Heresy - Antidotum Filter 1001g

Manufacturer: HERESY

Roasting date: 30.06.2026

Some 75% of all coffee produced in the world comes from Brazil, the vast majority being commercial grand blends from around the region. In the world of speciality coffee, we have to deal with those as well. That's why we created the Antidote, a coffee that is an antidote to the flood of santos, cerrados, and other coffees, that are far from transparent and demonstrating the producer's role in the whole process. This is for fans of the classics who do not let go of quality. For those who value true fair trade. The first classic brazil in our range!Specialty quality bean coffee, roasted at Heresy roastery by the 2020 Roasting Runner-up. Light roasted, designed for pour-over brewing methods or pour-over in a cup. A profile with a classic Brazilian flavour, with nut and chocolate notes, in the highest quality.Country: BrazilProducer: 20 members of San Coffee CooperativeFarm: San CoffeeVarietal: mundo novo, topazio, catuaiProcessing: naturalAltitude: 900 - 1200 m a.s.l.PROCESSING20 manufacturers, the same natural processing technique calibrated between them. Thanks to close cooperation and rigid standards, each lot is processed and dried in an almost identical manner.THE FARMSan Coffee is a rarity in Brazil. Most co-operatives in the country are made up of hundreds or thousands of producers, whose role is often limited to just supplying the coffee, nothing else. San Coffee is made up of only 20 producers who also own the company, with equally distributed shares of 5% each. We have been working with them since the very beginning of Heresy, presenting fruity microlots like Taquaral, Campo Alegre and Samambaia. This time it's time for the classic product of their work!ROASTER'S COMMENTIn the cup as classically as possible. Acidity practically invisible, shadow work. Chocolate and nuts in the liquid form. You know what I mean!PACKAGINGThe coffee is packed in a brown jar made of PET, 100% recyclable or reusable. In case you're thinking "oh no, plastic!", bear in mind that standard coffee packaging is also made of plastic (and a few other materials, making it often harder to recycle). We also thought about glass, but it's heavier, more expensive, breakable and, wait for it, has the same or greater (sic!) environmental impact! A plastic jar turns out to be pretty eco-friendly, just remember to put it in the right container, or find a creative way to reuse it at home.Store in a cold and dry space.

However, the Bayter family has rapidly transformed the plantation into one of the most advanced in the industry in terms of complex processing and cultivating a whole range of select, highly sought-after botanical varieties, such as Geisha, Pink Bourbon, Laurina, or Pacamara.Currently, El Vergel is conducting continuous research on bacteria and yeast to achieve even greater precision in controlling fermentation, and consequently, modulating flavor. In addition to coffee production, the Bayters are the force behind Forest, a company involved in both the export and import of green coffees, which means we were able to purchase this coffee directly, without any intermediaries.ABOUT THE COFFEE PROCESSING ON THE FARMThe Caturra variety, hand-picked, processed as washed, and decaffeinated using the sugarcane method with ethyl acetate, which reduces the caffeine content to approximately 0.1%.ROASTER'S OPINIONHonest truth – in a blind tasting, we would have trouble realizing this is a decaf. It tastes like top-tier, classic washed Colombias. Distinct, crisp fruit, but in espresso, it offers primarily high sweetness and plenty of chocolatey notes in the aftertaste. Top-notch!Store in a cool and dry place.

It is created through the cooperation of Damian Durda from Change of Tone with Jhon Alvarado and his family, who have consistently developed the production of high-quality specialty coffees in the Chirripó, Brunca region for years. The anaerobic natural process of this coffee highlights its intense sweetness and complexity, while preserving its clean character. We recommend it primarily for filter brewing methods, where its complex flavor profile and subtle, smooth aftertaste are most memorable.ABOUT THE FARMJhon Alvarado, along with his son Antonio and the whole family, manage sixteen hectares of crops spread across four farms in the Chirripó, Brunca region in southern Costa Rica. This is exactly where lots based on varieties such as Gesha, SL28, or Ethiopia 47 are created, which are now processed in a newly built dry mill launched in 2025.From the first experiments conducted on the Finca La Torre farm to multiple high rankings in the Cup of Excellence competition, the Alvarado family's business is based on conscious development, consistency, and a clearly defined vision of quality. Their approach combines modern processing methods with great attention to transparency and the character of the southern Costa Rican terroir. The results are coffees with high clarity and a distinct sensory profile — ranging from elegant Geshas and complex anaerobics to the honey process. This specific, selected PB lot, subjected to the anaerobic natural process, presents an intense character with notes of cherry, rum, and nougat, along with a dense, sweet structure.Store in a dry and cool place.

In the cup, you’ll find tasting notes of dark chocolate, hazelnut, and vanilla.Country of origin: BrazilRegion: MogianaVariety: Mundo NovoFarm: Fazenda MataoProcessing method: NaturalElevation: 790–940 m a.s.l.ABOUT THE FARMThis coffee comes from Fazenda Matão, located in the Mococa (Mogiana) region in the northern part of São Paulo state. The farm sits at an altitude of 790–940 meters above sea level, surrounded by green hills and natural reserves. It is a family-owned estate dating back to the 1960s. The current owner, Marco Antonio Guardabaxo, together with farm manager Marciano de Jesus, consistently develops the plantation by introducing modern and sustainable practices.Families of farm workers live on the property, and coffee cultivation is an integral part of the local community. The farm is environmentally conscious — among other initiatives, it uses a drip irrigation system that reduces water consumption and ensures even cherry development.PROCESSINGThis lot was processed using the natural method. After harvest, the cherries are dried on large concrete patios for 10–20 days, then further stabilized in wooden silos for several weeks. It is this slow fermentation process inside the fruit that gives the coffee its density, creaminess, and deep sweetness.Store in a cold and dry space.

The flavour of the brew resembles dark chocolate, nuts, caramel and orange zest.Country: IndonesiaRegion: Sepakung, Central Java Farm: Vins & BedjoVarietal: TugusariSpecies: Canephora (robusta)Altitude: 1100 m a.s.l.Processing: Anaerobic naturalABOUT THE FARMVins and Bedjo are two enthusiasts who persistently experiment in search of the perfect Canephora flavor. Their annual production is currently very small – around 2 tons of green coffee – but in their case, "every bean matters." There is no room here for cheap, container-scale production, so every coffee cherry cultivated by them is treated with due attention. The farm is pictorially located on the slopes of the Telomoyo volcano, surrounded by dense jungle. Once every four years, the eruption of the nearby Merapi volcano covers the entire region in volcanic ash, which is incredibly fertile and promotes the development of sweetness and spicy characteristics in the coffee.ABOUT THE PROCESSINGExperiments with Canephora are particularly important to them, which naturally caught the attention of the Brothers (fine robusta neophytes). This specific lot underwent their signature process – quadruple anaerobic fermentation. The fruits spend five days in each of four consecutive tanks, being cleaned of fermentation byproducts in between. This is Vins and Bedjo's proven method to "clean up" robusta, giving it a clear character and a great, mild profile.ABOUT THE SPECIESWe are glad that you are exploring coffea canephora, often called robusta, together with us. For years, this species was mainly associated with cheap blends, but well-cultivated canephora can be intense, sweet, creamy, and surprisingly complex. That is precisely why it is appearing in our selection — to show that the world of coffee is broader than arabica alone. However, it is worth brewing it a bit differently. Canephora is more intense and extractable, which is why we recommend lower temperatures: 86–89°C (it is best to start at 88°C). Water with lower mineralization — around 70 ppm — also works well. You can simply mix your water with distilled water in a 1:1 ratio or use low-mineral water, such as Żywiec Zdrój.Do not be surprised if it tastes different from the coffee you know. That is precisely the point.ROASTER'S OPINIONHere is what we love fine robustas for. A deep malty profile with notes of cocoa and nuts, a clean and clear brew, a heavy, pleasant body, and virtually zero acidity. The ideal everyday bean.Store in a cool and dry place.

The company was founded by Syoum and Emame, and is currently run by their grandchildren. Bette Buna is committed to improving the quality of life for its community members – it teaches local farmers how to improve soil quality, restore agroforestry systems, and understand the importance of harvesting ripe cherries. Ripe cherries weigh more and yield better coffee, so farmers receive higher pay per kilogram, as well as a quality premium. The company also distributes over 350,000 seedlings from its own nursery every year.Fun fact: The coffee underwent a decaffeination process at the Coffein Compagnie using a solution of water and ethyl acetate, which occurs naturally in sugar cane, coffee, and fruits. In several stages, caffeine was gently and selectively extracted from the beans, allowing the green coffee to retain a profile closely linked to the original batch.Store in a cold and dry space.
