I would never have made it to the Chiapas region in Mexico, and certainly not to Los Altos – the northeastern highlands of Chiapas, located about two hours from the state capital, San Cristóbal de las Casas.Andreas was my guide back then, and today he’s one of the funniest friends I have. Even though he now lives far away in the state of Veracruz, we still talk often. Coffee regions in this country are places where you need a pass – or at least a Mexican passport – to truly feel safe. During the long hours on the road, Andreas told me about the challenges local farmers face and about the NKG BLOOM program.In short, it’s an initiative supporting coffee producers around the world. Its goal is to help farmers develop their farms by providing access to financing, knowledge, modern technologies, and markets. This enables them to work more efficiently, increase their income, and lift themselves out of poverty. Traveling from farm to farm and visiting coffee warehouses, you could truly feel the financial and technological support behind the program.The state of Chiapas, where this coffee comes from, borders Veracruz and Oaxaca to the west, Tabasco to the north, and Guatemala to the east. It’s the same region, and the farms there are often just 20–30 kilometers apart. Yet traveling between them can take two to three hours due to road conditions. Despite such short distances, the flavor of the same botanical variety differs greatly from farm to farm. Microclimate and soil play a huge role.ABOUT THE COFFEEOur El Búho is a blend of Bourbon and Caturra varieties. It is a washed coffee.In the cup, you’ll find plenty of sweetness, reminiscent of milk chocolate and caramel. There is minimal yet noticeable fruitiness, bringing to mind mandarins or sweet oranges. As an espresso, it leans toward the sweeter side, lingering pleasantly on the palate. In milk-based drinks, it develops notes of toffee with a smooth texture.Mexico is an underrated coffee producer. Its complex history and current political situation do not make coffee imports easy – only 2% of the world’s available Arabica comes from this country. Cherries are delivered by about 1,050 smallholder farmers growing coffee at altitudes above 1,800 meters above sea level. Volcanic soils and a cool climate promote the slow ripening of the fruit, building the distinct acidity and structure characteristic of Kenyan coffees. The SL28, SL34, and Ruiru 11 varieties are also responsible for the profile.ABOUT THE PROCESSINGAfter selective hand-picking, ripe cherries are thoroughly sorted, including in a water tank, then depulped and fermented for about 24 hours. After fermentation, the beans are washed and dried on raised beds, where they are regularly turned and protected from intense sun and night moisture. Slow, even drying preserves the clarity of the profile and highlights the characteristic, lively acidity of Kenyan coffee.ROASTER'S OPINIONGikirima is a classic, high-altitude Kenya – clear, intense, and full of fruit, with a characteristic, lively acidity and a delicate tomato accent. The process begins with meticulous hand-harvesting of only fully ripe cherries. Next, the coffee cherries are thoroughly sorted so that only the finest fruit moves on to further processing.The next stage is the fermentation of whole fruits in an anaerobic environment. The cherries are placed in sealed bags from which oxygen access is removed. For about 120 hours, a controlled fermentation takes place, during which yeast and microorganisms intensively develop complex aromatic compounds while maintaining full control over the process flow. As a result, the coffee gains greater sweetness, depth, and an intensely fruity character.After fermentation is complete, the fruits are spread out in a very thin layer on the patio to immediately halt the fermentation process and begin even sun-drying. The result of this demanding processing is an espresso with a creamy body, distinct fruitiness, and a long, sweet finish. Guatemala Ayarza perfectly demonstrates how skillfully executed anaerobic fermentation can highlight the natural potential of the beans, creating a coffee full of juicy fruit and dessert-like sweetness.Finally, dessert sweetness, juicy fruit notes, and fruit-derived acidity meet in the cup. The espresso has a silky body and leaves a long, pleasant finish. It works great as a dose of refreshment on its own. When combined with milk, it takes on even greater sweetness, while the fruity accents become gentler, resembling a creamy dessert. This season, we went for the Aji variety, already warmly received by you, which struck us with its transparency. We got a proper strawberry punch straight to the taste buds, and we are still recovering from that fruity knockout.In the cup, the strawberry was the main thing: fresh, but also a little more jammy. At times, we had the impression of those yoghurt-and-strawberry chocolates appearing in the flavour too. There is no doubt that a lot is going on here, and sensory boredom is not really an option. We completed the flavour profile with notes of mango and sea buckthorn to highlight the fresh, soft sweetness and intense acidity that stays with us long after the last sip. In truth, the range of associations was almost endless, so we narrowed it down to the notes that stood out the most and best captured this juicy, ripe fruitiness.ABOUT THE VARIETYWe write the variety simply as Aji, though its fuller name is Bourbon Aji. The name comes from… a pepper. Farmers in southern Huila noticed the distinctive aroma of the cherries, reminiscent of a small chilli pepper. Here comes the plot twist, though: genetic testing has shown that it is not a direct descendant of classic Bourbon, but a variety of Ethiopian origin.ABOUT THE PROCESSINGThe coffee and its processing come from Luis Marcelino of Aroma Nativo in Pitalito. The name Hydro Honey may sound fancy, but it is not just a pretty label. Behind it stands a specific, multi-stage process. Only the ripest cherries go into processing, first fermenting in a controlled anaerobic environment. The coffee is then depulped and pre-dried. Later, it returns to the tanks for a rehydration stage with selected yeasts and bacteria, before moving to raised beds, where it dries for up to 26 days. Finally, it goes through three months of stabilisation under controlled conditions.
