Just as the warm weather has settled in for good, the first fresh harvests from Africa are starting to arrive. Itumpi from Tanzania clearly reminds us why we value coffees from this part of the continent: crisp, juicy brews with a large dose of freshness.In taste, Itumpi leans towards green-red rhubarb and pink grapefruit. The acidity is distinct and pleasantly juicy. In mouthfeel, the coffee is light, tea-like, and clean, with a crisp finish that practically begs to be brewed over ice.The enigmatic PB stands for peaberry. It refers to a natural anomaly where, instead of two flat beans, a single, smaller, and rounder bean develops inside the coffee cherry. Sometimes overlooked, though completely unfairly, because it can yield a very intense, concentrated flavor. It was this intensity that stole our taste buds from among the other grades.The raw material comes from the Itumpi cooperative in the Mbozi district, Songwe region. About 160 local producers operate here, cultivating coffee at an altitude of 1500–1700 meters above sea level. Since 2019, the cooperative has been producing fully washed coffees using their own wet mill. With such a crisp, acidic profile, this method fits like a glove.Store in a dry and cool place.

We recommend it primarily for filter brewing methods, where its complexity and delicacy are most pronounced.The coffee comes from the Oromia, Guji region in Ethiopia and was produced by Gemechu Shonora in cooperation with around 500 smallholder farmers. The crops are situated at an altitude of 1900 to 2200 meters above sea level, and the dominant varieties are Kurume and other local varieties characteristic of this region.The name Harruu Bunnaqaa originates from the Oromo language. "Harruu" means a large shade tree, under which Oromo community meetings traditionally took place, while "Bunnaqaa" is related to sharing coffee. Harruu Bunnaqaa is also a historical site in Guji, where local Oromo leaders would meet to jointly celebrate peace, blessings, and coffee.Coffees from this area stand out for their exceptional complexity and aromatic intensity, resulting primarily from the high altitude of the crops and very fertile soils. The selected cherries are then placed in sealed, shaded barrels, where they undergo a specialized, 72-hour, dry anaerobic fermentation. By removing oxygen and maintaining strict temperature regulations, this process allows the coffee to develop an incredibly clean acidity and a creamy texture, while preserving the distinctive characteristics of its original terroir.After fermentation, the coffee is carefully removed from the barrels and sorted by hand once again to ensure that only the finest cherries move on to the drying stage. Over the course of 33 days, the beans are dried on raised drying beds that provide optimal airflow. Together with his brother, he is responsible for both the daily work on the farm and the sale of their coffees. On different plots, he cultivates varieties such as Gesha, Pink Bourbon, and Castillo, constantly developing processing methods to search for even higher quality coffee.This specific lot of Gesha was selected from among the best coffees in the Nariño region during the La Mejor Taza de Nariño competition. It then went to the auction of the best lots, where it was won by Adam Laska — co-owner of the KAFAR roastery — who had previously participated in the competition as a judge.ABOUT THE PROCESSINGThe processing starts with the manual harvesting of fully ripe cherries. Next, the coffee undergoes a four-day anaerobic fermentation in sealed jute bags kept in the cool climate of the Alta Clara region. The next stage is an eight-day anaerobic fermentation in airtight steel tanks, which deepens the sweetness, texture, and complexity of the sensory profile.After fermentation, the coffee is dried for 15–20 days in parabolic dryers, which ensures uniform airflow. The final stage is manual selection and a 15-day stabilization period in jute bags.In the cup, the coffee presents an elegant and refined character with notes of guava, sweet cherry, and muscovado sugar, supported by a creamy texture and a long, sweet finish.
