Willian Hoyos, Julián Sandoval, Rubén Castillo, and Yovany Muñoz grow coffee on several-hectare farms in the El Tambo micro-region, located west of the capital of the Cauca department, Popayán.The phenomenal quality of their coffee is driven by the following synergy of factors:the microclimate of El Tambo and cultivation at elevations exceeding 2,000 meters above sea level result in slower cherry maturation, while lower humidity facilitates the drying process: processed coffee loses moisture in a predictable and controlled manner,a well-thought-out and precisely planned system of pruning and thinning older, less productive parts of the coffee trees to ensure optimal airflow and sunlight penetration,the producers’ modern knowledge of fertilization combined with a traditional practice locally known as “re-re,” which involves selectively harvesting overripe, underripe, or dried cherries and leaving them on the ground near the coffee trees. As a result, more pests feed on this “waste” instead of attacking healthy plants,and, of course, a conscious and strict selection of cherries harvested at optimal ripeness, supported by years of experience in fermentation and drying processes.Harvesting is carried out exclusively by local residents, who form the core of the community of several small villages in El Tambo. This community has naturally developed over generations around the continuous, seasonal cycle of coffee cultivation.ABOUT COFFEE PROCESSING ON THE FARMCastillo variety, hand-picked, with the beans separated from the fruit immediately after harvest. Fermented in tanks for approximately 36 hours, then washed up to three times to completely remove any remaining mucilage from the parchment. Slowly dried for about 15 days on raised beds. Homogenized and stabilized for a further several days.ROASTER’S NOTEA time machine. I remember this profile of washed Colombian coffee from a decade ago. Then it disappeared for a few years, or became much harder to find. But it’s back again. Multi-layered, elegant, vibrant, and soft. Everything here evokes ripe, juicy fruit.

His father was a Guji legend: a producer and a coffee trader who built the very first washing station in the Bule Hora community in Guji, in the early 00’s. In the meantime, unfortunately, he went bankrupt losing all of his growing lands. Tagel promised himself to redeem the plots that had belonged to his father and years later he pulled it off! Then, in 2018, when the government made it easier for producers to export by liberalizing legislation, he founded Olkai.Hambela Goro works with 460 smallholder producers that grow 74110 varietal at an impressive altitude of 2300 masl. Most of them own literally only hundreds of coffee trees each, which makes lots from Hambela Goro truly multi-component blends. At the same time, the consistency and quality of this coffee are beyond extraordinary.In addition to direct involvement in coffee production, Olkai prioritizes social responsibility in order to empower producers they work with. Under Tagel’s leadership the company provides above-market rates for growers, distributes seedlings annually and supports the construction of schools and needed infrastructure within communities.ABOUT COFFEEThe cherries are collected at a really peak ripeness. Then they undergo several steps of hand sorting. After depulping the coffee is submerged in water, in tanks and goes through 48 hours of fermentation. Following this, the parchment is being moved to african beds for drying and that takes around 10-12 days, depending on the weather and humidity prevailing during this period.Several amazing factors, such as specific terroir, extremely high altitude, an amazing 74110 varietal, smallholders’ skills and the professional management and organization at Hambela Goto created a beautiful synergy, resulting in this wonderful washed coffee. Expect complex layers of florals and crisp citrus, backed by a deep, stone fruit-like sweetness. Simply a quintessence!ROASTER'S NOTEPeach iced tea captured in a coffee. A return to warm, summer days.V60 RECIPE16g of coffee250g of water 96°CMedium Grind Size 1. Put a paper filter in your V60 and rinse it with hot water ( 96C ). It will preheat your drip brewer and gets rid of a paper taste from the filter. For the best results always use filtered water (remember that 98,5 % of your brewed coffee is water)2. Remove the rinsing water from the server.3. Grind your beans just before you brew and add the coffee to the drip brewer. Gently distribute your coffee into the center of your V60.4. Place your V60 on a vessel on a scale and make sure that your water is 96 C.5. Tare your scale and start the timer.6. Add 50 grams of water. Your coffee will begin to bloom.7. At 30 seconds, add more water up to 100 grams. Pour the water slow, gently and in clockwise circles.8. At 00:50 pour hot water to 200g. 9. At 01:10 pour hot water to 250g.10. Swirl your V60 and let the coffee drip. 11. The water should have drained in around 3:00. You may need to change your grind setting, when the coffee finishes to brew too quickly or too long. But always taste and then judge your coffee.

Around 50 farmers contribute their cherries to the station, produced on the surrounding land at elevations up to 2350m. Named for the Wate river which flows alongside, Bishan Wate is one of twenty washing stations owned and managed by Testi Coffee, a family business founded by Faysel Adham Yonis. For those who remember Bombe and Gigesa, our lots from Testi Coffee have always been something to look forward to. Guji is a densely forested area in southern Ethiopia. Before the early 2000s, it was considered part of Sidama, but has since been designated its own region. The people of Guji grow coffee gardens at very high altitudes in the rich red soil of the highlands, setting this coffee's profile apart from neighbouring regions.THE PROCESSWith the special preparation, cherries are collected from a limited number of smallholders. Extra sorting at the mill ensures more than 90% of the cherries are perfectly ripe. These lots are processed and stored separately from the regular Grade 1 coffees and generally only a very small number of bags are produced every season. The result is a coffee which offers heightened clarity and complexity, compared to traditional Ethiopian washed lots. Coffee cherries are picked when well-ripe and sent straight to be processed. First, the cherries are floated in cool, clean water to sort out any flaws. They are then washed, de-pulped, and transferred to open tanks to undergo a 48-hour fermentation. Finally, they are moved to dry on raised beds that are positioned for maximum wind exposure and minimal direct sunlight. The coffee dries for 21 days or until the moisture content reaches 12%.ROASTERS OPINIONWith elegant peach and candy-like sweetness, Bishan Wate is Ethiopian flavour at its very best.

He runs a 6.46-hectare farm in Biloya together with his wife and son. It belongs to Banexport — a company involved in virtually every stage of the local coffee supply chain: production, export, collaboration with smaller producers from the Cauca region, as well as innovation and modern technologies in coffee cultivation and processing.A full range of the most highly valued Arabica botanical varieties is cultivated here (geisha, pink bourbon, java, wush-wush, and laurina) across 14 hectares, the majority of which consists of a protected natural reserve with designated ecological trails. Numerous endemic plant and animal species form an exceptionally diverse ecosystem.Workers at Santa Barbara can count on stable, year-round employment, not just seasonal work. Everything operates formally, with social benefits, insurance, and wages that are significantly higher and more equitable compared to the conditions that still commonly prevail in many Arabica-producing countries.Interestingly, the farm does not have its own processing station. The entire process — from fermentation to drying — takes place in… the very heart of the city of Popayán, the capital of the Cauca region. And there’s one more thing. We have never recommended checking the “ABOUT PROCESSING” section this strongly before.ABOUT COFFEE PROCESSING ON THE FARMLet’s begin with the botanical variety.A few years ago, several producers in Huila (a department in Colombia) discovered that some coffee trees on their farms were producing unusual cherries — the fruit displayed distinct, light, thin stripes along its entire surface, and the beans themselves were slightly elongated in shape. They separated this intriguing phenotype from traditional red bourbon to determine whether the differences would also be noticeable in the cup. They were.Bourbon Rayado, as they named the varietal (literally “striped bourbon”), is characterized by potentially higher complexity and a distinctive floral-herbal layer.Due to the recent discovery, no genetic studies on Rayado are yet available. Some believe it is most likely a natural mutation of classic Bourbon; others suggest it could be a mutated Pink Bourbon, which itself traces genetically in a direct line to local Ethiopian varieties.Now, the process.The Bourbon Rayado (Striped Bourbon) variety is hand-picked and immediately transported in a refrigerated vehicle (yes, really) to the Area 18 station in downtown Popayán. A one-kilogram sample is taken for preliminary analysis.
