farm. Freshly harvested coffee, only a few days old, was covered with a tarpaulin to protect the cherries from the intense sun. This is a very good practice, although a distinct, intense fermentation aroma was clearly noticeable beneath the cover. Curious about the outcome, we took a sample of coffee that had previously been dried in the same way. Two days later, at the cupping table, we tasted a juicy, fruity, and very clean coffee, without any “wild” notes that can sometimes appear as a result of extended processing.Mr. Gelo owns just 5 hectares of coffee fields, and his annual production amounts to only… about 20 bags of export-ready coffee.A true gem from deep within Guji.ABOUT COFFEE PROCESSING ON THE FARMA single, regionally traditional Wolega variety, hand-picked and delivered to a small drying area with raised beds. Dried as a natural, in whole cherry, covered daily with a tarpaulin during periods of the most intense sunlight. After approximately 30 days, the coffee is removed from the beds and homogenized in bags in a shaded storage area.ROASTER’S NOTEAn excellent representation of Guji terroir from a small producer exporting only 20 bags per year. His small farm, about 8 hectares in size, is located in the Bensa region, which in our opinion has the best quality potential. The crops here reach well above 2000 meters above sea level and usually consist of selected, single botanical varieties.ABOUT COFFEE BEAN PROCESSING AT THE FARMFreshly harvested cherries of the local 74110 variety undergo an initial selection process where those with defects are discarded. Then, they are spread across so-called African beds—long tables, sometimes stretching for several dozen (!) meters, with a mesh lining that allows for uniform air circulation throughout the entire process, resulting in homogeneous drying. The whole process takes between 25 and 30 days, depending on the weather.ROASTER'S OPINIONA deeply sweet, almost candy-like coffee, with notes of sweet citrus, herbs, and flowers characteristic of the high altitudes in Bensa. The farm covers 90 hectares, but as much as half of the land is preserved as natural forest. Part of the remaining area is used for avocado cultivation to help maintain soil balance.Our close relationship with Raul and his family means we know these beans inside out and have been buying them every single year since the very beginning of Heresy.– The RoasteryABOUT THE COFFEE PROCESSING ON THE FARMA processing method that the Perez family has perfected over the years. It begins with depulping, which separates the beans from the fruit. The beans then ferment in tanks for 36 to 40 hours. This particular microlot is later washed and moved to African drying beds. Compared to patio drying, these beds allow for more even airflow during drying, resulting in greater control over the process.ROASTER’S OPINIONWe’ve been drinking Raul’s coffee every year for the past six years, and this is unquestionably the best Bourbon he has produced so far. Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz cultivate coffee on several-hectare farms in the El Tambo micro-region, located west of Popayan, the capital of the Cauca department.The following synergy of factors makes the quality of their raw material so phenomenal:the microclimate in El Tambo and the cultivation altitude reaching above 2,000 meters result in slower cherry ripening, while lower humidity facilitates the drying process: the processed coffee loses water in a predictable and controlled manner,a thoughtful and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal air throughput and sunlight,the producers' modern knowledge of fertilization combined with a traditional practice known locally as “re-re,” which involves the selective harvesting of overripe, undeveloped, or dried fruits and leaving them on the ground by the trees: thanks to this, more pests feed on the “waste” instead of attacking healthy batches,and, of course, conscious, restrictive cherry picking at the optimal ripeness stage combined with years of experience in the fermentation and drying process.Only the local population works during the harvest, forming the core of the community of several small El Tambo villages, which has naturally evolved around the continuous, seasonal cycle of coffee cultivation for generations.Javier FernandezJavier is the son of Don Andres, a producer whose coffees we have already hosted in our brown jars. His farm is just around the corner, and the terrace of the washing station offers such an extraordinary view of the valley and Lake Yojoa that if Bill Gates had visited this place, this very landscape would be world-famous as a Windows desktop wallpaper. The Fernandez family (there is also a second son, Nahun!) is not afraid to play with processing, and thanks to bold experiments, they deliver some of the best lots in all of Santa Barbara year after year. This is an opinion, not a fact. But also a fact.ABOUT THE COFFEE BEAN PROCESSING ON THE FARMIn the current Illuminati lineup, we have a combination of washed and honey processing with extended fermentation. In the base, there is deep caramel sweetness and plenty of jammy fruitiness, the dark-blue, forest kind.
