Finca La Soledad is a world-renowned farm. Roasteries and coffee enthusiasts alike look forward to these beans year after year. Raul's family has been involved in coffee for five generations, relentlessly searching for new methods to achieve even better harvests. And they do a fantastic job! Over the years, they have repeatedly earned top positions in the prestigious Cup of Excellence, and their client base has included the world's most esteemed roasteries for two decades.


La Soledad offers ideal coffee growing conditions thanks to the unique microclimate of Acatenango. The farm covers 90 hectares, but half of its area is preserved as natural forest, while part is dedicated to avocado cultivation to maintain soil balance.


A close relationship with Raul and his family means we know these beans inside out and purchase them year after year, right from the inception of Heresy.



ABOUT THE PROCESSING OF COFFEE BEANS AT THE FARM


A processing method that the Perez family has refined to perfection over all these years. First, there is depulping, which is the separation of the seeds from the fruit. Next, the beans ferment in tanks for 36 to 40 hours. This particular microlot is then washed and placed on African beds, which have an advantage over patios primarily due to a more even airflow during drying, resulting in greater control over the process.



ROASTER'S OPINION


We have been roasting Raul's coffees for years, but this is the first time we bought his Pacamara. It is one of our favorite varieties, characterized by immense depth, complexity, and distinct jammy notes. Coming from his hands, it is a true masterpiece!
