Whole-bean specialty coffee from Uganda, roasted by Good Coffee roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of cocoa, pear and orange.Country: UgandaRegion: Fort Portal, Rwenzori MountainsAltitude: 1700 - 1900 m a.s.l.Processing: WashedVariety: SL-28 ABOUT THE COFFEECoffee that makes a difference. Behind it are exceptional people. One of them—and we had the great pleasure of meeting him in person—is Kabuuka Elimethidas from the Empaako Collective. Kabuuka, known as Eli, is a young coffee farmer who, together with his wife Immaculate Karungi, dedicated himself to changing coffee trading conditions in western Uganda for the benefit of farmers.ABOUT PRODUCTIONEli grew up surrounded by coffee—his family cultivated robusta. He planted his very first coffee bush when he was 8 years old! After studying agronomy in Kampala, he took a job in the coffee industry in Fort Portal, western Uganda, where a local exporter hired him to liaise with farmers. The company collapsed right before the pandemic, leaving hundreds of farmers high and dry. Instead of looking for another job, Eli decided to help these producers sell their fruit. During that time, he witnessed many of the injustices that are still present in the coffee trade. What kind? For example, buyers would reject a reserved batch of cherries at the last minute without giving a reason—it is just like if you picked raspberries to sell, delivered them, and the buyer told you they would not buy them after all (fresh fruit, which coffee cherries are, spoils very quickly and cannot wait to be processed). Huge problems arose during peak harvest season, when buyers would slash purchasing prices to absurdly low levels or refuse to buy, claiming they already had too much fruit and could not process it (in a country where a farmer has a car and several buying stations nearby, this is no problem, but not in Uganda, where heavy bags of fruit are carried by hand—a working bicycle is the ultimate dream—and the next processing station is at least several dozen kilometers away). Unhonest middlemen were common, cheating farmers (e.g., with miscalibrated scales) or lending money to farmers to pay for school fees or food in exchange for a guaranteed low coffee price—so low that it did not cover production costs. On top of that, producers lacked the resources and knowledge to properly manage their crops. Without fertilization, pruning, and weeding, the bushes bear less fruit, and many farmers do not know that they need to be replaced even every few years. Lacking this knowledge and the money for fertilizers or basic tools, many earned little more than 60 USD a year—despite immense manual labor from themselves and their entire families (!). It must be emphasized that these farmers were and are the most vulnerable part of the entire production chain, yet it is the most important part, without which the entire chain does not exist!Eli saw a lot of this and dreamed of a system where farmers would be treated with respect and fairness. He thought about having his own buying and processing station where farmers could always sell their fruit and receive fair payment. He wanted to offer local producers predictable, dignified, and stable conditions. Thanks to a coincidence, Eli and Immaculate met the company Semilla, and the dream came true—the Empaako Collective was born. Today, thanks to huge support from Semilla, Eli offers all producers the certainty that they will receive a fixed, guaranteed price for their fruit throughout the entire harvest season. For higher quality coffee, farmers receive higher pay, and the money goes directly into their hands as soon as the fruit is delivered to the buying station. Eli proudly showed us how he sent the day's payments using a special app! Interestingly, farmers receive the money on a mobile device and can exchange it for cash at any mobile phone kiosk, which are plentiful across East Africa (these are small shops where you can buy a SIM card, top up your phone, send a Western Union transfer, etc.). Eli and Immaculate also train farmers in cultivation and harvesting techniques, helping them achieve the best possible quality. Our coffee consists of SL-28 variety beans coming from 11 farmers in the village of Kyabwire. After harvesting, the cherries are washed and sorted 3 times: first at the farmer's home, second at the buying station, and third at the processing station. Then, they are fermented in barrels for several dozen hours until they reach the correct pH level. Next, the skin and pulp are mechanically removed, and the beans are fermented again, then rinsed several times to remove the remaining parchment—the thin outer layer of the fruit on the beans. Finally, of course, they are dried on raised beds for about 3 weeks.Store in a cool, dry place.

Hard Beans - Brazil Fazenda Mundo Novo The Best Sancup 2025 Natural Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 20.04.2026

Specialty-grade whole-bean coffee from Brazil, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of dates, bilberry and stone fruits.Origin: BrazilRegion: Campo das VertentesFarm: Fazenda Mundo NovoProcessing method: NaturalVariety: Yellow CatucaiAltitude: 1050 m a.s.l.ABOUT THE COFFEEBehind this lot stands Alexandre S. S. C. Cambraia from Fazenda Mundo Novo in the Campo das Vertentes region of Brazil. He is a producer from a family-run, multi-generational coffee plantation who develops the farm with a high awareness of quality and respect for the terroir. Fazenda Mundo Novo is not just a random address on the map, but a place with a clearly established work standard.Although the farm's name is Mundo Novo (also the name of a botanical variety), the variety of this specific lot is Yellow Catucaí. It is valued for its sweetness, good structure, and a clean, organized sensory profile. This is a natural process managed with great control. The cherries were hand-picked at the optimal moment of ripeness and then spread in a thin layer on the patio that same day to begin drying. After several days, the coffee was moved to a dryer, where it finished drying slowly at a temperature of 40–45°C, which allowed for the preservation of profile clarity and good flavor intensity.RECIPERatio: 60 g of coffee per 1 liter of water. Water temperature: 93°C. Grind: medium-coarse. Brewing time: 3:30 minutes. Method: Pour water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cold and dry space.

Hard Beans - Colombia Carambolo Estate Washed Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 21.04.2026

Whole-bean specialty coffee from Colombia, roasted by Hard Beans from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of peach, red currant and vanilla.Origin: ColombiaRegion: HuilaVariety: Tabi, Yellow ColombiaFarm: Finca El Diviso / Finca Las FloresProcessing: WashedAltitude: 1700 – 1900 m a. s. l.ABOUT THE COFFEEThis is a blend of green beans from two farms in Pitalito, Huila: Finca El Diviso run by Nestor Lasso and Finca Las Flores run by Johan Vergara. These are names that genuinely matter on the competition scene. Coffees from El Diviso have won the World Barista Championship, and lots from Johan Vergara regularly appear in the routines of world-class competitors. In practice, this means one thing: the raw material is predictable, clean, and produced to meet the highest standards. This is a deliberate combination of two varieties. Tabi brings structure and elegance, often expressed as a more tea-like clarity and a stable, citrus-fruit acidity, while Yellow Colombia adds sweetness and juicy, ripe fruit character.Formally, this is a washed coffee, but processed in a way that strongly shapes the flavor profile. First, the fermentation is two-stage: an initial aerobic phase, followed by anaerobic submersion, designed to emphasize stone fruit notes (peach, apricot) rather than heavy, wine-like flavors. Second, after fermentation the coffee undergoes controlled hot/cold quenching, meaning contact with hot and cold water to stop the process at the right moment and preserve aromatic clarity. This is followed by natural drying under cover for greater stability and reduced risk of overheating, finished with mechanical drying in a silo, and at least 10 days of resting before final preparation.RECIPERatio: 60 g coffee per 1 liter of waterWater temperature: 93°CGrind size: Medium-coarseBrew time: 3:30 minutesMethod: Pour the water in five equal pours (for example, 5 × 60 g) at 30-second intervals.Allow the water to fully drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size coarser or finer.Remember to use soft, filtered water.Store in a cold and dry space.

Hard Beans - Colombia El Rancho Red Bourbon Natural Anaerobic Filter 200 g

Manufacturer: HARD BEANS

Roasting date: 19.05.2026

Specialty-grade whole-bean coffee from Colombia, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of strawberry, blackberry jam and cherry.Origin: ColombiaRegion: San Agustín, HuilaFarm: El RanchoProcessing method: Natural AnaerobicVariety: Red BourbonAltitude: 1750 m a.s.l.The El Rancho farm is owned by Cadefihuila, an association of approximately 3,500 coffee producers across 28 municipalities in the Huila region. It is an organization based mainly on the work of small, family-owned farms, which are responsible for harvesting, selecting, and drying the coffee. The El Rancho farm itself is also a place for development work on specialty coffees and various approaches to processing. Therefore, this lot combines a good origin with processing infrastructure that has a real impact on the quality of the cup.VARIETYRed Bourbon is a variety valued for its high sensory quality and distinct character. Under the right conditions, it yields sweet, complex, and very clean coffees. In this version, it shows a profile based on intense fruit and deep sweetness – with notes of strawberry, blueberry jam, and sweet cherry. This is a natural process coffee with multi-stage, controlled fermentation.Ripe cherries are first harvested and submerged in water to discard lighter, floating beans. Next, the coffee undergoes anaerobic fermentation in bags for 36 hours, after which it goes into another 36 hours of fermentation in a mucilage environment (mosto) prepared beforehand based on a previous batch and fed with panela for a month. After this stage, the coffee is rinsed twice, undergoes a one-time thermal shock with water at 60°C, and is finally dried in dehydrators to optimal moisture levels for 5 days.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseBrewing time: 3:30 minutesMethod: Pour the water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cool, dry place.

Hard Beans - Colombia El Recreo Papayo Rojo Taza Platino #2 Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 20.04.2026

Whole-bean specialty coffee from Colombia, roasted by Hard Beans from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of cherry, mango and red orange.Origin: ColombiaRegion: Pitalito, HuilaVariety: Papayo RojoFarm: El RecreoProcessing: Washed (fermented)Altitude: 1750 m a.s.l.ABOUT THE FARMEl Recreo is Alexandra Calderón Rojas's farm located in Pitalito, in the Huila department, at an altitude of approximately 1700 m above sea level. The farm spans 6 hectares, 5 of which are dedicated to coffee cultivation. This scale allows for great attention to detail in cherry selection and process quality.ABOUT THE COFFEEPapayo Rojo is a variety that brings plenty of dynamics and freshness to the cup. In a well-managed process, it can deliver a juicy, complex, and very clear profile. This is one of those coffees that shows modern Colombia can still surprise with its form, without losing precision. The cherries were hand-picked, then subjected to 24-hour oxidation and 36-hour fermentation in mucilage. After this stage, the mucilage layer was removed mechanically, followed by drying in a marquesina for about 20 days. This process builds greater depth of flavor and helps maintain high profile clarity.RECIPEProportions: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind: medium-coarseBrewing time: 3:30 minutesMethod: Pour the coffee in 5 equal parts at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cold and dry space.

Manufacturer: HARD BEANS

Roasting date: 25.08.2026

Specialty-grade whole-bean coffee from Colombia, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of white flowers, peach, caramel and milk chocolate.Origin: ColombiaRegion: HuilaFarm: Finca Santa BárbaraProcessing method: WashedVariety: GeshaAltitude: 1950 m a.s.l.FARM AND REGIONFinca Santa Bárbara belongs to Jhon Edwin Samboní Chachón. The farm is located in Algeciras, in the department of Huila, at an altitude of approximately 1,950 meters above sea level. It covers 32 hectares, 24 of which are dedicated to coffee cultivation.Huila is one of the most important regions for specialty coffee production in Colombia. Diverse topography, high-altitude crops, and specific microclimatic conditions make it possible to obtain coffees with high sweetness, well-defined acidity, and great profile clarity. The producer specializes in high-quality coffees and controlled processing. In this case, the most important aspect is preserving the distinct character of the Gesha variety: floral notes, fruity sweetness, and a delicate brew structure.ABOUT THE VARIETYGesha is an Arabica variety valued for its high aromatic potential, particularly towards floral notes, stone fruits, and delicate, well-defined acidity. In this case, the profile leans towards white flowers, peach, caramel, and chocolate. This is a coffee where it is not about a heavy fermentation effect or excessive intensity. Profile clarity, sweetness, and the easily recognizable character of the variety are more important.ABOUT THE PROCESSINGWashed processing involves removing the skin and part of the pulp from the coffee cherry, carrying out fermentation, rinsing off the remaining pulp, and drying the beans. This process usually yields greater profile clarity than natural or honey processing. In this coffee, washed processing helps balance the acidity and better highlight the features of the Gesha variety. As a result, the brew features a floral aroma, fruity sweetness, and a chocolate-caramel base.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Hard Beans - Colombia Finca Villa Rubiela Pink Bourbon Honey Filter 250 g

Manufacturer: HARD BEANS

Roasting date: 09.09.2026

Specialty-grade whole-bean coffee from Colombia, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of red fruits, mango, cinnamon and caramel.Origin: ColombiaRegion: HuilaFarm: Finca Villa RubielaProcessing method: HoneyVariety: Pink BourbonAltitude: 1700 m a.s.l.ABOUT THE FARMFinca Villa Rubiela is located in Monserrate, in the municipality of Pitalito, in the department of Huila, at an altitude of approximately 1700 meters above sea level. The producer is Fernando Vargas, a third-generation coffee farmer. The farm covers 12 hectares, of which 11 hectares are dedicated to coffee.Fernando Vargas purchased the farm in 2011 and gradually developed it towards the production of specialty coffee. Pink Bourbon was introduced to the farm in 2017 and currently makes up about 30% of the crops. Other varieties grown include Colombia Amarillo and Caturra.Pitalito is one of the most highly regarded coffee production areas in Huila. The growing conditions favor coffees with high sweetness, complex acidity, and good structure.ABOUT THE VARIETYPink Bourbon is an Arabica variety particularly associated with Huila. It is valued for its high sweetness, good structure, and a profile that often combines red fruits, tropical fruits, floral notes, and delicate spiciness. In this coffee, the variety delivers a distinctly fruity profile, but it is not one-dimensional. Alongside the fruit, there are notes of caramel, cinnamon, and chocolate, which build a greater depth in the brew.ABOUT THE PROCESSINGRipe coffee cherries are hand-picked and then placed in a water tank. This step allows for the separation of lower-density cherries, which float to the surface. After selection, the coffee undergoes about 12 hours of controlled contact with oxygen.Next, the cherries are depulped, and the beans, with some of the mucilage left on them, undergo 36 hours of dry aerobic fermentation. During this time, the coffee is regularly mixed to reduce the risk of overheating and to maintain a more even process. After fermentation, the coffee is washed and dried for about 15 days in a covered drying house. After drying, it rests for another 15 days before the next stage. The honey processing influences the perception of sweetness, texture, and the intensity of the fruitiness.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: mediumBrewing time: 3:30 minutesMethod: Pour water over the coffee in 5 equal pours (e.g., 5x 60g) at 30-second intervals. The water should completely drain through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a dry and cool place.

In the cup, you’ll find notes of red fruits, apple, flowers and strawberry.Origin: ColombiaRegion: Pitalito, HuilaFarm: Los LagosProcessing method: Washed (fermented)Variety: GeshaAltitude: 1850 m a.s.l.ABOUT THE FARMLos Lagos is located in Colombia, in the Huila region, in the municipality of Pitalito, in the village of Filo de Chillurco, at an altitude of 1,850 meters above sea level. The farm covers 6 hectares, 5 of which are dedicated to coffee cultivation, and the trees in this lot are around four years old.The farm is managed by Vladimir and his family, and the entire process, from harvesting to drying, takes place on-site and under their direct supervision. The harvest season runs from April to December and is based on selective hand-picking to maintain consistent quality and uniformity of the cherries.ABOUT THE COFFEEGesha is a variety strongly associated with exceptional quality and a very high sensory potential when grown at high altitudes. It is also a low-yield variety, which means that even with high demand, it remains genuinely limited on the market. For years it has consistently won the most prestigious coffee competitions and achieved record-breaking results at international auctions. This lot is processed using a washed method with extended, controlled fermentation. The harvest is done manually and selectively, in cycles roughly every 20 days, using only fully ripe cherries. After harvesting, the cherries ferment in bags for about 12 hours. They are then transferred to a hopper, where the initial oxidation stage is completed. The coffee then undergoes flotation, followed by depulping and an extended fermentation of approximately 200 hours in tanks or vats. After fermentation, the coffee is washed using either a portable washing unit or an Ecomill system. It is then dried on raised beds for 15–17 days and stabilized in GrainPro bags for 10–15 days. The final step is careful sorting to remove defects and ensure the highest physical quality of the beans.ROYAL BEANSWhat’s behind the name Royal Beans? Whole-bean specialty coffee from Colombia, roasted by Hard Beans from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. In the cup, you can expect the notes of cherry, blackberry and honey.Origin: ColombiaRegion: Palestina, Huila Variety: Bourbon SidraFarm: San GabrielProcessing: Natural Altitude: 1710 m n.p.m.ABOUT THE FARMSan Gabriel Farm is a family-owned coffee plantation with over 50 years of tradition, currently managed by the third generation. Around a decade ago, with the aim of participating in the prestigious Cup of Excellence competition, the farm began experimenting with varieties other than those traditionally grown in the region. For the past seven years, the farm has actively participated in this competition, achieving significant success, including second place in 2021. Don Linarco has been involved in coffee cultivation since his youth, working on the family farm. In 2014, after inheriting the land, he started his independent journey as a coffee producer. With great passion, he developed his skills across the entire production process, from sensory assessment (cupping) to coffee processing methods. Today, Don Linarco produces coffee using various techniques while also managing other farms.ABOUT THE VARIETYBourbon Sidra is an exceptional coffee variety, being a hybrid of two esteemed lineages: Bourbon and Typica (or according to some sources, Gesha). It is most commonly cultivated in Ecuador and Colombia. It is characterized by a complex flavor profile, where one can often find notes of tropical fruits, citrus, and florals, complemented by a delicate sweetness. The whole profile is completed by a bright, vibrant acidity and a clean finish. Due to its uniqueness and rarity on the market, this variety is frequently used in barista competitions.THE PROCESS The coffee cherries are hand-picked and carefully selected. They are then subjected to a washing process, during which floating cherries are removed from the surface of the water. The next stage is a 90-hour fermentation in hermetically sealed barrels. After fermentation, the cherries are dried under cover for about 28 days, and the final stabilization lasts for 15 days.A coffee for explorers. Lightly roasted, with dark fruits in the aroma. Blackberries, sweet cherries. All of this bathed in honey. Hard Beans - Costa Rica Los Cipreses Milenio Natural Anaerobic Filter 200 g

Manufacturer: HARD BEANS

Roasting date: 18.05.2026

Specialty-grade whole-bean coffee from Costa Rica, roasted by the Polish roastery Hard Beans. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of orange, mango and mik chocolate.Origin: Costa Rica Region: Naranjo, West ValleyFarm: Los CipresesProcessing method: Natural AnaerobicVariety: MilenioAltitude: 1600 – 1650 m a.s.l.ABOUT THE FARMBehind this coffee is the Salazar family from the Los Cipreses farm in Naranjo, located in the West Valley region of Costa Rica. For over four decades, they sold their coffee to local cooperatives, but since 2018, they began developing production with a greater focus on the specialty segment. A significant step was the launch of their own mill, Beneficio San Cristóbal, which gives them greater control over quality and processing. The crops are situated at an altitude of approximately 1600–1650 m a.s.l.ABOUT THE VARIETYMilenio, also designated as H10, is a variety with very high yield potential, high resistance to coffee leaf rust, and good quality potential at higher altitudes. World Coffee Research identifies it as a hybrid with very high productivity and good quality above 1300 meters. In practice, it is a material that successfully combines agronomic traits with sensory potential.ABOUT THE PROCESSINGNatural anaerobic is a combination of two process elements. "Anaerobic" refers to fermentation in an environment with limited or eliminated access to oxygen, usually in closed tanks. "Natural," on the other hand, means that the bean is dried within the whole fruit rather than after the pulp has been removed. Such processing typically enhances flavor intensity, sweetness, and the fruity character of the coffee while providing a more saturated profile.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseBrewing time: 3:30 minutesMethod: Pour the water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely filter through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cold and dry space.

It is currently run by the second generation of producers, Elias and Shady Bayter, with the support of their mother, Martha. Unlike many small farms in Colombia, which typically cover around 5 hectares, this estate spans over 300 hectares of land, nearly 100 hectares of which are dedicated to coffee cultivation. The Bayter family is currently conducting advanced research on bacteria and yeasts to control fermentation, constantly experimenting with processing methods and achieving an unprecedented level of excellence in their coffees. El Vergel grows more than 28 different coffee varieties and is the first farm in Colombia to develop the Koji fermentation process, a technique that has completely revolutionized green coffee production.Pink Bourbon is a unique coffee variety, known for its unusual pink-colored cherries. Its captivating and complex flavor profile is characterized by floral notes, fruitiness, juicy acidity, and honey-like sweetness. This exceptional coffee was produced using a method developed at El Vergel Estate, employing Aspergillus oryzae, a fungus renowned for its ability to enhance flavor profiles. The innovative process involves cultivating the fungus on steamed rice for 3–4 days. Once fully developed, the rice is harvested, dried, and ground into a fine powder. This powder is then evenly spread over coffee cherries placed on raised beds. Ensuring oxygen exposure is crucial, as it enables the fungus to grow and transform the fruit.During a 24–72 hour aerobic fermentation, the koji culture develops, covering most of the cherries and intensifying their flavor complexity. After fermentation, the cherries are dried in two stages: first for 10 days under the sun, followed by 2–4 days of mechanical drying at a controlled temperature not exceeding 38°C to preserve the coffee’s delicate characteristics. Finally, the beans undergo a 20-day stabilization period in GrainPro bags, ensuring stability and optimal storage conditions.ROYAL BEANSWhat’s behind the name Royal Beans? Hard Beans - Kenya Karimikui AB Top Filter 250 g

Manufacturer: HARD BEANS

Whole-bean specialty coffee from Kenya, roasted by Hard Beans roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of grapefruit, blackberry, rhubarb and black tea.Origin: KenyaRegion: KirinyagaFarm: KarimikuiVariety: SL28, SL34, BatianProcessing: WashedAltitude: 1600 – 1700 m a.s.l.ABOUT THE REGION AND FARMKarimikui is a processing station operating since 1966. It is located in Kirinyaga County, on the southern slopes of Mount Kenya. It collects coffee from over 2,200 smallholder producers from around the villages of Gituba and Kithure. Most farms have a small area, usually around 0.1–0.2 ha.Coffee grows at an altitude of approximately 1600–1700 m a.s.l., in volcanic soils. The conditions of the region favor slower fruit ripening, which is important for the development of sweetness, acidity, and the structure of the brew.On local farms, coffee is often grown alongside other crops, such as tea, avocado, macadamia, or mango. This is an important element of the farmers' daily operations, as it increases the economic stability of the farms.ABOUT THE VARIETYThis coffee features SL28, SL34, and Batian. SL28 and SL34 are responsible for the classic Kenyan profile: high acidity, fruitiness, and a long, clean finish. Batian is a newer variety, introduced among other reasons for its greater disease resistance and better production stability. The combination of these varieties yields a coffee with a distinct regional character, with a good balance between intensity and clarity of the profile.ABOUT THE PROCESSINGCoffee cherries are selectively picked and delivered to the station after harvest. After removing the skin and part of the pulp, the beans undergo fermentation, are then washed with fresh water, and dried on raised beds. During drying, the coffee is regularly turned so that the process proceeds as evenly as possible. At Karimikui, a mechanical pulper is also used, which helps reduce water consumption. This is technologically and environmentally significant. The result in the cup is a clean profile, high sweetness, citrus-berry acidity, and a structure typical of well-prepared coffees from Kirinyaga.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: mediumBrew time: 3:30 minutes Method: Pour water over the coffee in 5 equal pours (e.g., 5x 60 g) at 30-second intervals. The water between pours should draw down completely through the coffee. If the water flows too slowly or too fast, adjust the grind size to coarser/finer. Remember to use soft, filtered water! Store in a cool, dry place.
