DECAFFEINATION METHOD


The decaffeination process of this coffee is based on the Carbonic Natural™ method, which utilizes natural carbon dioxide to remove caffeine in an exceptionally gentle manner. The green beans are first moistened with water and steam, causing them to swell and open their structure. This allows for the selective separation of caffeine without altering the other components responsible for flavor and aroma.


In the next stage, liquid CO₂ under high pressure acts as a natural solvent, removing only the caffeine while leaving valuable compounds within the beans – such as fats, proteins, sugars, and aromatic acids. The process takes place in cycles where the carbon dioxide is recovered and reused until the caffeine is almost completely removed.


After the decaffeination is complete, the beans are gently dried at a low temperature to restore their natural moisture. Thanks to the slow and gentle nature of the entire process, the coffee retains its original character – the full flavor, aroma, and quality that make it stand out even in its decaffeinated version.
