He has tested different coffee varieties and microbial cultures, always seeking harmony between flavour and aroma. During these trials, he turned to wine yeasts — well-known, thoroughly tested in countless fermentation processes, and allowing for conscious, predictable control over the entire procedure. “It’s all about integration!” Hernández repeats, emphasising that balance is central to his work. For him, aroma cannot exist without flavour, and flavour should always reflect the terroir.For this lot, processing unfolds in several carefully planned stages. After depulping, Barolo-type yeasts are added to the cherries — the same strains long used in Italian winemaking to enhance fruit expression and depth. In coffee they work similarly: stimulating the breakdown of natural sugars, which translates into a rounder mouthfeel, pronounced sweetness, and a fuller body. Fermentation takes place in barrels, without oxygen, and lasts around 24 hours. Once complete, the cherries are dried using the honey method, where part of the mucilage remains on the seed. This approach significantly reduces water consumption—a factor of growing importance on the farm, where access to water is becoming increasingly limited.In the cup, Honduras Barolo Yeast radiates a seamless integration of aroma and flavour: the depth of ripe red fruits, a subtle wine-like note, and an exceptionally smooth body. It is a coffee with a juicy, fruit-forward profile, shaped through a process that mirrors its producer’s philosophy. “Feel the terroir & play with it,” says Hernández — and that is exactly how he carries out his experiments.

It belongs to Banexport — a company involved in virtually every stage of the local coffee supply chain: production, export, collaboration with smaller producers from the Cauca region, as well as innovation and modern technologies in coffee cultivation and processing.A full range of the most highly valued Arabica botanical varieties is cultivated here (geisha, pink bourbon, java, wush-wush, and laurina) across 14 hectares, the majority of which consists of a protected natural reserve with designated ecological trails. Numerous endemic plant and animal species form an exceptionally diverse ecosystem.Workers at Santa Barbara can count on stable, year-round employment, not just seasonal work. Everything operates formally, with social benefits, insurance, and wages that are significantly higher and more equitable compared to the conditions that still commonly prevail in many Arabica-producing countries.Interestingly, the farm does not have its own processing station. The entire process — from fermentation to drying — takes place in… the very heart of the city of Popayán, the capital of the Cauca region. And there’s one more thing. We have never recommended checking the “ABOUT PROCESSING” section this strongly before.ABOUT COFFEE PROCESSING ON THE FARMLet’s begin with the botanical variety.A few years ago, several producers in Huila (a department in Colombia) discovered that some coffee trees on their farms were producing unusual cherries — the fruit displayed distinct, light, thin stripes along its entire surface, and the beans themselves were slightly elongated in shape. They separated this intriguing phenotype from traditional red bourbon to determine whether the differences would also be noticeable in the cup. They were.Bourbon Rayado, as they named the varietal (literally “striped bourbon”), is characterized by potentially higher complexity and a distinctive floral-herbal layer.Due to the recent discovery, no genetic studies on Rayado are yet available. Some believe it is most likely a natural mutation of classic Bourbon; others suggest it could be a mutated Pink Bourbon, which itself traces genetically in a direct line to local Ethiopian varieties.Now, the process.The Bourbon Rayado (Striped Bourbon) variety is hand-picked and immediately transported in a refrigerated vehicle (yes, really) to the Area 18 station in downtown Popayán. A one-kilogram sample is taken for preliminary analysis. Based on data such as sugar concentration and density, the final processing method is determined.The cherries are cleaned and sorted, then undergo depulping (separation of the seed from the fruit) and are transferred to a bioreactor that allows full control over the fermentation process and manipulation of variables such as temperature, pH, pressure, and oxygen saturation. The latter stimulates the naturally occurring yeast strains present in the fruit. During 48 hours of fermentation, these yeasts convert sugars into aromatic precursors responsible for the characteristic floral and fruit notes inherent in Bourbon Rayado.After fermentation, the coffee is washed three times. Drying is mechanical, performed in an advanced laboratory-grade machine that removes moisture from the beans in a controlled, even, and repeatable process to a precisely programmed value. The entire drying stage takes only three days.ROASTER’S OPINIONThis is coffee in a tuxedo — and not just any tuxedo, but one tailored by a pre-war master craftsman.It feels as though 120% of both the bean’s potential and the washed method itself has been extracted here. Crystal-clear fruit layers and a definition of transparency that borders on architectural precision.

Kirinyaga is a region renowned for producing some of the finest lots in the entire country, known for their remarkable depth and complexity.ABOUT THE PROCESSINGThe varieties SL28, SL34, Batian, and Ruiru are hand-picked by smallholder farmers from their few-hectare farms and delivered to the washing station, where they undergo the first manual sorting. After the beans are separated from the fruit, the coffee ferments overnight in tanks. It is then washed and sorted into four quality grades. Drying takes between 10 and 20 days, depending on the weather.ROASTER'S OPINIONYou can recognize true mastery in processing when a coffee, even more than a year after drying, still displays beautiful depth, complexity, and well-structured layers. Fresh Kenyan coffees only start arriving in Europe around mid-year, so until then we get to enjoy fruit-forward lots like this one.

The skin is removed, but the sticky “honey” layer remains on the bean, giving the coffee natural sweetness and a fuller body.The beans are then moved to concrete patios, where they are dried in thin layers and regularly turned to ensure even drying and to prevent over-fermentation or mold. The drying process continues until the ideal moisture content of 9.5–11% is reached. The result in the cup is an intensely aromatic, juicy coffee with clear floral and lychee notes, hints of grapes, a delicate fermenty sparkle, and a long nectar-like finish.ROASTER’S NOTECan’t beat them? Join them. For some people this co-ferment is a revelation, a grimace, a guilty pleasure, a self-gift, an unreasonable financial decision, and for the less refined, simply a reason to hate. And somehow all of that is fine. It’s such a massive fruit bomb that we probably should add a warning pictogram. I won’t even describe the profile because people will say I’m making it up.V60 RECIPECoffee dose – 19 gWater dose – 50 g → 300 gWater temperature – 88–90°CGrind size: 8.4 EK43; 23 clicks ComandantePlace the filter in the V60 and rinse it with a strong stream of water so it adheres well to the walls.Grind the coffee, add it to the V60, and level the coffee bed.Pour 50 g of water, aiming at the dry spots to wet everything thoroughly. If the coffee is very fresh (foaming strongly when it contacts water), you can extend the bloom to 2 minutes or add an additional bloom at 1:00 (pour another 50 g and wait until 2:00).At 1:00 (or 2:00), begin pouring into the center of the V60 (circles about the size of a 5-złoty coin), using circular movements at a pace of 6–8 g per second (slightly below the second enlarged dot on the Acai kettle), keeping the stream just below the point where it breaks.When you reach 250 g, lower the kettle to about 3 cm above the water surface (no need for circular movements anymore) and finish pouring to 300 g.Perform a shake while holding the narrowing at the base of the V60 (both horizontally and vertically). If the coffee drains too quickly, give it a swirl.The total brew time should be 2:30–3:00, or 3:30–4:00 with the extended/additional bloom. Try blooming with 70–80°C water, or pour off part of the bloom water. You’ll notice a big difference, so experiment.
