The producer is Fernando Vargas, a third-generation coffee farmer. The farm covers 12 hectares, of which 11 hectares are dedicated to coffee.Fernando Vargas purchased the farm in 2011 and gradually developed it towards the production of specialty coffee. Pink Bourbon was introduced to the farm in 2017 and currently makes up about 30% of the crops. Other varieties grown include Colombia Amarillo and Caturra.Pitalito is one of the most highly regarded coffee production areas in Huila. The growing conditions favor coffees with high sweetness, complex acidity, and good structure.ABOUT THE VARIETYPink Bourbon is an Arabica variety particularly associated with Huila. It is valued for its high sweetness, good structure, and a profile that often combines red fruits, tropical fruits, floral notes, and delicate spiciness.In this coffee, the variety delivers a distinctly fruity profile, but it is not one-dimensional. Alongside the fruit, there are notes of caramel, cinnamon, and chocolate, which build a greater depth in the brew.ABOUT THE PROCESSINGRipe coffee cherries are hand-picked and then placed in a water tank. This step allows for the separation of lower-density cherries, which float to the surface. After selection, the coffee undergoes about 12 hours of controlled contact with oxygen.Next, the cherries are depulped, and the beans, with some of the mucilage left on them, undergo 36 hours of dry aerobic fermentation. During this time, the coffee is regularly mixed to reduce the risk of overheating and to maintain a more even process. After fermentation, the coffee is washed and dried for about 15 days in a covered drying house. The family farm has existed since 1840. The 1990s brought significant losses, leading the family to sell part of their land to invest in production quality — they launched their own washing station and coffee mill, and also planted a wide variety of Arabica varieties, such as SL-28, Geisha, Villa Sarchi, and Java. This decision brought them great success and business stability. Today, they produce some of the most interesting coffees in the industry.After harvesting, the coffee cherries go to the mill, where they are washed and sorted by quality using optical sorters. Then, the coffee undergoes three stages of drying. For the first 10 days, it dries in the sun; for the next 8 days, it remains outdoors but shielded from the sun; finally, it goes to a patio-greenhouse, where it spends 15 days. The station is managed by Alemu Bukato, and the cherries delivered to it come from around 650 local farmers cultivating coffee at altitudes of 1,900–2,100 meters above sea level. High altitude, fertile soils, and regular rainfall create conditions for which Yirgacheffe is famous for exceptionally aromatic coffees with a floral and fruity character.Only ripe cherries enter the processing stage, which, after selection, are dried whole on raised African beds for 12–15 days. During this time, they are regularly turned and protected from intense sun, rain, and night moisture. This coffee stands out with an unusual combination of features from two different processes – intense floral notes and citrus acidity typical of washed coffees, alongside clear, sweet strawberry associated with natural process coffees.Intense flowers dominate the aroma, accompanied by delicate citrus and sweet berries. In flavor, floral notes combine with a distinct strawberry note, while refreshing citrus acidity brings lightness to the whole profile. The coffee has a medium body, high sweetness, and a long, pleasant aftertaste where flowers and citrus appear once again. Profile with low acidity and higher bitterness.This is the most budget-friendly coffee in Heresy's portfolio and perhaps the most heretical! Pastor is a blend of coffees from the previous season, which proves that there is nothing wrong with transparently communicating the harvest date! We roast this coffee darker, though in a way that makes it suitable for a variety of brewing methods. It will work especially well in an espresso machine or a mokka pot, and for fans of lower acidity, higher bitterness and sweet chocolate and caramel notes, also in filter methods. That's why we call it an all-purpose blend. Pastor doesn't offer coffees eternal life, but gives a second one to those that deserve it!WHAT A HERESYAlmost every roaster has some coffee left over from the previous crop when new, fresher coffee from the last harvest comes in. These beans are often still good, especially if their quality was high from the beginning, although it usually happens that they lose some intensity and sometimes there are notes associated with some woody impression which appear. There are different ideas about how to use them. Quite a few roasters sell them at regular price, without disclosing the harvest date, some add them to cheaper blends, others try to hide the flavor with darker roasting or aromatization. To put the emphasis on fresh, up-to-date crops in our offerings, we always include their dates in the description of our lots. We dream of making this an industry standard! So that the consumer can more consciously judge quality and freshness against price. Meanwhile, there is nothing wrong with "past crops" themselves, if we say so directly and price them accordingly lower. If you are instead looking for a gift for your mother, grandmother or someone who has not yet explored the world of specialty coffee and prefers darker classic coffees - we have it! It's a good coffee, and by using beans from previous harvests, it also has a much lower price, because we sell it 'at cost value'! It's also our way of 'less waste', because some great beans were standing in our warehouse, with no idea what to do with them. And that's how PASTor came into being.PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact!
