So farmers have had to adjust to the conditions and as a consequence the use of water is limited. On top of that, they have been fermenting their coffees into closed environments (often thick plasticbags under shade) to allow yeasts to form and add a distinctive fruity profile to their cups. Of course they supervise the levels of fermentation to avoid defects.The story of the Santacruz brothers fits within many farmers in Peru as they used to sell their entire crops to local buyers that would arrive at their farm door and take the bags away at a cheap price. Now they deliver their coffee to Cultivar, where after through quality control they receive a much higher price for it. This gap in price is a great help in their income that they complement with growing cattle. Cajamarca is very well known for its cattle culture, providing the region with an abundant amount of cheese, milk and beef.As for the future of the Santacruz family and their coffee business we have very good hopes. Jesus, one of the brothers, has recently bought a few extra hectares of land with the idea to plant more exotic and delicate varieties like Geisha and he is a good representation of the younger generation of farmers that will take the lead in the coffee production in the years to come in Cajamarca.ROASTER'S OPINIONSuper floral and sweet coffee that reminds us slightly of the Geisha botanical variety, even though it isn't one.RECIPE V6016g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that  98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. In this part of the country, fruit plantations dominate, particularly passion fruit, which is why coffee is grown here on a small scale and with tremendous attention to every detail. Only fully ripe, red coffee cherries are selected for the harvest.ABOUT THE PROCESSINGThis exceptional character is partly due to the incredibly rare raisin honey processing method. This is an advanced fermentation process that combines elements of natural drying and honey processing.The first stage begins even before depulping. Freshly harvested coffee cherries are dried whole in the sun until they begin to resemble raisins. During this process, a highly intense concentration of sugars and aromas takes place within the fruit. The pulp becomes denser, stickier, and incredibly sweet, while fermentation develops deep fruity and winey notes.Only after being partially dried do the cherries move to the next stage, which is the removal of the skin. In classic honey methods, this happens almost immediately after harvesting, whereas here, the fruit undergoes controlled pre-drying first. As a result, a massive amount of pectin and sugars remains with the bean.Next, the coffee goes into the actual honey fermentation, during which the beans dry alongside a very thick layer of sticky pulp. This high pectin content is what accounts for the exceptionally creamy sweetness, intense aroma, and characteristic notes reminiscent of raisins, fermented fruit, and sweet wine. The process is extremely demanding and requires continuous monitoring of temperature, humidity, and even drying. Even a minor mistake can completely disrupt the coffee's profile.The result is a coffee with intense aromatic performance, very high sweetness, and a complex, multi-layered acidity. Raisin honey yields a juicier and deeper profile than classic honey, while maintaining greater clarity of flavor than many natural coffees.ABOUT THE VARIETYThe botanical variety itself – Geisha – also plays a huge role here. This is one of the most prized and prestigious coffee varieties in the world. Geisha originally hails from Ethiopia, but it gained global fame in Panama, where it began breaking price records at the most prestigious specialty coffee auctions.The uniqueness of Geisha is determined above all by its incredible sensory profile. This variety can generate exceptionally clean, floral, and tea-like aromas, which are often associated more with jasmine, bergamot, or exotic fruits than with classic coffee. Geisha typically has a very elegant structure, a silky body, and a distinct, juicy acidity.However, it is a variety that is extremely difficult to cultivate. The trees yield smaller crops, are more climatically demanding, and require high growing altitudes to fully develop their potential. Additionally, harvesting must be highly precise, as even a slight immaturity of the fruit can heavily impact the final taste. Although it will not put you on your feet, it is a ticking fruit bomb. Decaf coffees have long had their place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first encounter, it delivered a juicy punch straight to the taste buds. Is this really a decaf? This fruity? This expressive? We could not walk past it indifferently, nor resist sharing what the renowned Nogales farm is doing with caffeine free coffee. Nogales is a family run farm led today by Oscar Hernandez, a third generation farmer from Huila, who has been breaking coffee conventions for years, a mindset confirmed by a Cup of Excellence win in 2006.For the sensory description, we limited ourselves to three descriptors, although the truth is that the profile could easily hold almost an entire palette of Mamba like flavours. The cup is complex and intense, hard to confuse with anything else. A pronounced sweetness is supported by well balanced acidity and a round body. If you enjoy fruit forward profiles, avoid caffeine and do not want to give up either, these beans are made for you.The processing begins in a classic way. Hand harvesting, flotation to separate only ripe cherries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.Only then does the decaffeination begin. First, the beans are immersed for four hours in hot water at 40°C, allowing the caffeine to be extracted. This step is repeated twice. Next, a natural must is used, an extract obtained from the husk and pulp of the coffee cherry. The entire process relies solely on components derived from the coffee itself. Finally, the beans are washed once more and dried again, preserving clarity in the cup and the coffee’s natural sweetness.ROYAL BEANSWhat’s behind the name Royal Beans? Just like crocuses pushing through the ground, this spring coffee comes with some lovely florals of its own.It’s a floral and properly complex cup. Fresh like pomelo, and sweet like a handful of freshly picked berries. A classic washed process, the traditional Kurume variety typical for the region, and a profile like a forest glade in bloom.Credit goes to the producer, Gemechu Shonora. This is the second harvest in a row we’ve featured on the menu, and once again it’s hard not to be impressed. Safe to say, not the last.Hand-picked cherries, flotation, depulping, then wet fermentation for 24–36 hours. After washing, the coffee moves to raised beds where it dries for around two weeks. A short rest in the warehouse follows, and only then does it head to Addis. Clean and straightforward, exactly how we like our washed Ethiopias.That’s our version of spring, sealed in a colourful bag. The crocuses are only just coming up, and this Ethiopia is already sitting proudly on the counter, waiting to be brewed.Store in a cold and dry space.
