You can expect hints of linden blossom, honeydew honey, hungarian plum and cherry.Origin: RwandaRegion: Western ProvinceFarm: NyamyumbaProcessing: NaturalVariety: BourbonAltitude: 1700 m a.s.l.ABOUT THE COFFEERwanda Nyamyumba Natural is a coffee of exceptionally subtle and elegant character. The cup reveals an aroma of linden flowers, which seamlessly transitions into a honey-like sweetness reminiscent of honeydew honey. The profile is complemented by juicy notes of Damson plum and cherry, which lend the brew a light, fruity depth. Thanks to the natural processing method, the coffee retains intense sweetness and aromatic complexity. The secret behind this coffee's character lies in the natural process, one of the oldest methods of preparing coffee beans. The process begins with the hand-picking of fully ripe coffee cherries. Selection at this stage is crucial, as only perfectly ripe cherries ensure the subsequent sweetness and clarity of flavor. After harvesting, the fruit undergoes an initial selection to remove unripe or damaged cherries. Water tanks are often used for this purpose – lower-density fruits float to the surface and are discarded, while the highest-quality cherries sink to the bottom and proceed to the next stage of production.Next, the whole fruits—complete with skin and pulp—are spread in a thin layer on raised drying beds. This is where the most critical part of the natural process begins. For several weeks, the fruit slowly dries in the sun, allowing the sugars and aromatic compounds from the pulp to permeate the beans inside. This stage is responsible for the characteristic sweetness, fruitiness, and intense aroma.During drying, the cherries are regularly turned to ensure even moisture evaporation and to prevent uncontrolled fermentation. Farmers closely monitor the temperature and drying time, which typically lasts from two to even four weeks. Once the fruit reaches the correct moisture level, they resemble hard, dried coffee cherries.Only at the end of the process are the dried fruits sent to the mill, where the dried skin and pulp are mechanically removed. This yields the green coffee beans, ready for sorting, grading, and export. Thanks to this slow, natural process, the beans from Nyamyumba acquire exceptional sweetness and aromatic depth. In the cup, this translates into an elegant flavor profile where linden flowers meet honey sweetness, while notes of Damson plum and cherry add a juicy, fruity structure. This is a calm, harmonious Rwanda that demonstrates how delicate and simultaneously aromatic natural-processed coffee can be.Store in a cold and dry space.

It is characterized by two types of climate: cold and temperate, and coffees from this area differ from the rest of Huila – they are more acidic and delicate, with distinct fruity notes. Our coffee comes from a selected group of producers from the upper part of the municipality of Palestina, located at an altitude of approximately 1700 meters above sea level. This group of farmers has specialized in cultivating varieties such as Tabi and Caturra. Cooperativa Departamental de Caficultores del Huila Ltda. CADEFIHUILA is a non-profit organization and one of the most important coffee cooperatives in Colombia. Its reach covers 27 municipalities, where a support network operates consisting of 45 coffee purchase points, 46 fertilizer stores, 36 agricultural supply stores, 16 permanent cupping laboratories, one mobile laboratory, and 7 points offering drying services. CADEFIHUILA implements programs aimed at achieving high production standards on farms. These standards are based on codes of conduct such as Fairtrade, Rainforest, 4C, and C.A.F.E. Practices. The development of certification processes for these specialized coffees allows the cooperative to meet market demand for coffee purchased under specific conditions.ABOUT THE VARIETYCaturra is a coffee variety that originated as a natural mutation of the Bourbon variety. It was discovered on a plantation in the state of Minas Gerais in Brazil between 1915 and 1918. The name "Caturra" comes from the word "Guarani", which means "small". This variety is characterized by the short stature of the plant. Due to its small size and closely spaced branches, it can be planted close together, which increases the yield per given area. Caturra contributed to the intensification of coffee cultivation, especially in Central America, where it was introduced into cultivation in the 1940s. This variety also played a significant role in breeding coffee plants resistant to coffee leaf rust, contributing to the creation of the "Catimor" family of varieties. Tabi is a relatively young variety, created in Colombia as a cross between Bourbon, Typica, and the disease-resistant Timor Hybrid variety. The word "Tabi" comes from the language of the indigenous people of Colombia and means "peace" or "life".ABOUT THE PROCESSINGThe coffee undergoes a traditional washing process, which begins with harvesting ripe cherries, weighing them, and leaving them for 24 hours in a processing tank. Next, the beans are depulped and placed in a water tank, where they are rinsed twice after about 12 hours. Finally, the coffee is dried in the sun or mechanically, depending on the producer's capabilities.Store in a dry and cool place.

Intense, juicy, and multidimensional — it tastes like thick blackcurrant juice with a touch of drunken cherry, elderflower syrup, and rosehip. In the cup, you will find plenty of fruity sweetness, depth, and a slightly winey character that develops beautifully as it cools. This batch is exceptionally intense and expressive. The aroma alone resembles a thick fruit liqueur: wild berries, currant juice, drunken cherry, and rosehip flowers. The flavor also features the characteristic sweetness of elderflower syrup, giving the whole profile an almost tea-like and floral finish.ABOUT THE PROCESSINGThis incredibly juicy profile is primarily the result of the anaerobic natural process — a method that requires immense control and experience. Only ripe, red coffee cherries are used after harvesting. Next, the whole cherries are placed in tightly sealed bags, where they ferment for 100 to 120 hours in an oxygen-free environment. The absence of oxygen completely changes the course of fermentation — different groups of microorganisms develop, creating compounds responsible for more winey, intensely fruity, and floral flavor notes. After the fermentation is complete, the cherries are spread out on raised drying beds. There, the coffee dries for about 15–20 days. During drying, the cherries are regularly turned to ensure the process runs evenly and without the risk of over-fermentation or the appearance of unwanted notes. It is this long and controlled drying that stabilizes the flavor profile and preserves the immense intensity of the aromas while maintaining a clean cup.The result? A coffee that tastes a bit like fruity red wine, a bit like premium currant juice, and a bit like a dessert with floral syrup. Fresh, syrupy, and highly aromatic. Perfect for those looking for intense sensations, high sweetness, and fermentary depth in alternative brewing methods, but without the alcoholic or barrel-aged notes.Store in a cold and dry space.

However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and cultivating a whole range of select, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, or Pacamara.Currently, El Vergel is conducting continuous research on bacteria and yeast to achieve even greater precision in controlling fermentation, and consequently, modulating flavor. In addition to coffee production, the Bayters are the force behind Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee directly, without any intermediaries.ABOUT THE COFFEE PROCESSING ON THE FARMThe Caturra variety, hand-picked, processed as washed, and decaffeinated using the sugarcane method with ethyl acetate, which reduces the caffeine content to approximately 0.1%.ROASTER'S OPINIONHonest truth – in a blind tasting, we would have trouble realizing this is a decaf. It tastes like top-tier, classic washed Colombias. Distinct, crisp fruit, but in espresso, it offers primarily high sweetness and plenty of chocolatey notes in the aftertaste. Top-notch!Store in a cool and dry place.
