Drip Bags from the Kafar roastery are a selection of coffees in the form of a sachet with ground coffee, which you place on top of a mug and brew with hot water – you do not need to worry about a grinder, filters, or a dripper. The freshly roasted coffee is packaged in a way that allows you to enjoy specialty coffee without losing any quality. The sweetness of ripe fruits, a full body, and an intense aroma. Light roast – perfect for pour-over brewing methods such as drip, Chemex, AeroPress, French Press, batch brewers, and other alternative methods. In the cup, you’ll find notes of orange, mango and mik chocolate.Origin: Costa Rica Region: Naranjo, West ValleyFarm: Los CipresesProcessing method: Natural AnaerobicVariety: MilenioAltitude: 1600 – 1650 m a.s.l.ABOUT THE FARMBehind this coffee is the Salazar family from the Los Cipreses farm in Naranjo, located in the West Valley region of Costa Rica. For over four decades, they sold their coffee to local cooperatives, but since 2018, they began developing production with a greater focus on the specialty segment. A significant step was the launch of their own mill, Beneficio San Cristóbal, which gives them greater control over quality and processing. The crops are situated at an altitude of approximately 1600–1650 m a.s.l.ABOUT THE VARIETYMilenio, also designated as H10, is a variety with very high yield potential, high resistance to coffee leaf rust, and good quality potential at higher altitudes. World Coffee Research identifies it as a hybrid with very high productivity and good quality above 1300 meters. In practice, it is a material that successfully combines agronomic traits with sensory potential.ABOUT THE PROCESSINGNatural anaerobic is a combination of two process elements. "Anaerobic" refers to fermentation in an environment with limited or eliminated access to oxygen, usually in closed tanks. "Natural," on the other hand, means that the bean is dried within the whole fruit rather than after the pulp has been removed. Such processing typically enhances flavor intensity, sweetness, and the fruity character of the coffee while providing a more saturated profile.RECIPERatio: 60 g of coffee per 1 liter of waterWater temperature: 93°CGrind size: medium-coarseBrewing time: 3:30 minutesMethod: Pour the water over the coffee in 5 equal parts (e.g., 5x 60g) at 30-second intervals. The water should completely filter through the coffee between pours. If the water flows too slowly or too quickly, adjust the grind size to coarser/finer.Remember to use soft, filtered water!Store in a cold and dry space.
Whole-bean specialty coffee from Colombia, roasted by Heresy roasting brand. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. The brew resembles the flavour of flowers, blueberry, tropical fruits and citrus fruits.Origin: ColombiaRegion: CaucaFarm: Santa BarbaraProcessing: Experimental washedAltitude: 1850 m a.s.l.Cupping score: 88 / 100ABOUT THE FARM AND THE COFFEE PRODUCER We are dealing here with a boutique, experimental farm that we visited in August 2025. It belongs to Banexport – a company that handles pretty much everything along the entire local supply chain: production, export, collaboration with smaller producers from the Cauca region, as well as innovations and modern technologies in coffee production and processing.A whole range of the most prized Arabica botanical varieties is grown here (Geisha, Pink Bourbon, Java, Wush-Wush, or Laurina) across 14 hectares, most of which constitute a natural nature reserve with designated ecological trails. Many endemic plant and animal species make up an incredibly diverse ecosystem here.Workers at Santa Barbara can count on stable employment all year round, not just during the season. Everything is done formally here, with a social security package, insurance, and a wage that is significantly higher and fairer in the context of the conditions that usually still prevail in Arabica-producing countries.Interestingly, the farm does not have its own processing station, and the entire process, from fermentation to drying, takes place in... a laboratory in the very heart of the city of Popayan, the capital of the Cauca region.ABOUT COFFEE PROCESSING ON THE FARM The Pink Bourbon variety is hand-picked and, immediately after harvesting, transported in a refrigerated truck (sic!) to the Area 18 station in the center of Popayan. A one-kilogram sample is taken for preliminary analysis, where after obtaining data, such as sugar concentration or density, the decision regarding the final process is made. The cherries are cleaned and sorted, then undergo depulping (separating the seed from the fruit) and are placed in a bioreactor, which allows for full control of the fermentation process and manipulation of variables such as temperature, pH, pressure, or oxygen saturation. The latter stimulates the yeast strains naturally occurring in the fruit – during 48 hours of fermentation, this yeast converts sugars into aromatic precursors, which are responsible for the characteristic floral and fruity notes that lie within the Bourbon Rayado. After fermentation, the coffee is washed three times.Drying takes place mechanically in an advanced laboratory machine, which removes water from the beans to a precisely programmed value in a controlled, even, and repeatable process. It lasts just three days.ROASTER'S OPINION100% Pink Bourbon in a Pink Bourbon. An incredibly clean, complex profile – flowers plus a whole range of fresh fruits. Organized like jam jars in a grandmother's pantry.ROYAL BEANSWhat is hidden behind the name Royal Beans? If Specialty beans represent the peaks of coffee, our Royal Beans reach the Himalayas! The Brazilian beans are dried on concrete patios in a dry climate, while the Ugandan beans undergo selection, flotation, and drying on raised beds with fermentation, giving them a fruity character. The combination of both creates a sweet, tropical-chocolate profile, known as LOW Jungle Fruit. The Brazilian beans were decaffeinated using supercritical CO₂, which removes caffeine while preserving aroma and structure. The brew is light, intensely tropical-fruity with a delicate chocolate background, full-bodied with smooth acidity, and a long, fruity finish that highlights its character. In 250 g of brew prepared according to the V60 protocol, 57.2 mg of caffeine was measured, representing approximately a 70% reduction compared to the fully caffeinated version.ROASTER’S NOTELOW Jungle Fruit presents itself as a brew with a pronounced tropical-fruity profile and a subtle chocolate background. Juicy notes of pineapple and passion fruit dominate, enriched by accents of apricot and ripe stone fruits. The pronounced sweetness adds depth to the flavor, while the rich body creates a dense, enveloping texture in the cup.The delicate, low acidity harmonizes with the chocolate base, and the long, fruity finish emphasizes the tropical character of the blend. On the other hand, Pampojilá, located in the upper part of the volcano above the lake, with volcanic soils and a natural mist that protects the coffee trees, was renovated by the Herrera family in 2012 and continues to offer coffees with an exceptional taste and a rich, century-old history.ROASTER OPINIONA balanced and very complex ferment—a bit of tropical fruit, a bit of port wine, and dark chocolate to top it off? You can experiment with it and constantly find something new.V60 RECIPECoffee dose – 19gWater dose – 50g > 300gWater temperature – 88-90°CGrind 8.4 EK43; 23 clicks Comandante.Place the filter in the V60, rinse it under a thick stream of water so that it adheres well to the walls.Grind the coffee, dose it into the V60, and level the coffee bed.Pour 50g of water, aiming at the dry parts to wet everything thoroughly. If the coffee is very fresh (foams intensely upon contact with water), you can extend the pre-infusion to 2 minutes or perform an additional one at 1:00 (pour another 50g and wait until 2:00).At 1:00 (or 2:00), start pouring, aiming right at the center of the V60 (circular movements the size of a 5 PLN coin), maintaining a pace of 6-8g per second (this is slightly below the second enlarged dot on the Acaia scale) and keeping the water stream just below the point where the stream breaks.Once 250g is poured, lower the stream to about 3 cm above the water surface (you no longer need to make circular movements) and finish pouring at 300g.Perform a shake holding the narrow part at the base of the V60 (horizontally and vertically). If the coffee draws down too quickly, do a swirl. The total time should be 2:30-3:00, or 3:30-4:00 with the additional/extended pre-infusion. Try pre-infusion with water at a temperature of 70-80°C or discard part of the pre-infusion water—you will see a big difference, experiment! This coffee also makes a mega good espresso brewed at a 1:3 ratio!Store in a dry and cool place.

Peñas Blancas is exactly that kind of Colombian coffee – sweet, with a tropical character and a hint of warmth that makes every cup bring a sense of peace and satisfaction. It stands out with notes of ripe fruit and caramel sweetness, while remaining balanced and very pleasant to drink.Peñas Blancas is a farm in the Huila region, established by Nestor Lasso and Jhon Vergara at an altitude of 1,650–1,800 meters above sea level. The Castillo variety is known for its resilience and naturally clean flavor profile – and at this altitude, it takes on the balanced sweetness and clarity that the Huila region is famous for. Only fully ripe cherries are hand-picked, which are then processed using the natural method and dried on raised beds for 25–30 days under controlled conditions. Temperature and humidity are carefully monitored throughout, and the cherries are turned regularly to ensure even drying and controlled fermentation.ROASTER'S OPINIONThe new batch of Peñas Blancas delivers exactly what we expect from this farm's coffees – intense notes of banana and mango give it a ripe, fruity character, supported by the sweetness of toffee. Whole-bean specialty coffee beans from Vietnam, roasted by COFFEE PLANT from Poland. Light roast, perfect for filter coffee machines, drippers, Chemex, AeroPress, French Press, and other pour-over brewing methods. You can expect hints of stevia, green apple, malt, and tropical fruits.Country: VietnamRegion: SaigonProducer: Quang TriProcessing: AnaerobicVarietal: LibericaAltitude: 600m a.s.l.TASTE - intense sweetness and sticky bodyWe have never tasted such a strange coffee before – everything here is unusual. First of all, the species – it is not Arabica, it is not Canephora, and it is not Excelsa. It is a very rare Liberica. Its beautiful, tiny coffee cherries hide a great deal of sweetness and an interesting character. Secondly, Vietnam – an origin that we simply avoid, and thirdly – this Liberica grows at an altitude of 600 meters above sea level. To top it off, a very long fermentation was added to the coffee. All of this made the coffee very intense. In the aroma, it smells of fruit, malt, and delicate herbal notes. In the flavor, you will find very intense notes of stevia, apple, and tropical fruits. Everything is crowned by a long, very sweet, malty aftertaste. The acidity is low but well-developed. The body is high and very sticky, reminiscent of the natural sweetener that is stevia. This is a coffee that tastes like nothing we have ever had before!PROCESSING - intense fermentationIn the case of this coffee, we are dealing with a fairly simple processing method – anaerobic natural. Although the processing itself is quite classic, its length gives it a unique character. After being delivered to the washing station, the coffee cherries were placed into plastic vacuum bags. There, the cherries ferment for as long as 120 hours. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.PLANTATION - Quang Tri - Liberica straight from Vietnamese Saigon!Quang Tri is a coffee shop, a roastery, and a coffee producer. On the production side, Quang Tri operates by looking for small, natural plantations and rare botanical varieties – Canephora, Excelsa, and Liberica. And that is how lot 96b was created – it is a blend of Libericas coming from two very small farms.Next, the coffee was transported to one of the processing stations that Quang Tri has been working with for many years. There, the coffee was subjected to an intense fermentation process. First, the cleaned coffee cherries ferment for as long as 120 hours in plastic, airless bags. After this time, the cherries are spread out on raised beds and dry for another 30 days. At the very end, the seeds are stripped of the remaining pulp and packed into GrainPro bags.ROASTER'S OPINIONThere are rare coffees, there are strange coffees, there are unique coffees – this one combines everything. First of all, we are dealing with Liberica – in our several-year history, we have tasted maybe 2 Libericas and they were not very good. Secondly, it is a coffee from Vietnam, which is an origin we generally avoid. Thirdly, we have a very intense fermentation, which in itself is not that strange. However, Quang Tri produced only 180 kg of this lot – we bought 60 kg from this lot. The coffee is very sweet, even sticky – honey-like, though this sweetness is definitely much more reminiscent of stevia than honey. It has a light, fruity acidity reminiscent of apple, plus some tropical fruits and malt or dark beer. This is a very interesting option for people looking for something truly unique.ROYAL BEANSWhat’s behind the name Royal Beans? If Speciality beans are the pinnacle of coffee, our Royal Beans reach the Himalayas! In this series, we present the very top of the coffee pyramid, the crème de la crème, as precious as crown jewels. Our Funky Decaf brings a sweet and vibrant cup profile to the world of decaffeinated coffee. This anaerobic fermented Natural Decaf from El Vergel Estate in Tolima, Colombia offers tropical fruit notes, banana bread sweetness, and a juicy, expressive character. Created for those who want all the flavour and complexity of specialty coffee without the caffeine. For many years, we said no to decaf. Today, a new generation of decaffeination is changing that: Using a natural sugarcane EA process, caffeine is gently removed while preserving sweetness, structure, and the coffee’s vibrant flavour profile.Store in a cold and dry space.

This is not the case. Here we have a beautifully balanced coffee, in which the fermentation notes take the form of a good whiskey, perfectly enveloping the blackberries and blueberries in the foreground.ABOUT THE FARMMahembe is a company owned by Justin Musabyimana. It consists of three farms and two washing stations. Justin Musabyimana uses his own coffee cherries but also buys them from farmers neighboring his farms. The coffee you are drinking comes from the 13-hectare Murundo farm and its surroundings, which are located in the immediate vicinity of the Nyungwe Forest National Park. The coffee cherries were processed at the Nyarubuye washing station. The Nyungwe Forest is located in southwestern Rwanda. It borders Burundi to the south and Lake Kivu and the DR Congo to the west. Nyungwe is considered the best-preserved mountain rainforest in Africa. It is located on the watershed between the Congo and Nile basins.ROASTER'S OPINIONThis coffee is jammy in the best sense.
